Week 322 Menu

Anna brought this home from school last week.

Her teachers said it was so funny, when they were asking the kids what foods they didn’t like, most of the answers were what you would expect: broccoli, Brussels sprouts, beans. Then they got to Anna, who’s response was, “Chicken pot pie.” The teachers thought it was hilarious how specific (and random!) her answer was. I would like to take this moment to publicly defend my chicken pot pie. It is amazing and Anna doesn’t know what she’s talking about. Also, we will be re-reading the end of “Green Eggs and Ham” with that girl. Also, chicken pot pie sure sounds good right now, I think I’ll put it on the menu. (I’m so mean, eh?)

    My daughter just informed me she wants to become a vegetarian so now my whole menu changed!

    Monday shrimp and potatoes with a veggie
    Tuesday college visit! Up in the air
    Wed pasta of some sort

    Sat going to whole foods I will take it from there
    Not a very inspiring menu but crazy week!

    Haven’t posted in a long time.
    Sunday – Costco dinner = chicken salad, tossed salad and some yummy new bbq tacos I found today.
    Monday – chicken crockpot soup
    Tuesday – Monterey chicken
    Wed – fundraiser pasta dinner
    Thur – out
    Friday – steak on the grill baked potatoes.
    Sat – out for sister’s birthday to my favortie restaurant πŸ™‚

    Fri: hubby: fish, Rice, and veggies me: sweet potato, the girls: grilled cheese

    Saturday – undetermined, maybe leftovers with a twist
    Sunday – probably leftovers from Easter brunch. Maybe chocolate. πŸ™‚

    Friday – Going to Chinatown! We’ll stuff ourselves with dumplings.
    Saturday – ?? Hamburgers on the grill maybe?
    Sunday – Ham, potato salad, deviled eggs, green salad and good bread.

    Sunday: Asian salmon and asparagus. We also made ATK’s gingerbread cookies (amazing!!!!) and cut out Easter shapes.

  12. I couldn’t stand chicken pot pie until I got to be about 25. Anna will grow to love it, I’m sure!

    My 4 year old, aptly referred to in life as “Stinker”, has been in an “I-hate-cheese-in-all-it’s-forms” phase. How does a kid hate cheese?! But, now that I think of it, that pickiness is probably my my mother drove thru McDonalds so often πŸ™‚

    This week’s menu kind of relies on the same couple meals. Junior has a lot of doctor’s appointments (as usual), so the prep time is limited.

    Sunday-Spinach and Mushroom Lasagna, French Bread (a wildly successful recipe, from the ATK New Family Cookbook)

    Monday-Black Bean Burritos with Peppers and Onions, Chips and Guacamole (using my super simple and wonderful slow cooker black bean recipe. Even my 10 month old has thirds :))

    Tuesday-Leftover Lasagna

    Wednesday-Black Bean Quesadillas, Corn

    Thursday-Lentil Soup w Ham, Biscuits


    Saturday-Cousin’s Wedding

    Sunday-our family is doing brunch for Easter. Not sure what I’m bringing. Probably something from Trader Joes…

      Would you care to share the amazing slow cooker black bean recipe?

    • Of course! Lately I’ve been pouring HOT water over the beans instead of cold, and it helps them cook up quicker. My crock pot kind of varies…sometimes it needs 6 hours on low, sometimes 8 hours on high. I don’t know why, but you may need to experiment with timing.

      I thought the same thing when my son told me he didn’t like cheese in about kindergarten…He’s now 15 and he still does not like cheese (unless it’s melted on a pizza or in a stick), sour cream, butter or salad dressing. It’s always been odd to see him eat a salad or baked potato without anything topping it but it hasn’t hurt him- he’s now about 6 feet tall and 140 lbs of lean muscle and definitely in better shape than his dad and I… I wish I could copy him but I like cheese and butter a little too much!

      sara – just had to tell you that when I was a kid, my mom had to order a “hamburger with just ketchup” whenever we went to mcdonald’s, so we’d have to go to that little parking spot next to the drive thru and then they’d bring it out to us. THAT is picky! πŸ˜‰

    Wow, it’s surprisingly fun to read everyone’s menus and I got a couple ideas I might use…

    Sunday – Cold and snow changed my menu to comfort food so Grilled cheese, tomato bisque soup and pineapple chunks.
    Monday – Baked Spaghetti, Salad and Garlic bread
    Tuesday – Baked breaded pork chops, box stuffing (kids love that) and buttered corn
    Wed – Skillet Taco casserole with tortilla chips
    Thurs – Brown sugar smoked sausage, twice baked potatoes and broccoli (I think)
    Fri – Pesto Chicken, pasta with herbs and french bread (unless I have left-overs πŸ˜‰
    Sat – Probably pizza to keep kitchen clean
    Sun – Ham and trimmings

    New to this site, have been loving the inspiration to actually menu plan instead of winging it at the grocery store. I’ve recently changed to a gluten-free diet, so still experimenting. πŸ˜€

    M: Namaste “Say Cheez” rice pasta with Golden Cauliflower, topped with Mozzarella and baked, lettuce/cucumber salad

    T: Chicken tortilla soup, cheese/salsa roll-ups (for hubby)

    W: Even better the second day – Chicken tortilla soup and roll-ups

    Th: Broiled salmon, Thai coleslaw, sauteed zuchinni (I might try the Asian salmon recipe linked by Bonnie Lawrence. That looks yummy!)

    F: Pizza Bagels (with hamburger for hubby), (cheese only on GF bagel for me), green beans, leftover slaw

    S: Turkey breast, cranberry wild rice, (peas and dinner rolls for hubby), leftover green beans for me

    S: Easter is a taco dinner at my parent’s house. Everyone is bringing something different. There will be shredded chicken, soft tortillas, nacho cheese, chips, various taco toppings, and sweet corn cake. I’m taking seasoned ground beef, crunchy taco shells, homemade salsa verde and zesty bean salsa.

    School lunch pot pies were pretty gross. My mom hardly made them at home. It was usually biscuits with the filling as a soup!

    Monday- Greek chicken with garlic mashed potatoes, asparagus
    Tuesday- This website’s Island Pork Loin w/Coconut Rice
    Wednesday- Burritos
    Thursday- Grilled sandwiches
    Friday- Out for pho
    Saturday- Grandma’s house!
    Sunday- We’re actually going to the Festival of Colors so we’re probably going to have something like Palak Paneer or Veggie Kabobs. They have a chickpea stew at the temple that I can’t seem to find a recipe for…

    I don’t think I ever had chicken pot pie as a kid but I LOVE it now! I make a great one with crimini mushrooms, leeks, carrots and peas. That actually sounds delicious but I’ve already got my menu planned and shopped for!

    Sunday: We did Bobby Flay’s grilled/oven roasted chicken ”” delicious! Served with fingerling and purple potatoes and grilled asparagus.
    Monday: Chicken and sweet potato & black bean tacos with lots of guacamole and fresh pineapple salsa. Served with roasted broccoli also.
    Tuesday: Rigatoni with creamy mushroom ragu. Maybe a side salad with it?
    Wednesday: Leftovers.
    Thursday: Tofu and chickpea curry. Served with cumin-scented zucchini and naan.
    Friday: Mushroom and shrimp noodle bowls.
    Saturday: Tuna Nicoise sandwiches or use up whatever we have left in the fridge. Last night before we’re gone for the week to Minneapolis.

    I won’t have a lot of time to go grocery shopping until tuesday (I refuse to go on friday or saturday afternoon after work with all the other people) so I planned a little extra time on to my menu this week.

    sunday: chicken, chorizo and lemon bake, roasted potatoes, carrots, foccacia (I used thyme to mimic the chicken dish)

    monday: biscuits with sausage gravy, fruit

    tuesday: steak (fingers crossed, it might be warm enough to grill), chimichurri sauce, salad

    wednesday: hubby cooks. chicken tacos, chips and guac, fruit

    thursday: hubby cooks. ham and cheesy potatoes, green beans

    friday: pizza night, salad

    saturday: meatball subs, chips, fruit salad, coleslaw

    sunday: easter – lunch at my parents, dinner at scott’s family (typically, I bring either sweet rolls or dinner rolls to my parents and dessert to my sister in law’s…)

    monday: If I can score a little ham from my parents- ham and bean soup, rolls- otherwise pull a dinner from the freezer.

    • Hi Jenny, I read your comment above & laughed at the similarity! My son is 5 now & also HATES cheese in any form, especially melted! He also HATES ranch…will actually gag if its on his plate. He won’t eat hot dogs, pizza, or hamburgers…its hard to feed him at birthday parties you can imagine. He loves fruit & vegs & his fave foods are pasta & oatmeal! I love hearing how healthy your son still is as a teenager & I’m keeping my fingers crossed! πŸ™‚

    I think that’s hilarious…we have a motto in our house. It goes like this “You Get What You Get…and You Don’t Thriw a Fit”. Good motto, now if aomeone could teach me how to inforce it that would be great.

    My menu is made for my Carnivore family and I opt out of meat…so, I don’t always eat what I post. Mine is meatless.

    Sun- I have the flu…so Matzoh Ball soup for me, Bbq pork chops, red got potatoes and broccoli
    Mon- Taco night and black bean burritos.
    Tues- Shrimp Etoufee, salad and Pioneer Woman “The Bread”

    Easter: Ham & Lamb; Pineapple Stuffing (it will make you beg for mercy, it’s so good); Ambrosia; Honeyed Carrots; Broccoli Slaw; Roasted Red Pepper Mashed Potatoes; Couscous Salad; Spinach Salad; Carrot Cake Trifle (we have 15-20 folks for Easter… super fun!)
