Another Sunday, another menu. Where does the time go? When Nate realized this week that we’re over halfway through the pregnancy (23 weeks today, in fact), I think he almost fainted. Before I know it we’re going to be sitting in our rockers on the front porch with great-grandchildren running around our feet!
This is another photo from the many I took at Cafe Borrone on Friday. Couldn’t you just dive into those berries?! Summer is coming – yea!!

Those berries do look amazing! We got some strawberries at the farmer’s market this weekend to usher in summer. And then the weather did the same with a blazing hot day and ridiculous humidity. What can I say? You win some and lose some!

Wednesday-sandwich night (aka-kids have sports and need something quick to eat). Choices will include grilled cheese, Morning Star Chik Patties, Black bean burgers, served with fruit and over roasted fries.
Thursday-Pasta night, whole wheat linguine with olive oil, pine nuts, garlic, chopped basil, tomato. Served with a salad, green beans.

I just want to thank you all for your menus – they really do inspire me each and every week. And my other half appreciates not having to eat the same things over and over. Now we just rotate a LOT of great meals, and we’re lucky to eat the same things once a month!
Yesterday’s brunch was AWESOME!! I made “Chorizo Garbage Plate” – a recipe I found online, and then smothered it in green chili! Just about THE best breakfast I’ve had since I moved from Denver…
Sun: Beer-can chicken (made with sprite instead) w/ roasted sweet potato and carrots

Friday-Sunday – smore’s hotdogs, hamburgers, roasted corn on cob, lots of chips – CAMPING. Got any good campfire recipes?
We always made Banana Boats as kids. Take a banana in it’s peel and make a cut halfway through the length of the banana. Then stuff it with marshmallows, chocolate chips and nuts. Then Wrap it all in tin foil and toss on the campfire until its a warm gooey mess! Yum!
You can do sweet potatoes in the ashes of the campfire — cut the sweet potatoes in half lengthwise, place a pat of butter, sprinkling of cinnamon, and drizzle of either honey or maple syrup (you could also use brown sugar) in the middle and squish the potato back together. Wrap tightly in foil and bury in the embers of the fire. Check them every 20 minutes or so, but they should take about 50-60 minutes to bake completely through and be ooey gooey delicious on the inside.

A purchase of a new family vehicle this month has made me very mindful of our meal planning, and trying to really stretch our food budget. The past 2 weeks I’ve miraculously managed to shave $20-$30 off our weekly budget – this week’s meal plan…
