Week 245 Menu

In case anyone was wondering, recovering from an emergency c-section is way worse than a regular delivery. But there is one benefit to being forced to do nothing. I get to stare at these…

…all day.

My mom leaves town today, after two weeks of having either her or my dad here to help. (I don’t know what we would have done without them!) We have a bit of time before more family can get out to help us, so I’m a little nervous about what the next week or two will bring. Thankfully, between church and good friends looking out for us, we have people bringing us dinner 10 nights in a row. I can’t even begin to express the gratitude I am feeling for everyone who is helping us out in so many ways.

Anyway, here’s my meal plan for the week…sit back and let the food come to us!

    Awww…those feet are absolutely adorable. Best wishes for you and Owen. So here’s my menu for the week:

    Sunday-out to dinner

    Monday-marinated hanger steak tacos with diced ren onion, corn salad, and homemade salsa

    Tuesday-panko chicken cutlets, mashed potatoes, string beans almondine (making a double batch), sugar cookies made with berry-butter

    Wednesday-breakfast for dinner: brioche french toast with leftover berry butter, fruit salad

    Thursday-chciken picatta over buttered linguini, salad, string beans, and garlic bread

    Friday-out with my husband, kids @ a bday party

    Saturday-sliced filet mignon—roasted mushrooms for the adults and dinner rolls for the kids

    Sunday: Tunisian Vegetable Tagine
    Monday: Turkey Burgers with Caramelized Onions and Slaw
    Tuesday: Work dinner for me/leftovers for husband
    Wednesday: Flatbreads with White Bean Spread and Caramelized Onions
    Thursday: Margherita Paninis
    Friday: dinner out
    Saturday: leftovers

    Sunday- leftovers
    Monday- Grilled salmon burger and quinoa w/spinach
    Tuesday- Out w/my sisters-in-law, so the family is on their own
    Wednesday- Thai chicken w/noodles
    Thursday- Linguini with peppers, onions and chicken sausage
    Friday- BLTs and sweet potato wedges
    Saturday- out

    Sunday – Emeril's Chicken, Mushroom & Spinach Alfredo Lasagna

    Monday – Shredded Salsa Beef Tacos
    1 2-3lb chuck roast (Mine was 2.84 lbs)
    1 taco seasoning packet (I used McCormick)
    1 24oz jar of salsa (I used Safeway Select Roasted Tomato Salsa)
    1 TBS minced garlic (from the jar)
    Salt & Pepper

    1. Salt and pepper entire roast and place into slow cooker.
    2. Sprinkle taco seasoning packet over the top of the roast, followed by the minced garlic.
    3. Pour salsa over the entire roast and put the lid on.
    4. Cook on low for 8 hours. After 8 hours take out the roast and shred with 2 forks. Put the shredded beef back into the crockpot (with the salsa still in there) and continue to cook on low until ready to serve.

    Tuesday – Tostadas with left-over Salsa Beef

    Wednesday – Costco Orange Chicken, White Rice, Salad

    Thursday – Mushroom Porkchops, White Rice, Salad
    My recipe: Season thin boneless porkchops with paprika, garlic salt & black pepper and cook in a skillet (in olive oil) till done. Transfer chops to a plate. Saute' 1 onion and 1 red bell pepper (both chopped) in some olive oil and add some mushrooms near the end (they cook quicker). When tender, dump in a 10.5oz can of Campbells Cream of Mushroom Soup and 3/4 can of water. Stir ingredients to combine and cook for a few minutes(till the soup heats up) then add the pork chops back in the pan to re-heat. Simmer until the chops are nice and hot.
    I serve it with either a side of white rice or a side of home-made mashed potatoes (& a side salad).

    Friday – Southwestern Style Chicken Bake, Corn Bread, Salad

    Saturday – Slow Cooker Pot-Roast over egg-noodles
    Recipe: I'm just going to do something like cut up potatoes & carrots and put them in the bottom of the slow cooker. Add a chuck roast on top of the veggies and add Lipton's Beef Onion Soup Mix, and Mushroom Soup. Then probably alittle red cooking wine and some water. It's no recipe… I'm just making it up as I'm typing… lol! 😛

    This week I’m starting to feel the nausea (6 weeks along), so everything will either be from the freezer, take out, or something my husband can make (grilled cheese/quesadillas/pancakes.)

    My body really hates pregnancy (my last one was a doozy!) so I’m trying to let things go and give myself some grace this time around.

    I pray you’re able to rest well and that your girls will be good little helpers!


    • Congratulations! When I was pregnant with my daughter I couldn’t stand to cook anything, which is bad since I am a personal chef. It sounds like you have a great plan of action.

      With the pregnancy I am currently in, I can cook, but nothing really sounds good.

      Things will get better.

      hang in there! I know the nausea all too well…it makes my pregnancies feel like they’re 10 years instead of 10 months. 😉 letting things go is a good thing. ANYWAY…CONGRATULATIONS!!!!!!!!!!!!!!!!!!!!!!!!!!!!

    • Thank you Amy, Amy, and Jane! It’s totally worth it. When I feel lousy, I just look at my daughter and realize that I’ll be loving someone else that much soon! (Though I can’t fathom it now.)

    Congrats and I know what you mean about the C-Section. I found it so difficult to lay down flat with those stitches, so our Lazy Boy was my savior. We have another busy week:

  8. Enjoy every minute of it! I’m sure you have two great, little helpers at home who will help Mama and little brother out!

    I’m just out of the nausea phase (14 weeks) and am getting my appetite back. So, looking forward to actually cooking and enjoying food again!!

    We have a special birthday this week, so there’s a little more cooking happening than usual.

    Sunday: Chicken Teriyaki and Veggie Kabobs with Brown Rice
    Monday: Pot Roast, Green Beans, Mashed Potatoes, Dinner Rolls. Chocolate Birthday Cake.
    Tuesday: Lasagna
    Wednesday: Lemon Chicken and Chicken Rice
    Thursday: Turkey Soup and baked potatoes
    Friday: Breakfast for Dinner
    Saturday: Out

    here’s what i’ve come up with:
    pulled pork sandwiches, w/ real baked beans (as in i’m going to actually bake them… not just open up a can), cole slaw (that i also will make), and corn (which i won’t grow myself)
    blt’s w/ french fries
    thai chicken and noodle salad with fried rice
    hamburger stroganoff with green beans
    roasted chicken with roasted carrots and mashed potatoes
    double-layer tacos with refried beans and rice
    and lastly, meatloaf with potato salad and green beans

    I live alone so I cook tons of stuff on Sundays to make meal time a breeze throughout the week. This week i am making meatballs (for pasta, subs, soup), roasted tomato sauce, vegetarian chili(natchos, stuffed baked potatoes), peanut butter chocolate chip banana bread, challah and asian slaw(for quick lunches).

I never post a menu plan here because, well, after years of raising my family and keeping track of meals and so many other things, I am finally free to take a whimsical approach to cooking — thank goodness! Just keep looking at those tiny, precious feet and enjoy the food that is prepared for you.

    I will share tonight’s quick fix menu, which is in process as I write — grilled salmon with wild blueberry sauce, steamed broccoli and white and wild rice pilaf with leeks, carrots and a splash of white wine.

    Sunday: Pork tenderloin, CSA acorn squash, Maple Roasted CSA Brussel Sprouts with bacon and apple
    Monday: Egg Sandwiches, CSA cantaloupe
    Tuesday: Take-out after son’s cross country meet (the only meet that is on my day off- so I finally get to go see him run)
    Wednesday: Hubby cooks. Grilled chicken, CSA vegies, rice
    Thursday: Hubby cooks. Spaghetti, garlic bread, salad
    Friday: Pizza night. Pepperoni, with hopefully some CSA peppers, salad
    Saturday: Son’s birthday. His choice.

    Mon: Polenta with lamb ragu, green salad, banana cake
    Tue: Lemon and broccoli chicken with brown rice
    Wed: Spaghetti with radicchio and mascarpone sauce, tomato salad
    Thur: Leek and potato bake (to use up the mascarpone), French beans
    Fri: Baked haddock and chips, peas
    Sat: Pork and cider hotpot
    Sun: Dinner with mum

    hehehe. I have friends who say it’s worth having a baby just so people bring them food. I have to say I’d probably much rather cook than give birth. (c: I’m glad you’ve got so much help to get you through the recovery and to give you more time with your new family!

    Sunday – Pan pizza (Cook’s Country), bread sticks, salad
    Monday – Cauliflower curry (Cook’s Illustrated)
    Tuesday – Pigs in a blanket (Cook’s Country) and kale
    Wednesday – at a friends for pizza and salad. We’re bringing her a peaches and cream pie for a birthday treat!
    Thursday – garlicky shrimp with bread crumbs (Cook’s Illustrated) and sauteed radishes (Bittman)
    Friday – from last week – roasted acorn squash and gorgonzola pizza from Smitten Kitchen
    Saturday – It’s our anniversary weekend, so we’re leaving it open!

    It’s a pizza week for us (unintentionally)!

    It occurs to me that nobody brought us food after either of my kids’ births! Wait a second here — I was cheated!!! 🙂

    Sunday — we were out for Indian for our anniversary. Made whole-wheat pumpkin waffles and bacon for the kids.
    Monday — Farfalle with creamy mushroom sauce and salad
    Tuesday — Slow cooker — turkey and bean chili, avocado, baked chips
    Wednesday — Tomato-poached eggs, garlicky greens, bread
    Thursday — Fish supper
    Friday — Fend
    Saturday — I’ll be off on an adventure with my older child, so I’m leaving broccoli pizza crusts and roasted chicken for Daddy and the little man to make their own pizzas.

    I so need you guys this week! I just started weight watchers in an effort to lose weight before I have to start trying on wedding dresses next fall – and for some reason, I just can’t seem to put a menu together!! Here’s my week…

    • I just found all the recipes have the points values figured out already. I really like the santa fe chicken, (we put it in carb smart tortillas) banana bread, chicken nuggets, broil tilapia, turkey meatloaf, and the oatmeal banana cookies are super yummy! The only disaster I’ve had is with the zucchini pancakes- turned out super gross

    • PS ourbestbites has a yummy black bean soup that is only 2 points a cup and their taco soup is good and has the weightwatchers points listed as well

  34. I am so sorry about the emergency c-section. I have had to have two emergency and one scheduled and they are no fun at all! Lets just say the 6 week recovery is the longest stretch of time ever! and the entire time all I want to do is mop or sweep the floor but magically after the six weeks the complusion is gone. weird.

    I was just browsing the Internet for “meal planning ideas” and your blog popped up, & as I’m reading this all sounds a little familiar!!! I just had my son, Owen, who I had by emergency c-section, who was also up all night last night (you mentioned in your latest entry!) crazy how I stumbled upon your blog out of everyone’s out there.
