My CSA finally has tomatoes each week – yippee! Fresh, ripe tomatoes that haven’t traveled over 3,000 miles? Heaven. One of the other CSAs around here is doing bulk sales with all kinds of amazing sounding tomatoes, and I am forcing myself not to buy them. There’s just no way I can stand in the kitchen for hours making sauce and preserving tomatoes right now. We did not plan well…having a baby during the tomato harvest is no good! π
I am so stumped on dinner this week. I just don’t feel like doing anything right now…especially cooking!

Friday: Chicken Shiitake and Wild Rice Soup (off skinnytaste.com which is a lifesaver for my cooking habit)

Mon – grilled chicken, CSA potatoes & zucchini/summer squash on grill
Tues – chinese scallion pancakes, salad (big bunch of scallions in the CSA pickup this week!)

Sat – my baby’s 4th bday party! appetizers – fruit, cheese/crackers, chips/salsa, etc… & lots of cake & ice cream.

Last week’s menu fell apart in a quick hurry. Between (forgotten about) Open House at school and invitations to dinner with friends, we didn’t get to very much on the menu last week. But, that just means I already had some ideas for this week’s dinners!
Sunday: Steak on the grill with Pan-Roasted Artichokes
Monday: Leftover steak on CSA arugula
Tuesday: Skillet Eggs with Squash (Bitten Word)
Wednesday: Dinner at church.
Thursday: Mushroom Slow Cooker Roast Beef with Pan-Roasted Artichokes
Friday: Cheese steak sandwiches with leftover beef

Mon – Pasta bake with peppers, zucchini and mozzarella, salad
Tue – Chorizo and leek empanadas (I keep a store unbaked in the freezer), corn

Thur – Spaghetti with pesto, pork and lemon meatballs and garlic and mushroom sauce, french beans
Fri – Breaded haddock and oven chips, peas, ice cream

This is great! I just started posting my weekly menus on my blog! I sit down and make our menu every Friday, so mine runs from Sat-Fri. Yours sounds great! Here’s what we’re having for dinner this week (obviously, Saturday is over but I’m throwing it in anyway):

A great idea for those tomatoes is to just cut them in half, drizzle with olive oil sprinkle eitwith herbs and put them in the lowest possible oven for hours until they are semidryed. Only if you feel up to it though π

I think our CSA is at the peak of tomatoes right now. Last week you could get a big box of them for 10 points. I couldn’t bring myself to pick them up in fear that I wouldn’t use them all. Can’t have tomatoes going to waster.

i guess i forgot to post on monday. we had three carry-overs:

and then i added 2 new ones:

and baked chicken with mashed potatoes and peas
next week’s going to be easy though because we’ve spent the whole week (so far) sick! so, i’m still working on the carry-overs from last week and haven’t gone grocery shopping for those last two anyway. π
oh and my favorite thing to do with fresh tomatoes is BLT sandwiches or just tomato sandwiches!!! i love a tomato right from the garden!!!!!
