Week 224 Menu…and Happy Mother’s Day!

Happy Mother’s Day! Cate told me yesterday that Mother’s Day was my day to relax, so I’m taking up her on it. It’s funny, when I planned my menu last week, I forgot that Sunday was Mother’s Day. We will not be having breakfast for dinner tonight. In fact, Nate is cooking filet mignon. I can’t wait for dinner!

We received some Japanese sweet potatoes in our CSA bag last week. I kept neglecting them, so Nate roasted them up yesterday. They were so good. They taste like sweet potatoes, but they have a more buttery, almost squash-like flavor. Just another wonderful item we’ve discovered through our CSA. So glad I finally got my act together and signed up!

MONDAY:
– Leftovers

TUESDAY:
Caprese Paninis (didn’t get to these last week)

WEDNESAY:
Whole Wheat Pancakes

THURSDAY:
– Eat out (Kindergarten open house that evening)

FRIDAY:
Barbecue Chicken Pizza

SATURDAY:
– Chicken Teriyaki
– Veggies and rice

SUNDAY:
Kitchen Sink Quesadillas

My non-pregnant coworker said that post got her too, so I don’t even think it was my hormones. ๐Ÿ˜‰

  1. I signed up for a CSA also, ours is run by refugees so we get some native veggies from their country along with regular veggies from the USA. It starts in June so excited wonder what veggies I’ll get.

    Not sure about our menu:

    Sunday: No Clue really

    Monday: Pesto, Roasted Veggies and Breadsticks

    Tuesday: Burgers (mine will be veggie burger trying out a new recipe to make my own instead of buying them), Sweet Potato Fries and Pasta Salad

    Wednesday: Enchilada Casserole (its made vegan but they never notice) and Spanish Rice

    Thursday: Swedish Meatballs (for the meat eaters (which is everyone but me) I’ll have leftover enchilada casserole)

    Friday is grocery day so this is all I have planned for now

    Happy Mother’s Day to you and to all! I’ll go ahead and post my menu now while I have a tiny bit of time to do so!
    Sunday–I”m still not sure! My hubby works nights on the weekend so I will make something for us just not sure what
    Monday–BLTs with peppered bacon and lettuce from my garden!
    Tuesday–A dish we call Kobayashi Maru but this time made with chicken
    Wednesday– Poached Tilapia
    Thursday–Frito Pie with homemade Chili
    Friday–Steak from the cow my parents had butchered. It is the best meat you will EVER taste!!

    Friday: Tandoori Chicken Wraps (from GoodLife Eats)
    Saturday: Family Day at work.

    I cannot wait until our CSA starts…. Trying new things was one of my favorite things about my weekly basket- though with the cold spring and late snows, I am not anticipating anything until June….

    Sunday: Chicken and Potato Skillet, salad
    Monday: French toast, fruit, bacon
    Tuesday: Herb crusted pork chops, zucchini dressing, salad
    Wednesday: Hubby cooks. Zuppa toscana, bread
    Thursday: Hubby cooks. Chicken Fajitas, melon
    Friday: Pizza night, salad
    Saturday: BBQ pork sandwiches, sweet potato fries, green beans

    Spaghetti w/ five minute tomato sauce
    Trader Joe’s frozen something
    Out once or twice, or order some pizza.

    Menu planning has been taking a major backseat as of late for a variety of reasons. One of the main ones is that my all day sickness from this pregnancy has turned into late afternoon until I go to bed sickness! BOO!
    I’m going to try this week! REALLY! ๐Ÿ™‚

    Monday- Kielbasa, Sauerkraut and potatoes

    Tuesday- Pasta- quick and easy! T-ball

    Wednesday- At Grandma’s

    Thursday- Crockpot ribs….a little worried about this…

    Friday- Leftovers for mom and dad….chicken nuggets for the kids!

    Saturday- Thinking about heading down the shore for the day but right now, not so sure!

    Sunday- GRANDMA’S!

      crockpot ribs are AMAZING! Put them in before work with some BBQ sauce, sliced onion and a minced garlic clove for about 8 hours and thats IT! just make sure they are all totally submerged in sauce. I also like to add extra honey to the jarred bbq

    • I second that crockpot ribs are AMAZING!! I do mine with a dry rub. Brown sugar and any combination of spices you like (cumin, chili powder, garlic,….). Rub on both sides of the ribs, make little foil packets, and stack them in your crockpot. We cook ours for 8 hours on low and they’re fall-off-the-bone delicious!!

      oh goodness, ladies…I think that sounds like a fabulous way to cook ribs! I’ll need to remember both of your techniques and try them some time!!

    Happy Mother’s Day!
    Japanese sweet potatoes. I have never heard of them but, so want them. I absolutely LOVE my CSA baskets.

    Sunday: tuna paninis and cantaloupe
    Monday: latina lasagna and roasted broccoli
    Tuesday: beef tenderloin with horseradish sauce and roasted asparagus and potatoes
    Wednesday: left overs
    Thursday: guacamole turkey burgers with beer baked beans and fruit salad
    Friday: take out
    Saturday: take out

    It’s been a crazy few weeks at our house with travel and visitors. Trying to plan a menu this week for a little bit of normalness before we head out of town again!

    Sunday – garlicky shrimp pasta, homemade bread and salad (celebration for a friend who graduated law school!)
    Monday – Indiana spiced greens (kale and beet greens from our CSA) over barley
    Tuesday – roasted veggies (including roasted beets) and bread
    Wednesday – hot dogs and french fries
    Thursday through next Monday – at my college reunion so we’ll be eating at lots of my old fave restaurants!

    It’s “Backyardigans” theme week at our house right now — we’re eating meals that are mentioned in “Backyardigans” episodes and finding the countries they come from on our 4-year-old’s map puzzle. (He’s into geography these days. What can I say?)

    Monday: Chicken kiev and borscht
    Tuesday: Slow cooker — Anatolian lentil stew, baked samosas, and mango lassis
    Wednesday: “High tea” party with smoked salmon tea sandwiches, chicken salad tea sandwiches, crumpets, and assorted fruits and veggies
    Thursday: Sloppy joes and corn fritters
    Friday: Fend night
    Saturday: Back to normal. ๐Ÿ™‚ Grilled chicken, salad, and cous cous after a busy day out with friends.

    Those sweet potatoes look AMAZING!!! How did you roast them? My mouth is watering looking at that picture…

      nate washed them, poked them with a fork (like baked potatoes), wrapped in foil, placed on a pan, and roasted at 400 degrees, I think around 45 minutes or so – until we could pierce them easily with a fork.

      then we cut them open and topped with butter, salt and pepper – yum!

    I had no idea what sweet potatoes were supposed to be like until I got here. They are great twice baked too(add sugar, cream, and egg). Hope you get more!
