When I think of McIntosh apples, I think of cool weather, sweaters, beautiful foliage…you know, autumn. So when we got McIntosh apples in our CSA bag last week in the middle of summery August, the first thing I did was text my New Englander mother-in-law saying, “Isn’t it just wrong that we have McIntosh apples right now?” And she wholeheartedly agreed! Not that I’m complaining, but California is kind of a weird place!
Menu time…and I imagine my menu is going to get simpler and simpler the closer we get to the baby’s due date! Just three weeks!
MONDAY:
– Fetuccine alfredo
– Caprese salad and baguette on the side
TUESDAY:
– Asian Spinach Salad
– I know, I know…this is the third week I have this on my menu. It keeps falling through the cracks, but I really do what want to eat it, so it’s making one more appearance on the menu before I give up!
WEDNESDAY:
– Orange chicken (from Costco freezer section) and rice
– Potstickers (from Trader Joe’s freezer section)
THURSDAY:
– Leftovers
FRIDAY:
– Hot dogs and/or hamburgers on the grill
– Fresh fruit
SATURDAY:
– Eat out
SUNDAY:
– Yup, you guessed it, breakfast for dinner. French toast this time!

Friday– We are expecting out of town company for our big September Triple birthday Bash so I haven’t decided what to serve since I am not sure how many people we will have yet.
Saturday– We are having our Triple Threat Birthday (mine and two of our three clones) and we are having Triple Tacos! Regular, Tilapia , and Chicken

I did so well planning and shopping for the week today. Then…my son’s baseball tryouts went very long and that meal was out the window- so pizza tonight and the whole week gets pushed a day!

i loved the sandwich themed week because honestly i could probably eat sandwiches ever single meal!!! so here’s what i came up with:
a big roast beef w/ potatoes, celery, onions, mushrooms, and carrots
use leftovers for bbq beef sandwiches w/ tator tots
chicken enchiladas w/ rice and refried beans
chicken salad sandwiches on rolls (made w/ extra chicken made for the enchiladas) w/ fresh veggies
tomato soup and grilled cheese sandwiches
skillet beef stroganoff w/ green beans
tuna melts with raw veggies and fresh fruit
…it looks like i’ll be busy making bread this week!
Good lucky with the last 3 weeks! Here’s my menu for the week (made a menu with mostly what I had in the house and from my CSA):
Monday: Kids DIY pizza night (with trader joe’s pizza dough)
arugula salad with Parmesan and red onion; kids will probably just have cucumbers from the garden (what I resort to when they refuse the salad).
Tuesday: Teriyaki turkey burgers with grilled pineapple, baby potatoes and green beans.
Wednesday: Veggie tofu stir-fry
Thursday: Thai curry chicken over rice with wilted asian greens (I know I am mixing Asian foods here, but I have mizuna and tatsoi I need to put to use).
Friday: Lemon pepper papardelle with shrimp (recipe on the TJ’s bg of pasta!) with arugula salad
Saturday and Sunday – I admit I haven’t had time to think that far ahead yet. This is my first week posting my menu!
I asked someone else about what pizza dough they used and they also said the Trader Joes pizza dough. Is it really yummy?! I think the nearest Trader Joes from my house is about 30 minutes. If I’m going to make the drive it better be pretty dern’ good! 😛
p.s.- What’s the texture like? Does it compare to a certain pizza chain crust? Is it a thick crust? I love thick crust. I’m not really feelin’ thin crust pizzas…

OMG – it’s Hatch green chile season, and Central Market is Hatch crazy!! We made a special trip this week JUST for the roasted Hatch green chiles. Being from Colorado, I am crazy about Green Chili – I will smother almost anything in Green Chili. Living in Texas, there are almost no restaurants that even know what Green Chili is, so I have to rely on my own devices to create that glorious dish. We may have gone a little overboard on the Hatch-infused products, but I will be a happy woman for many weeks to come.
Sun – we were supposed to have Tuscan Lemon Chicken w/ lemon risotto, but there was a power outage, so we ended up ordering Chinese.
Mon – Tuscan Lemon Chicken & risotto
Tue – Pork Roast w/ carrots and potatoes
Wed – Hatch green chile cheeseburgers w/ fries

When I lived in New Mexico my favorite side was Green Chili Cheese Fries. Can’t find that in Minnesota.
It’s a holiday weekend here so I’ve been able to indulge in some serious cooking today – I’ve roasted a huge batch of tomatoes from the garden and frozen them for winter, pickled another batch of zucchini and made blackberry and apple cake with the windfalls from our tree. So it’ll be a simple, quick dinner for us tonight!
