Week 240 Menu

When I think of McIntosh apples, I think of cool weather, sweaters, beautiful foliage…you know, autumn. So when we got McIntosh apples in our CSA bag last week in the middle of summery August, the first thing I did was text my New Englander mother-in-law saying, “Isn’t it just wrong that we have McIntosh apples right now?” And she wholeheartedly agreed! Not that I’m complaining, but California is kind of a weird place!

Menu time…and I imagine my menu is going to get simpler and simpler the closer we get to the baby’s due date! Just three weeks!

MONDAY:
– Fetuccine alfredo
– Caprese salad and baguette on the side

TUESDAY:
Asian Spinach Salad
– I know, I know…this is the third week I have this on my menu. It keeps falling through the cracks, but I really do what want to eat it, so it’s making one more appearance on the menu before I give up!

WEDNESDAY:
– Orange chicken (from Costco freezer section) and rice
– Potstickers (from Trader Joe’s freezer section)

THURSDAY:
– Leftovers

FRIDAY:
– Hot dogs and/or hamburgers on the grill
– Fresh fruit

SATURDAY:
– Eat out

SUNDAY:
– Yup, you guessed it, breakfast for dinner. French toast this time!

Since I’m going to get less inspiring over the next few weeks, we really need all of you to post your menus and inspire one another! Let’s see what you got!

    By the time I was 3 weeks away from having my clones, I had no concern for what anyone else was eating! Good for you, keeping up and even posting! Here’s our menu:
    Sunday– Raley Goulash
    Monday– French Dip Roast
    Tuesday– Our 14th Anniversary! I am making a new Lasagna recipe
    Wednesday– Poached Tilapia and pasta
    Thursday– Happy 4th Birthday to my baby girl!! Her favorite meal is “french fries and ketchup and water and chicken nuggets” If we went out to eat that is what she would order so I am going to kae it at home for all of us.
    Friday– We are expecting out of town company for our big September Triple birthday Bash so I haven’t decided what to serve since I am not sure how many people we will have yet.
    Saturday– We are having our Triple Threat Birthday (mine and two of our three clones) and we are having Triple Tacos! Regular, Tilapia , and Chicken

    This is the first week in a long time where i have been able to put together a menu! The husband was gone for 2 weeks, and then last week was a wash since we were out of town the weekend before.. Yay for real food!

    We plan our menus Saturday morning and then I hit the grocery store:

    Saturday: rib-eye, mashed potatoes, and fresh green beans
    Sunday: grilled shrimp salad
    Monday: chicken asada, black beans, corn
    Tuesday: cheeseburgers and french fries – some vege
    Wednesday: grilled italian sausage with peppers/onions
    Thursday: teriyaki chicken, rice pilaf, peas

    Best of luck these next few weeks Jane!
    Friday: take out

    Sunday: Bake Potato and Big Salad with lots of Veggies

    Monday: Stir fry with brown rice

    Tuesday: daughters 11th birthday so out to eat or if we stay in: Fettuccine Alfredo, Salad and Bread sticks. (I’ll make vegan Alfredo for me: http://treehuggervegan.wordpress.com/2011/08/04/vegan-alfredo-sauce/)

    Wednesday: Homemade Pizza toppings of your choice. I’m also trying Daiya Cheese on mine

    Thursday: Red Beans and Barley (will get around to this and finally post it I promise)

    Friday: Sandwiches and Chips

    Saturday: not sure I go grocery shopping on friday.

    I’m a Mac girl! Here in Indiana they use Jonathans instead. So, when I called the orachard and asked for Macs for my apple sauce she said, “You’re from the east coast aren’t you? You’re in Jonathan country!” (c:

    Saturday – Picnic at the lake! Peach and tomato salsa, french bread, salami, and fancy cheese with tapioca pudding for dessert (great suggestion you had last week!)
    Sunday – Fresh corn chowder
    Monday – Spicy Thai stir fry with eggplant, baby corn, peppers and tofu with edamame on the side
    Tuesday – tuna melts and fresh okra
    Wednesday – Zucchini fritters
    Thursday – double broccoli quinoa and a peach and blueberry freeform tart
    Friday – whatever we have left!

      nate LOVES macs – he’s from new hampshire, they practically grow on every tree there! he’s really missed them since we moved away, so we were very happy to see that our CSA would be providing them. it’s been years since we’ve had them!

    I did so well planning and shopping for the week today. Then…my son’s baseball tryouts went very long and that meal was out the window- so pizza tonight and the whole week gets pushed a day!

    lots of great ideas this week! i’ll be the first copycat, it looks like. 🙂
    i loved the sandwich themed week because honestly i could probably eat sandwiches ever single meal!!! so here’s what i came up with:
    a big roast beef w/ potatoes, celery, onions, mushrooms, and carrots
    use leftovers for bbq beef sandwiches w/ tator tots
    chicken enchiladas w/ rice and refried beans
    chicken salad sandwiches on rolls (made w/ extra chicken made for the enchiladas) w/ fresh veggies
    tomato soup and grilled cheese sandwiches
    skillet beef stroganoff w/ green beans
    tuna melts with raw veggies and fresh fruit

    …it looks like i’ll be busy making bread this week!

    Good lucky with the last 3 weeks! Here’s my menu for the week (made a menu with mostly what I had in the house and from my CSA):

    Monday: Kids DIY pizza night (with trader joe’s pizza dough)
    arugula salad with Parmesan and red onion; kids will probably just have cucumbers from the garden (what I resort to when they refuse the salad).
    Tuesday: Teriyaki turkey burgers with grilled pineapple, baby potatoes and green beans.
    Wednesday: Veggie tofu stir-fry
    Thursday: Thai curry chicken over rice with wilted asian greens (I know I am mixing Asian foods here, but I have mizuna and tatsoi I need to put to use).
    Friday: Lemon pepper papardelle with shrimp (recipe on the TJ’s bg of pasta!) with arugula salad
    Saturday and Sunday – I admit I haven’t had time to think that far ahead yet. This is my first week posting my menu!

    • I asked someone else about what pizza dough they used and they also said the Trader Joes pizza dough. Is it really yummy?! I think the nearest Trader Joes from my house is about 30 minutes. If I’m going to make the drive it better be pretty dern’ good! 😛
      p.s.- What’s the texture like? Does it compare to a certain pizza chain crust? Is it a thick crust? I love thick crust. I’m not really feelin’ thin crust pizzas…

    OMG – it’s Hatch green chile season, and Central Market is Hatch crazy!! We made a special trip this week JUST for the roasted Hatch green chiles. Being from Colorado, I am crazy about Green Chili – I will smother almost anything in Green Chili. Living in Texas, there are almost no restaurants that even know what Green Chili is, so I have to rely on my own devices to create that glorious dish. We may have gone a little overboard on the Hatch-infused products, but I will be a happy woman for many weeks to come.

    Sun – we were supposed to have Tuscan Lemon Chicken w/ lemon risotto, but there was a power outage, so we ended up ordering Chinese.
    Mon – Tuscan Lemon Chicken & risotto
    Tue – Pork Roast w/ carrots and potatoes
    Wed – Hatch green chile cheeseburgers w/ fries
    Thu – Chicken Fettucini Alfredo
    Fri – Quesadillas w/ Hatch tortillas & Hatch Monterrey Jack cheese and Bacon-wrapped stuffed jalapenos
    Sat – leftovers, I’m sure! 🙂

It’s a holiday weekend here so I’ve been able to indulge in some serious cooking today – I’ve roasted a huge batch of tomatoes from the garden and frozen them for winter, pickled another batch of zucchini and made blackberry and apple cake with the windfalls from our tree. So it’ll be a simple, quick dinner for us tonight!

    Mon – Chorizo and feta quesadillas with green beans
    Tue – Pasta with butter tomato sauce and salad
    Wed – Red wine, mushroom and rosemary risotto
    Thur – Pizza (using up leftover tomato sauce) and salad
    Fri – Something fishy, not really sure yet
    Sat – Chicken pie, new potatoes, green beans
    Sun – Dinner with Mum

    That Asian Spi9nach salad looks great. I may have to try that before it starts to get cold again. Looks like it would work well to pack for lunch the next day too.

    Here is My Menu for the week – I know I am late to the game, but hopefully you’ll see why I wanted to post this:

    Monday:
    -Bow-tie Pasta with Alfredo sauce and diced ham.
    -French Baguette

    Tuesday:
    -Chef’s salad (with tomatoes, carrots, and snap peas from our own garden)

    Wednesday: Breakfast for Dinner
    – Biscuits with Rabbit Gravy.

    Thursday:
    Butter Chicken

    Friday:
    Roasted Venison with Root vegetables over Soft Polenta

    Saturday:

    I don’t usually have so many game recipes in my menu (first time ever actually), but I have a reason for it this week.
