Week 323 Menu

Happy Easter and Passover! Such a festive time of year I love it! Our family celebrates Easter and the kids successfully found their baskets this morning. I was actually more organized than usual this year, so most of the food for this afternoon’s dinner was prepped yesterday, making for a nice, relaxed morning complete with candy, resurrection buns and Owen freaking out because he doesn’t get to eat this cake for breakfast. (In case you’re wondering, I used my White Chocolate Raspberry Cake recipe and the decoration inspiration came from my uber-talented friend Lindsey Johnson.)

By the way, I decided to go the super simple route for our Easter dinner this year: a small ham, roasted carrots and asparagus, funeral potatoes, and spinach salad with grapefruit and feta. The girls made our place cards and I think they did a fabulous job.

Today marks a first for This Week for Dinner…I am literally copying and pasting last week’s menu! I did in fact make dinner last week, but I didn’t make one thing that I had planned! Not exactly what I love to do, but at least it makes this week’s planning easy!

MONDAY:
– Bistro Chicken
– Mashed potatoes and a green veggie

TUESDAY:
– Caprese salad
– Crusty bread
– Roasted vegetables

WEDNESDAY:
– Chicken Pot Pie

THURSDAY:
– Leftovers

FRIDAY:
– Island Pork with Sticky Coconut Rice
– Veggie of some sort

SATURDAY:
– Eat out

SUNDAY:
Waffles and fruit

  1. What I want for Easter dinner is a big bowl of that cilantro sour cream from the burritos. I don’t think that my wife is going to let me get away with that.

    R: Pasta or soup from the freezer.

  3. Happy Easter!! Any chance of getting a Hard-Boiled Egg Recipe Round-up tomorrow? 🙂 I have a few in my arsenal, but still need some more. I trust you guys more than Google or Pinterest!

  6. Happy Easter! We’re having a pot-luck style Easter dinner and I am bringing prosciutto wrapped asparagus and spinach salad (mine has feta, strawberries, and walnuts).

    No that Lent is over and I am cooking meat again, my husband picked out most of this week’s menu plan…

    pretzel chicken and potatoes
    pulled chicken sandwiches
    sour cream chicken enchiladas
    prosciutto and gruyere pinwheels
    stuffed chicken parm

    Sunday – Happy Easter – Family all at my house for Baked ham, cheesy ranch potatoes, corn, green beans, coleslaw, deviled eggs and Brownie and peanut butter trifle.
    Monday – Shrimp and chicken jambalaya
    Tuesday – Ham sandwiches and potato salad
    Wednesday – Simply super salmon, haluski, green beans
    Thursday- Ham and cheese frittatas
    Friday – Cajun chicken pasta, garlic bread
    Saturday – Leftovers

    Sunday- Easter dinner with my family- Grandma’s cooking is the best!
    Monday- Sesame pork chops, rice pilaf and broccoli
    Tuesday- Turkey meatloaf, mashed potatoes and broccoli
    Wednesday- out
    Thursday- whole wheat spaghetti with ground turkey and tomato sauce
    Friday- pizza
    Saturday- Chipotle on the road to a band concert

  10. We had Easter brunch for the first time this year as opposed to dinner, but we’re all still full from the spread, so I’m thinking “dinner” will just be noshies.

    I haven’t really made a menu for the week, but the fridge and freezer are full, so I’ll probably have to make whatever is in there. Junior has a few therapy appointments this week, and Stinker is starting soccer, so simple is the name of the game!!

    Sunday-Snacks after big Easter brunch

    Monday-Ham and Pineapple Pizza (using my cast iron skillet–fabulous), Green Salad

    Tuesday-Ground Beef something…maybe burgers? Meatballs? I’ll be surprised.

    Wednesday-Costco Orange Chicken, Egg Rolls, Green Beans

    Thursday-Crock pot Chicken Burritos, Green Salad

    Friday-Soup from the freezer (I think I have Minestrone in there), French Bread

    Saturday-Leftovers

      I think easter brunch is DELICIOUS and I was tempted to do it myself this year. maybe I will next year!

    My girls are on spring break this week so we see what if I stick to this 🙂

    Sun: already done just leftovers from lunch, so we could take the dogs for the first walk of spring 🙂

    Mon: Old stand by and a fave: Spaghetti, homemade whole wheat garlic bread, spring veggies

    Tues: Crockpot “Refried Beans” made into burritos and Spanish Rice

    Wed: Pineapple Not So Fried Rice (chloe’s kitchen) (will have meat option for hubby)

    Thurs: Burgers, Fries, Pasta Salad (turkey burgers for hubby and the girls) for me one of my black bean mushroom burgers I made

    Fri: Pizza and Salad

    Sat: Not Sure thinking Breakfast???

    Sun: Mushroom Stroganoff Fettuccine with Garlicky Greens (Chloe’s Kitchen)

    Sun: Festive Easter Brunch at my parent’s farm. I brought salmon & goat cheese frittata and mimosa’s. No need for a dinner after all we ate!
    Mon: Shrimp Caesar salad
    Tues: Tuna melts (never got to them last week), carrot & celery sticks
    Wed: Baked chicken, baked potatoes, mixed veggies
    Thurs: Penne pasta, homemade red sauce, salad

      that is me too I’m vegan (sometimes vegetarian) in a house of meat eaters.Although my girls are starting to eat more vegetarian.

    Here’s my GF menu for the week of 3/31…
    Sunday – For easter I made Tyler Florence’s Tangerine Glazed Ham w/ carrots. It was fabulous!!! Also made cheesecake for dessert, blueberry lemon bars, and cheesy potatoes.
    Monday – Leftovers 🙂
    Tuesday – Egg Salad or Grilled Cheese
    Wednesday – Sweet and Sour chicken baked not fried no breadcrumbs. love it !
    Thursday – Chicken/Bean Enchiladas
    Friday – Pizza
    Saturday – OUT ???
