Week 247 Menu

Sorry today’s post is late. And it doesn’t have a photo. Between Owen still not totally realizing that humans are NOT nocturnal and my computer shutting down and making an S.O.S. tone non-stop on Friday afternoon (right when I was about to sync up my new iPhone no less!) necessitating a trip to the Genius Bar where it still resides, well, I guess that says it all! But I haven’t ever missed a Sunday menu post and I’m not going to start now!

Monday is the last day for meals being brought in. It’s been heaven and we feel very grateful to so many wonderful friends! We’ll see how I do this week…Owen is definitely more work than my other babies were, so I’m still feeling a little (okay, a lot) worn out. We still have a lot of support the next few weeks, so we should be good regardless of how well I stick to the meal plan!

My mom’s team at work sent us a TON of frozen meals from Omaha Steaks, so we’ll probably start using some of those. So, for a few nights I’ll list the Omaha Steak food we’re eating, but link to my recipe I would normally use if I were actually cooking it! 😉

Beef Stew
– Yummy bread

THURSDAY:
Chicken Salad Sandwiches
– Fresh fruit (still coming in from our CSA!)

    Sunday: Baked, Stuffed Pumpkin with sautéed kale from CSA basket
           I saved this recipe from last winter until I could get my hands on a baking pumpkin this season!!! I can’t wait to try it!
    Monday: Carroty Mac & Cheese (Three Many Cooks)
    Tuesday: Roasted Squash and Potato Soup and Pumpkin Cornbread (Two Peas & Their Pod) featuring CSA veggies
    Wednesday: Dinner at church
    Thursday: Leftovers
    Friday: Herb Roasted Pork Tenderloin with Preserves (PW)….back by popular demand
    Saturday: All the Grandparents in town for Shelby’s 3rd birthday!

  3. I just started a foodie blog so I have no followers and not many post (more coming tonight just gotta type them up) but here is my meal plan:

    Monday: Stirfry with baked brown rice (the best and easiest way to make perfect brown rice)

    Thursday: Stuffed Shells, Salad and Bread (for hubby and my 2 girls) for me I’ll just have spaghetti, and the salad and bread.

    Friday: Calzones, and leftover salad

    Saturday: Jason’s Deli (we seem to go to Jason’s each saturday night)

    remember that a c-section is major surgery? PB&J on toast is a cooked meal!

    sunday – small beef tenderloin on the grill (it is a beautiful fall day!) with asparagus and potatoes
    monday – spaghetti and sausage (spaghetti squash too!)
    tuesday – sweet and spicy chicken breast with ricw
    wednesday – beef stew
    thursday – leftovers
    friday – make at home pizzas
    saturday – going to DC to visit youngest son in his first year at American Univ.

      yes, I keep telling myself to give myself a break! major surgery and a newborn baby…man, I’m TIRED. nate’s sisters and nate’s mom are coming to help over the next few weeks, so I’ll just have to put them to work. 😉

    OK Jane, it’s not much of a plan as I’m out for work dinners three nights this week, but here you go:

    Sunday – Roast pork w potatoes and a mix of broccoli and cauliflower

    Monday – Country captain chicken w brown rice

    Tuesday, Wednesday, Thursday – out for dinner

    Friday – Salmon and pesto pasta

    Saturday – birthday dinner – cake & ? maybe Indian food

    Sunday – Cooking Light’s Cabernet Short Ribs w Parmesan Polenta

    Hang in there! Best wishes for you, Owen, your husband, and the girls. Heres my decently homemade menu for the week. (keep in mind we are quite busy…although w/ a new baby im sure you are so much busier than us):

    Sunday: getting Chipotle…late night volleyball and soccer so im being realistic

    We’re trying to get in all the leafy greens we can before they go away as fall and turns into winter!

    Sunday – Baked chicken, butternut squash puree (PW), crash hot potatoes (PW) and whole wheat rolls. Brought dinner to a family who just had a baby. (c:

    Thursday – crispy black bean tacos with salsa verde (tomatillos from the farmer’s market!)

    Jane, I’m sending you all the positive vibes I can; I hope they help. I have a big inspection at work this week, and my husband is working on finishing up a written draft of his dissertation this week, so things are crazy around here. Here’s our plan for this week:

    Sunday: Olive Garden

    Monday: Chili (crockpot), cornbread (We make individual pots of chili. Mine is a mild veggie chili with lots of beans and a little corn. My husband’s is a spicy chili with wine braised beef tips.)

    Tuesday: leftovers

    Wednesday: Pulled pork BBQ (crockpot), roasted brussel sprouts, sweet and sour slaw

    Thursday: leftovers

    Friday: more leftovers

    Saturday: not sure yet

    It’s October, but it’s Texas, and it’s still in the upper 80’s. I keep wanting to make an autumn comfort food menu – but it’s still just too dang warm!

    and lastly, apple harvest soup with pork steaks
    mmmmm…
