Hey everyone! We are almost to San Diego, which is why my menu isn’t done yet, but as you know, I never let a Sunday go by without a menu post! Plus, I need to announce the Albion giveaway winner! So here goes!

I feel as though I am somewhat too strict with my planning now. Last night I was left with a huge pot of stuffing and 1.5 roasted chickens because the teens ended up eating elsewhere. Should have just gone with a pot of soup!

Wednesday: Chicken Parmigana sandwiches…I always make double and serve on rolls a few nights later, leftover black bean soup from Saturday

Friday: A shrimp/coconut Indian soup and some appetizer from my new cookbook Trader Joe’s Simply Indian. A local lady, here in Camaillo CA, wrote the book, all Indian recipes with items that can be purchased at Trader Joe’s. How great is that? A yummy food and a favorite store all rolled up in a cookbook. Will have fun trying new recipes.
Sat-Sun…who knows, we have no kids so we could go out and we could cook…leaving the option open.
