Week 237 Menu

I’m back from the BlogHer 11 Conference and all I want to do is sleep! Boy, am I tired, but it was a great weekend. The best part by far was rooming with Allison, Marie and Rachael…oh, and the view from our room at the Marriott wasn’t too bad, either. Oh, and we went to a party hosted by the Hostess with the Mostess…the whole time I was kicking myself for not having my camera on me, she is unbelievably talented!

Now that I’m back from this trip, our family is officially back to normal. No more travel, just time at home getting ready for the start of school and preparing for baby boy’s arrival in just 6 short weeks. All of this means that we’re back to eating dinner at home more regularly, as long as I can stand being on my feet at the end of the day!

Boursin Turkey Baguettes

– I think I’ll do a pasta with tons of veggies, since we have a bunch in the fridge to use up! Probably something similar to this Moosewood recipe, but with whatever vegetables we have in the fridge.

– Hot dogs
– Corn on the cob and fresh fruit

– Leftovers
– More corn on the cob (it’s the last week our CSA has corn on the cob, so I ordered double!)

– Eat out

– Pulled Pork Sandwiches (using this pork with this sauce)
– Coleslaw

– Breakfast for dinner…probably omelettes because we have a ton of eggs to use up this week!

  1. Monday – Linguine with a tomato cream sauce (from PW!) with cornmeal breaded chix cutlets
    Tuesday- Grilled Cheeses on Wheat Bread with Green Apples and Bacon, side of Summer squash
    Wednesday- homemade Cheese Pizza!
    Thursday- Quick and Easy Gyros (Tasty Kitchen) and summer squash
    Friday- Patty Melts with Chips (Cook this Not That!)

    ps- so much summer squash because someone at the boyfriend’s work gave us TWO HUGE ones!

    I’m starting a new (busy) job this week so I’m getting on yhe meal planning train! Hoping it will make life as a working mom a bit easier.

    Monday – Pulled BBQ Chicken sandwiches with cole slaw and potato salad (sides are from Whole Foods)
    Tuesday – Shrimp and Snow Pea Curry, brown rice
    Wednesday – Grilled chicken, veggies, brown rice
    Thursday – takeout of some sort…perhaps a trip to our local food trucks
    Friday – Grilled fish, veggies, couscous

  3. It’s kind of a crazy week – Grandparents in town, business trip Wed – Fri. So, I guess I’m not really doing a lot of cooking. But, I’m trying to be creative so the family doesn’t starve while I’m out of town.

    Sunday: Out for Mexican with the Grandparents!
    Monday: Roasted chicken legs with braised CSA greens (I’m a “transplanted Southerner,” so I have to learn to cook greens sometime!)
    Tuesday: Going away dinner for a friend
    Wednesday: Chicken Pot Pie filling over rice
    Thursday: “Curly Noodles” (fusili with butter and parmesan)
    Friday: Leftovers
    Saturday: Date night!

  4. Recouping from family visiting last weekend and hoping to get back on track with eating a bit healthier after going out so much!

    Sunday – Vegetable pasta salad
    Monday – Lentil Tacos
    Tuesday – Baked Salmon & sauteed zucchini, mushrooms, and tomatoes
    Wednesday – Brisket Sandwiches & Chips
    Thursday – Chicken & Waffles

  10. I’m excited as we have our in-laws in town for the month who are happy to watch the kiddos… so lots of dates planned!

    Hmm, I thought I’d just commented but not sure it worked. Apologies if this is a repeat!

    I love Boursin, especially the black pepper one. I just wish we could get more flavours in the UK. In France you can get fig and walnut, shallot and chive and goat’s cheese amongst others.

    Tuesday–Crabcake sandwiches (didn’t make last week), Oven fries, stamed veggies

    We’re trying to keep the types of food we’re eating mixed up so we don’t get bored with it b/c I could eat mexican every night, and my SO could eat italian or asian every night. AND we’ve decided that we need to have a salad night each week. There are so many great salads out there!

    Mon: A1 & French fried onion burgers w/ Olathe sweet corn

    Traveling later this week, so we had a ton of CSA veggies to eat up. It’s the time of year when no matter what you do with tomatoes and cucumbers they’re tasty because they’re so perfectly in season.
