In case anyone was wondering, recovering from an emergency c-section is way worse than a regular delivery. But there is one benefit to being forced to do nothing. I get to stare at these…
…all day.
My mom leaves town today, after two weeks of having either her or my dad here to help. (I don’t know what we would have done without them!) We have a bit of time before more family can get out to help us, so I’m a little nervous about what the next week or two will bring. Thankfully, between church and good friends looking out for us, we have people bringing us dinner 10 nights in a row. I can’t even begin to express the gratitude I am feeling for everyone who is helping us out in so many ways.
Anyway, here’s my meal plan for the week…sit back and let the food come to us!

Sunday-out to dinner
Monday-marinated hanger steak tacos with diced ren onion, corn salad, and homemade salsa
Tuesday-panko chicken cutlets, mashed potatoes, string beans almondine (making a double batch), sugar cookies made with berry-butter
Wednesday-breakfast for dinner: brioche french toast with leftover berry butter, fruit salad
Thursday-chciken picatta over buttered linguini, salad, string beans, and garlic bread
Friday-out with my husband, kids @ a bday party
Saturday-sliced filet mignon—roasted mushrooms for the adults and dinner rolls for the kids

Sunday – Emeril's Chicken, Mushroom & Spinach Alfredo Lasagna

Monday – Shredded Salsa Beef Tacos
Instructions:
1 2-3lb chuck roast (Mine was 2.84 lbs)
1 taco seasoning packet (I used McCormick)
1 24oz jar of salsa (I used Safeway Select Roasted Tomato Salsa)
1 TBS minced garlic (from the jar)
Salt & Pepper
Directions:
1. Salt and pepper entire roast and place into slow cooker.
2. Sprinkle taco seasoning packet over the top of the roast, followed by the minced garlic.
3. Pour salsa over the entire roast and put the lid on.
4. Cook on low for 8 hours. After 8 hours take out the roast and shred with 2 forks. Put the shredded beef back into the crockpot (with the salsa still in there) and continue to cook on low until ready to serve.
Tuesday – Tostadas with left-over Salsa Beef
Wednesday – Costco Orange Chicken, White Rice, Salad

Thursday – Mushroom Porkchops, White Rice, Salad
My recipe: Season thin boneless porkchops with paprika, garlic salt & black pepper and cook in a skillet (in olive oil) till done. Transfer chops to a plate. Saute' 1 onion and 1 red bell pepper (both chopped) in some olive oil and add some mushrooms near the end (they cook quicker). When tender, dump in a 10.5oz can of Campbells Cream of Mushroom Soup and 3/4 can of water. Stir ingredients to combine and cook for a few minutes(till the soup heats up) then add the pork chops back in the pan to re-heat. Simmer until the chops are nice and hot.
I serve it with either a side of white rice or a side of home-made mashed potatoes (& a side salad).
Friday – Southwestern Style Chicken Bake, Corn Bread, Salad

Saturday – Slow Cooker Pot-Roast over egg-noodles
Recipe: I'm just going to do something like cut up potatoes & carrots and put them in the bottom of the slow cooker. Add a chuck roast on top of the veggies and add Lipton's Beef Onion Soup Mix, and Mushroom Soup. Then probably alittle red cooking wine and some water. It's no recipe… I'm just making it up as I'm typing… lol! 😛

DH wasn’t too enthusiastic when I told him about Emeril’s Lasagna, so now instead of making that tonight I’m making Lasagna Roll-Ups.

This week I’m starting to feel the nausea (6 weeks along), so everything will either be from the freezer, take out, or something my husband can make (grilled cheese/quesadillas/pancakes.)
My body really hates pregnancy (my last one was a doozy!) so I’m trying to let things go and give myself some grace this time around.

Congratulations! When I was pregnant with my daughter I couldn’t stand to cook anything, which is bad since I am a personal chef. It sounds like you have a great plan of action.
With the pregnancy I am currently in, I can cook, but nothing really sounds good.
Things will get better.

I live alone so I cook tons of stuff on Sundays to make meal time a breeze throughout the week. This week i am making meatballs (for pasta, subs, soup), roasted tomato sauce, vegetarian chili(natchos, stuffed baked potatoes), peanut butter chocolate chip banana bread, challah and asian slaw(for quick lunches).

I never post a menu plan here because, well, after years of raising my family and keeping track of meals and so many other things, I am finally free to take a whimsical approach to cooking — thank goodness! Just keep looking at those tiny, precious feet and enjoy the food that is prepared for you.
I will share tonight’s quick fix menu, which is in process as I write — grilled salmon with wild blueberry sauce, steamed broccoli and white and wild rice pilaf with leeks, carrots and a splash of white wine.

Monday: Egg Sandwiches, CSA cantaloupe
Tuesday: Take-out after son’s cross country meet (the only meet that is on my day off- so I finally get to go see him run)
Wednesday: Hubby cooks. Grilled chicken, CSA vegies, rice
Thursday: Hubby cooks. Spaghetti, garlic bread, salad
Friday: Pizza night. Pepperoni, with hopefully some CSA peppers, salad
Saturday: Son’s birthday. His choice.

I just found skinnytaste.com all the recipes have the points values figured out already. I really like the santa fe chicken, (we put it in carb smart tortillas) banana bread, chicken nuggets, broil tilapia, turkey meatloaf, and the oatmeal banana cookies are super yummy! The only disaster I’ve had is with the zucchini pancakes- turned out super gross
PS ourbestbites has a yummy black bean soup that is only 2 points a cup and their taco soup is good and has the weightwatchers points listed as well
I am so sorry about the emergency c-section. I have had to have two emergency and one scheduled and they are no fun at all! Lets just say the 6 week recovery is the longest stretch of time ever! and the entire time all I want to do is mop or sweep the floor but magically after the six weeks the complusion is gone. weird.
