Week 241 Menu

First off, late on Friday I published my exhaustive baby shopping list that I give to friends (and actually use myself!). Be sure to pop over to that post and share your own baby supply advice! I know many of you must have some great tips!

My CSA finally has tomatoes each week – yippee! Fresh, ripe tomatoes that haven’t traveled over 3,000 miles? Heaven. One of the other CSAs around here is doing bulk sales with all kinds of amazing sounding tomatoes, and I am forcing myself not to buy them. There’s just no way I can stand in the kitchen for hours making sauce and preserving tomatoes right now. We did not plan well…having a baby during the tomato harvest is no good! πŸ˜‰

I am so stumped on dinner this week. I just don’t feel like doing anything right now…especially cooking!

MONDAY:
– Labor Day…I think we’ll fire up the grill and put Nate to work!

TUESDAY:
Homemade cheese pizza

WEDNESDAY:
Kitchen Sink Quesadillas

THURSDAY:
Chicken Piccata
– Mashed Potatoes and a Veggie

FRIDAY:
– Leftovers

SATURDAY:
– Eat out

SUNDAY:
– Breakfast for dinner! French Toast this week.

  1. Sun: use up stuff, planning on going out to a hibachi restaurant on Sunday (!!!) yay!

    Monday: Turkey Chili (Cook This, Not That)

    Tuesday: Marinated Grilled Chicken Breast with Braised Spinach

    Wednesday: Choice of fish for the boyfriend, Chicken breast for me with side of mixed veggies

    Thursday: Hawaiian Teriyaki Turkey Meatballs with Peppers and Pineapple over Rice (new recipe! off tastykitchen.com, subbed in ground turkey for ground pork/beef)

    Friday: Chicken Shiitake and Wild Rice Soup (off skinnytaste.com which is a lifesaver for my cooking habit)

    Mon – grilled chicken, CSA potatoes & zucchini/summer squash on grill
    Tues – chinese scallion pancakes, salad (big bunch of scallions in the CSA pickup this week!)
    Wed – orange chicken w/ broccoli over rice
    Thur – pork fajitas, salad
    Fri – homemade veggie pizza
    Sat – my baby’s 4th bday party! appetizers – fruit, cheese/crackers, chips/salsa, etc… & lots of cake & ice cream.

  4. Last week’s menu fell apart in a quick hurry. Between (forgotten about) Open House at school and invitations to dinner with friends, we didn’t get to very much on the menu last week. But, that just means I already had some ideas for this week’s dinners!

    Sunday: Steak on the grill with Pan-Roasted Artichokes
    Monday: Leftover steak on CSA arugula
    Tuesday: Skillet Eggs with Squash (Bitten Word)
    Wednesday: Dinner at church.

    Thursday: Mushroom Slow Cooker Roast Beef with Pan-Roasted Artichokes
    Friday: Cheese steak sandwiches with leftover beef
    Saturday: Out

  5. Mon – Pasta bake with peppers, zucchini and mozzarella, salad
    Tue – Chorizo and leek empanadas (I keep a store unbaked in the freezer), corn
    Wed – Butternut squash tagine and couscous
    Thur – Spaghetti with pesto, pork and lemon meatballs and garlic and mushroom sauce, french beans
    Fri – Breaded haddock and oven chips, peas, ice cream
    Sat – Slow cooker chicken curry with naan bread
    Sun – Shepherd’s pie, roasted leeks and cauliflower, baked apples

  6. This is great! I just started posting my weekly menus on my blog! I sit down and make our menu every Friday, so mine runs from Sat-Fri. Yours sounds great! Here’s what we’re having for dinner this week (obviously, Saturday is over but I’m throwing it in anyway):
    Saturday: “Breakfast for Dinner” Peanut butter & Jelly stuffed french toast and bacon
    Sunday: Calzones, served with marinara for dipping and a salad
    Monday: Italian Chicken, served with Lemon Risotto and a salad
    Tuesday: Creamy Shrimp Rolls, served with pickle and chips
    Wedensday: Slow Cooker Pork Chops, served with broccoli and Italian bread
    Thursday: Yellow Squash Alfredo, served with green beans and Italian bread
    Friday: Leftover night/Kids Choice

    We’re also going to try our hand at some homemade ice cream this week!

    Thursday: Spaghetti, homemade breadsticks, and Big Salad

    Friday: Burgers, Fries, Mac n Cheese (Vegan burger for me and fries)

    Saturday: Sandwiches, Chips and Veggies/Dip

    Again, it’s been a while since I’ve posted my menu, but here goes:

    Sunday – crock pot chicken and rice
    Monday – lasagna
    Tuesday – maybe eat out, we’ve got preschool open house this night
    Wednesday – R’s choice, since it is her first night of preschool (I’m guessing it will probably end up being spaghetti)
    Thursday – bacon ranch chicken over egg noodles
    Friday & Sat – out of town

    A great idea for those tomatoes is to just cut them in half, drizzle with olive oil sprinkle eitwith herbs and put them in the lowest possible oven for hours until they are semidryed. Only if you feel up to it though πŸ™‚

    I think our CSA is at the peak of tomatoes right now. Last week you could get a big box of them for 10 points. I couldn’t bring myself to pick them up in fear that I wouldn’t use them all. Can’t have tomatoes going to waster.

    Sat – Grilled hamburgers & corn-on-the-cob
    Sun – Pizza party with extended family
    Mon – Fricot with baking powder biscuits (Though I might just have leftover pizza… I was planning on it being a rainy day and so far it looks beautiful. Not good for making soup.)

    With our main bathroom gutted, we’re moving in with my parents every night for showers and bedtime (thankfully, they only live 5 minutes away). We’re trying to cook dinner at home on most days….

    Monday: At parents, I cooked. Sausage, Eggplant and Ziti Casserole, garlic bread

    i guess i forgot to post on monday. we had three carry-overs:
    tomato soup and grilled cheese
    ground beef stroganoff w/o the h.h.box beside green beans
    bbq beef sandwiches with tater tots
    and then i added 2 new ones:
    floating tacos
    and baked chicken with mashed potatoes and peas

    next week’s going to be easy though because we’ve spent the whole week (so far) sick! so, i’m still working on the carry-overs from last week and haven’t gone grocery shopping for those last two anyway. πŸ™‚
    oh and my favorite thing to do with fresh tomatoes is BLT sandwiches or just tomato sandwiches!!! i love a tomato right from the garden!!!!!

    Wednesday- BBQ’d burgers again (Lasagna was on the list for this day but we were craving burgers again since Tuesday’s were soooo to-die-for!)

    Thursday- Stoufers Lasagna, Cheesy Garlic bread, Green beans

    Friday- Mushroom Porkchops, white rice, steamed cabbage

    Saturday- Stuffed peppers, salad
