Week 319 Menu

Hello! I don’t have anything to share today besides my menu, so how about a quick picture of last night’s sunset? We really are blessed to live in such a beautiful place.

Menu time!


– Grilled Chicken Citrus Salad (Kim from PA had this on her menu last week, sounds good…I’m just going to make something up, unless you have tips, Kim!)

Pollo Guisado
– Will serve with tortillas, lettuce, tomatoes, guacamole, beans, rice, etc…

– Leftovers

Tuscan Tomato Soup

– Eat out!

– Pork Chops (experimenting with a new way of cooking them…will keep you posted!)
Roasted Fingerling Potatoes

    as usual, I don’t plan for a specific day. I just plan 5 or 6 meals and decide what I feel like making that day. I work 1pm to 6pm, so what I fix has to be able to be baked or heated up by family as they get home.

    chicken taco soup, cornbread
    fried potatoes with eggs (this will be Friday’s meal)
    rotel chicken spaghetti
    sos (creamed chipped beef on toast) , pea salad
    Mexican Lasagna (new recipe)

      I need to start planning more of those types of meals, now that we’re getting into swim team, etc…not home the hour before dinner to prep food! will definitely keep an eye on your menus… 🙂

    Monday: Quiche, asaparagus and bread
    Tuesday: Trader Joe’s Mandarian Orange Chicken, Rice and Vegetables
    Wednesday: Tostada Goop (from you Jane, can’t wait to try it)
    Thursday: Bow tie pasta salmon toss, more asaparagus, and bread of course!
    Friday: we will likely have pizza or go out to eat for fish!

    Monday- red beans and rice (been trying to mak this for a couple of weeks now!)
    Tuesday- stew again
    Wednesday- beans again (I love making big pots of stuff and having leftovers to eat during the week)
    Thursday- chicken taquitos or tacos, can’t decide
    Friday- pancakes and berries
    Saturday- marinated flank steak and potatoes

    Wow! I’m happy to have inspired you with Grilled Chicken Citrus Salad. I actually was inspired by Sarah Carey’s Avocado Citrus Salad:

    I changed it a bit:

    Ӣ1 grapefruit, peel and pith removed (I only used oranges)
    Ӣ1 large navel orange, peel and pith removed
    Ӣ3 ounces baby arugula (3 cups) (I used romaine)
    Ӣ2 avocados, sliced
    ”¢2 radishes, trimmed and thinly sliced (didn’t use radishes)
    Ӣ2 tablespoons extra-virgin olive oil (I used Peruvian Lime EVOO)
    Ӣ2 scallions (white and light-green parts only), thinly sliced (I added a shallot, almond slivers and parsley)
    ӢCoarse salt and ground pepper

    1.Working over a medium bowl, cut out grapefruit and orange segments, then squeeze juice from membranes.
    2.Place arugula on a platter and top with avocados, radishes, and citrus segments with juices. Drizzle with oil, top with scallions, and season with salt and pepper.
    3.Top with sliced grilled chicken

    Sun: Out for dinner after the Philadelphia Flower Show
    Mon: Pasta with lemon, roasted garlic, sugar snap peas, & parmesan cheese with a salad (using up odds and ends)
    Tues: Tuna melts & fruit salad
    Wed & Thurs: business dinners
    Fri: Smoked salmon & goat cheese frittata, grainy toast
    Sat: Chicken stir fry w lots of veggies

    Mon: Mark Bittman’s Pumpkin in mole
    Tues: pasta with broccoli
    Wed: Trader Joe’s Mandarin Chicken with rice and veggies
    Thur: leftovers
    Fri: croissant pizza pockets for movie night
    Sat: Family in from NY so we’ll probably head to Old Town

    I’m so happy I found this website! It really helps me get over brain block when I sit down to meal plan.

    Monday: balsalmic chicken, Parmesan cous cous, roasted veggies
    Tuesday: slow cooker green pork tacos, Spanish rice & beans
    Wednesday: 8 bean soup, salad
    Thursday: chicken Parmesan
    Friday: homemade pizza
    Saturday: off to visit parents for spring break!

  13. Gorgeous! We don’t get sunsets like that on the East Coast! 🙂 We’re back from a trip to Disney. Whew! Happy to be home!

    Sunday: BBQ burgers, it is summer again here in CA for a day or two, steak fries, my favorite side dish, Grilled asparagus with caper vinaigrette

    Monday: ribs (on sale in the deli section, just need to cook them) twice baked potatoes, wax beans

    Tuesday: Spicy green bean and pork , rice, cantalope

    Wed: leftover burgers, roasted brussel sprouts

    Thursday: Raviolis, salad
    Friday…not sure, no meat since it is Lent, depends on who is home
    Sat-Sun hubby away, no meal plans!

    Well, last week, only the first 3 days went as planned… then we went to take care of grandma. But, I’ll be going home tomorrow. So, crossing my fingers that this week goes as planned, and at home!

    Sun: Grandma’s house (dinner out)

    Mon: Sports event (dinner out)

    Tue: Beef stroganoff & veggies.

    Wed: BLT’s, cole slaw & chips

    Thur: Fried rice (combination) w/ cream cheese wontons

    Fri: Shrimp omelets, hash browns & toast (been craving this for a month!)

    Sat: B: Waffles, strawberries & sausage
    L: Tuna fish sammies & chips
    D: TBD (Hubby cooks)
    Dessert: TBD (I’ll make this”¦)

    It was quite a job covering my garden for our light freeze Saturday night!
    Now I’m just glad it’s Spring where I am!

    You’ve got me wondering what your new method of cooking pork chops is. I tried Luisa’s (The Wednesday Chef) method in a dry pan with lots of salt – best I’ve ever made!

    Mon: Potstickers and garlic chilli broccoli
    Tue: Baked potatoes with pesto and goat’s cheese, salad
    Wed: Salsa rice gratin, salad
    Thur: Chicken and pepper fajitas
    Fri: Baked fish and chips, peas
    Sat: Cottage pie, broccoli, carrots
    Sun: Taking my Mum out for a special Mother’s day meal

    Sat – Asian ribs (crockpot), mashed potatoes, broccoli
    Sun – roast turkey, risotto, bacon wrapped green beans, salad
    Mon – turkey paninis, fruit
    Tues – ravioli w/ fresh bread
    Wed – shepherds pie
    Thurs – steak fajitas (crockpot), rice
    Fri – baked haddock, leftover rice, veg

    Sunday – bbq(loving the good weather here in N. Calif!) hamburgers, hot dogs, sweet potato fries, fruit salad

    Monday – crockpot vegetable alphabet soup

    Tuesday – mexican lasagna, green salad, cut-up veggies

    Wednesday – breakfast dinner

    Thursday – haven’t decided, but a lot of people are posting TJ’s mandarin orange chicken and that sounds good!

    Friday – Still up in there and kids may have last minute bday party, probably pizza for all

    Saturday – no plans yet – I saw a recipe for steak and brussel sprout stir fry that my kids would love, so I might try that

    oh a new pork chop recipe! i made a new one last night and they were extrodinary!!! seriously amazing! they were supposed to be crockpot too, so that’s even better, but i forgot, so made them in the oven. they had a most delicious gravy made with them too… very very very good over mashed potatoes and asparagus.
    just sayin’… if yours ends up floppin’ check out my blog for the link to my recipe. 😉

    Friday: Chicken and Garlic Potatoes and Green Beans
    Saturday: Date Night, out to eat 🙂 Kids are having TV Dinners
    Sunday: Dry Rubbed Rib Eye and Killer Mac n Cheese and Salad

    Tue – I work late, leftover fajitas
    Wed – Ham, Spinach & Cheddar Quiche w/Roasted Taters (didn’t get to last week)
    Thu – Cabbage & Keilbasa Skillet w/Egg Noodles (new from All Recipes)
    Fri – I work late, hubby & little one make pizza

    Also for the freezer: Pecan Coconut Banana Bread & maybe No Bake PB Granola Bars (from 2 Peas & Their Pod)

    Beautiful view! I would love to live near the ocean but we’re in the “northcoast” ”” by Lake Erie, which is lovely.

    Sunday: We had amazing sesame-seared ahi tuna with veggie “fried” rice.
    Monday: Chicken apple sausages with roasted potatoes & sweet potatoes and broccoli.
    Tuesday: *might make lasagna rollups with pesto chicken and a side salad. But with how tired I am today, lasagna rollups sound too time intense. We’ll see!
    Wednesday: Leftovers.
    Thursday: Chicken and portabello cheesesteaks with sauteed zucchini.
    Friday: Spicy shrimp with cheddar grits and some veg ”” maybe brussel sprouts or asparagus.
    Saturday: Coconut chicken and tofu with sugar snap peas and ginger carrots.

    For the first time in what seems weeks, I finally have enough of everything that I should be able to do without going to the store.

    Monday-Pesto Chicken w/ roasted cabbage

    Tuesday- Pork chops w/ spaghetti squash or zucchini

    Wednesday- Tilapia with generic side dish no. 3 (probably some kind of vegetable rice)

    Thursday- Buffalo chicken sandwiches w/ home fries

    Friday- Pasta w/3 sauces because all my roomates are children and can’t just have 1 sauce

    Saturday- Out for Pho most likely

    sat – leftovers (i have a painting class w/ a friend)

    LOVE this week – all of my meals (except fri) were cooked/prepped sunday & I just have to heat them up when I get home!

  34. Did you get a ‘green flash’ with that sunset? I’ve been to San Diego a few times and I think I saw a glimpse of a green flash the one evening. The sun setting into the ocean is a breathtaking sight nonetheless.

    Here is my menu for the week…

    asparagus ricotta tart
    squash croquettes with salad
    homemade mac & cheese (i hope it works out this time)
    baked ziti (because I foresee a couple late nights at work)
    veggie jambalaya
    stuffed onions
    and then out one night for my husband’s birthday!

    Hi. My Gluten Free Menu for the week of March 3
    Sunday – GF Spaghetti and meatballs & side salad

    Monday – Meatball “subs” (GF for me)

    Tuesday – Grilled Cheese & Veggies

    Wednesday – Chicken Ceasar Salad

    Thursday – Apple Brie Quesadillas

    Friday – To My Mom’s for Bday Party. Not a GF menu so i will eat snacks at home before hand. But i am bring GF Chocolate Biscotti and Homemade Choc ice cream for dessert!

    Saturday – Pork Tenderloin (Not sure what version to make yet?) and Mashed Sweet Potatoes

    First let me say I love the website. I have been looking for meal ideas here for the last year and finally going to post. My menus go from Weds to Tues, they follow the “sales ad calendar” here. 🙂

    Fri-Family date night

    Sat-Going to a Quinceanera with the family

  38. Sorry this is late. We started out the week finding out we are going to have to put down our “furry baby” (beloved 13 year old shih-tsu) in the next week or two, so I haven’t been online much. I got when I was 15, and he has always been such a constant source of love. 🙁

    Here’s what we had this week, and what’s planned for the rest of the week:

    Sunday-BBQ Chicken Pizza and Green Salad

    Monday-Mushroom Burgundy Stew over Egg Noodles

    Tuesday-I had a haircut, picked up taquitos on the way home. Hubby cooked for the kids.

    Wednesday-Grilled fish tacos with slow cooker pinto beans

    Thursday-Manicotti (Costco), Green Salad

      Ya know.. There was a marinade at the store that caught my eye and I figured that I would try it. Its made by Jack Daniels, and comes in a big plastic bag so you can toss everything in and let it marinade before you cook it. I ended up tossing it in the crock pot with the chicken, then shredded the chicken in my stand mixer. I made a broccoli slaw (only because I buy the slaw style broc for my salads), and topped the sandwiches with that. It was a really low maintenance dinner, which is my favorite!

    This week is our annual trip to a conference in Monterey. but before our trip on Tuesday I have 3 days to get through recioes.
    Saturday – steak, sweet potatoes/ baked potatoes and fresh veggies
    Sunday – Pollo Guisado from here and brownies and biscuits, it’s potluck t church
    Monday – lasagne style baked Ziti from Herrera
    Tuesday through Sunday – visiting some of my favorite places in Monterey for dinner
