Happy Mother’s Day! Cate told me yesterday that Mother’s Day was my day to relax, so I’m taking up her on it. It’s funny, when I planned my menu last week, I forgot that Sunday was Mother’s Day. We will not be having breakfast for dinner tonight. In fact, Nate is cooking filet mignon. I can’t wait for dinner!
We received some Japanese sweet potatoes in our CSA bag last week. I kept neglecting them, so Nate roasted them up yesterday. They were so good. They taste like sweet potatoes, but they have a more buttery, almost squash-like flavor. Just another wonderful item we’ve discovered through our CSA. So glad I finally got my act together and signed up!

My non-pregnant coworker said that post got her too, so I don’t even think it was my hormones. ๐
I signed up for a CSA also, ours is run by refugees so we get some native veggies from their country along with regular veggies from the USA. It starts in June so excited wonder what veggies I’ll get.

Monday: Pesto, Roasted Veggies and Breadsticks
Tuesday: Burgers (mine will be veggie burger trying out a new recipe to make my own instead of buying them), Sweet Potato Fries and Pasta Salad
Wednesday: Enchilada Casserole (its made vegan but they never notice) and Spanish Rice
Thursday: Swedish Meatballs (for the meat eaters (which is everyone but me) I’ll have leftover enchilada casserole)
Friday is grocery day so this is all I have planned for now

Menu planning has been taking a major backseat as of late for a variety of reasons. One of the main ones is that my all day sickness from this pregnancy has turned into late afternoon until I go to bed sickness! BOO!

Thursday- Crockpot ribs….a little worried about this…

Saturday- Thinking about heading down the shore for the day but right now, not so sure!

crockpot ribs are AMAZING! Put them in before work with some BBQ sauce, sliced onion and a minced garlic clove for about 8 hours and thats IT! just make sure they are all totally submerged in sauce. I also like to add extra honey to the jarred bbq
I second that crockpot ribs are AMAZING!! I do mine with a dry rub. Brown sugar and any combination of spices you like (cumin, chili powder, garlic,….). Rub on both sides of the ribs, make little foil packets, and stack them in your crockpot. We cook ours for 8 hours on low and they’re fall-off-the-bone delicious!!
oh goodness, ladies…I think that sounds like a fabulous way to cook ribs! I’ll need to remember both of your techniques and try them some time!!

Those sweet potatoes look AMAZING!!! How did you roast them? My mouth is watering looking at that picture…
nate washed them, poked them with a fork (like baked potatoes), wrapped in foil, placed on a pan, and roasted at 400 degrees, I think around 45 minutes or so – until we could pierce them easily with a fork.
then we cut them open and topped with butter, salt and pepper – yum!
nate just let me know he actually did NOT wrap them in foil. you could probably do it either way! ๐
