Week 313 Menu… and Albion Givaway Winner!

Hey everyone! We are almost to San Diego, which is why my menu isn’t done yet, but as you know, I never let a Sunday go by without a menu post! Plus, I need to announce the Albion giveaway winner! So here goes!

Second, menu time! Since I am literally driving on the freeway…wait, almost literally, Nate is doing the actual driving…I’m going to be a slacker and wait until I have Internet to get my menu up. But just because I’m a slacker doesn’t mean you get to be. πŸ˜‰ Please, please, please share your menu for the week so you can inspire one another!

    mon: oven fried fish sandwiches, mixed saute greens (kale and bok choy looked good in the market!), sweet potato fries
    tues: maple mustard chicken thighs, roasted potatoes, spinach salad
    weds: taco salad
    thurs: hamburger pizza, salad
    fri: out
    sat: jalapeno mac & cheese

    Wednesday: Whole chicken in the slow cooker (trying this method for the first time!) with cranberry sauce
    Thursday: Strawberry, orange salad with chicken and balsamic
    Friday – Saturday: With grandparents

    friday: Pizza night, salad

    saturday: Ham and cheesy potatoes, green beans

    Mon: Black pepper chicken and veggie curry with naan bread
    Tue: Spaghetti carbonara and green salad
    Wed: Pupusas and sweetcorn slaw
    Thur: Film and nibbles night at my Italian conversation group, taking artichoke dip, grissini and amaretti.
    Fri: Baked breaded chicken, wedges and beans
    Sat: Gnocchi with ragu, garlic greens
    Sun: Dinner at mum’s

    I feel as though I am somewhat too strict with my planning now. Last night I was left with a huge pot of stuffing and 1.5 roasted chickens because the teens ended up eating elsewhere. Should have just gone with a pot of soup!

    Sunday: Roasted chicken, cornbread stuffing and broccoli
    Monday: Something with the leftover chicken
    Tuesday: One skillet chili mac
    Wednesday: Gnocchi with vodka sauce
    Thursday: Out
    Friday: Something with chicken breasts, mashed potatoes, veggie

    Monday: BBQ Pulled Pork Sandwiches
    Tuesday: Ham (not what I’d usually make this time of year, but it was an amazing buy at the store and I couldn’t pass it up)
    Wednesday: Pork Stew with Mushrooms and Lentils
    Thursday: Out
    Friday: Ham fried rice (using up the leftover ham I’m sure I’ll have)
    Saturday: dinner at the in-laws

    Good luck with your move! We live in Santee, just outside of San Diego and LOVE it! Especially the weather the past week or so, 70 degrees in Jan. can’t be beat!
    Monday-Turkey burgers, carrots, apples w/yogurt for dipping
    Tuesday-???Maybe some kind of pasta dish
    Wednesday-Lemon chicken, green beans, brown rice
    Thursday-Lemony lentil soup and bread (must be on some kind of lemon kick this week!)
    Friday-Pizza night
    Saturday-Eat out
    Sunday-Chili dogs, tots, broccoli

    Mon.- Dutch oven chicken, steamed rice, corn and broccoli and PW The Bread
    Tues.- Spaghetti with meatballs, salad and leftover PW The Bread
    Wed.- Jambalaya…shrimp, tasso and chicken, french bread and salad
    Thurs.- Quiche…however the kids pick it.
    Fri.- BBQ pork sandwiches, coleslaw, baked beans and corn muffins
    Sat.-London Broil chinese beef and fried rice
    Sun- Tacos and Tamales

    Sunday: Chicken Parmigana, pasta and hubby’s favorite dinner and a reward for washing my windows!!
    Monday: Tilapia in a citrus vinaigrette, we liked it last time, threw out the recipe tonight, good but not great.
    Tuesday: Burritos and rice
    Wednesday: Chicken Parmigana sandwiches…I always make double and serve on rolls a few nights later, leftover black bean soup from Saturday
    Thursday: Slow cooker pork chops, rice, brussel sprouts
    Friday: A shrimp/coconut Indian soup and some appetizer from my new cookbook Trader Joe’s Simply Indian. A local lady, here in Camaillo CA, wrote the book, all Indian recipes with items that can be purchased at Trader Joe’s. How great is that? A yummy food and a favorite store all rolled up in a cookbook. Will have fun trying new recipes.
    Sat-Sun…who knows, we have no kids so we could go out and we could cook…leaving the option open.

  28. I’ve been totally disorganized this week getting my baby’s surgery scheduled, insurance details, logistics, etc. But, we have plenty in the freezer and pantry to keep us full.

    Sunday-Grilled Burgers, Chips, Fruit Salad
    Monday-Baked Ravioli, French Bread, Green Salad
    Tuesday-Chicken Taco meat in the crock pot…can’t decide between nachos, tostadas, or tacos.
    Wednesday-something else with the taco meat.
    Thursday-Pot Roast, Mashed potatoes, veggies (don’t quote me on this. It was 85 degrees here today. I’m not doing pot roast if the heat wave sticks around!)

    Can I just say how much I love this blog? I’ve been cooking for 3 roommates after moving out for the first time. It’s so nice to not have spaghetti every night because I can’t think of anything!
