Week 330 Menu

I recently made a quick coleslaw to go with some pulled pork sandwiches we had for dinner one night. When I pulled out the poppy seeds for the slaw, I was struck by just how pretty they were. I had to take a photo, for no other reason than to share the simple beauty of these poppy seeds.

I have a couple repeat items from last week’s menu. I didn’t end up doing much cooking due to my travel and the kids’ activities. I am hoping to actually go to the store this week and get some cooking done!

MONDAY:
Tuscan Tomato Soup

TUESDAY:
Vegetarian Chickpea burgers
– BBQ-type food

WEDNESDAY:
– Chicken Caesar Wraps

THURSDAY:
– Leftovers

FRIDAY:
Chicken Pot Pie (Anna is not going to be happy about this!)

SATURDAY:
– Take out

SUNDAY:
Stuffed Peppers

    Hi, Jane,

    I’ve been thinking of making pulled pork myself soon. I usually only do this once a year because smoking a pork shoulder makes a lot of pulled pork. Fortunately, it freezes well.

    Here’s our menu for a recent Sunday Dinner:

      oh my goodness, I totally do the cheating pulled pork in the crockpot – I love that you smoke your pork shoulder! MAYBE one day I’ll get all gourmet like that… 🙂

    Friday: Hawaiian quesadillas (ham, pineapple, black beans, cheese)
    Saturday: BBQ, chili and lime chips

    This is easily going to be the most hectic week of the year for me. Softball, baseball, swimming and dancing all are in full force and it’s the last week of school with lots of volunteer “opportunities”. It should all be fun though.
    Sunday- grilled burgers
    Monday- shrimp pasta salad at the ball park or at swimming depending on which kid is where
    Tuesday- beef broccoli and jasmin rice
    Wednesday- cheddar ranch chicken bake
    Thursday- leftovers hopefully
    Friday- last day of school pizza or something fun
    Saturday- I have no idea yet 🙂

      the holidays and the end of the school year are always so jam packed! wish they would spread the fun out a bit, but you’re right, it does all end being fun, as long as we get there in one piece! 🙂

    My family is attempting veggie based eating more often these days, therefor here is our veggie menu for the family:

    Sunday: Curried Lentils and veggie quinoa, seared green beans, garlic whole wheat naan with hummus and cucumber yogurt salad

    Monday: Broccoli and feta pasta salad (made Sunday), Caesar salad

    Tuesday: Veggie Chili (made Sunday), cornbread

    Wednesday: Sesame noodles, edamame, Asian style green salad

    Thursday: Vegan Taco Nite with leftover veggie chili (made Sunday), fried potatoes, cilantro, cabbage, salsa, limes

    Friday: Gigantic kale salad, mango and strawberries

    Saturday: Pizza, Caprese salad

      Yum, your menu sounds great. We are doing the veggie based eating too. Though some weeks turn out more carb heavy than we’d like. It’s a process, and we are getting better week by week. The extra prep on Sundays helps a ton. Good luck to you!

    Garden produce is coming in a-plenty right now! I am making full use of my zucchini before it’s gone.
    I saw several squash vine borers flying among my plants, so I’m waiting for their demise.

    Sun-Mammoth stuffed garden zucchini(biggest darn zuke I’ve ever seen!), garlic bread.
    Mon-Fish tacos with cabbage and cilantro lime vinaigrette, crock pot refried black beans, rice
    Tues-Linguine, italian turkey Sausage and peppers, thyme and garlic zucchini/yellow squash saute.
    Wed-shrimp quinoa salad loaded with veggies.
    Thurs-Bean and cheese burritos, marinated cucumbers and garden tomatos.
    Fri-Roast chicken, dill baby red potatoes, parmesan grilled zucchini.
    Sat-leftovers.

    Our visiting guest did two great and wonderful things for me this week – cleaned my stove top (which really needed it and I couldn’t seem to do) and made rusks. Breakfasts will now be adjusted. =)

Between 6 appointments for Junior last week, more this week, plus his birthday, and having no appetite for being a nervous wreck (waiting on some test results for a rare genetic condition that has severe lifelong implications), I haven’t planned a menu in two weeks. But, I have stuff in the fridge and freezer, so here’s the plan:

    Sunday-Sloppy Joes, Fresh Fruit
    Monday-Frozen Manicotti, Green Salad
    Tuesday-Leftover chicken from Phils over the weekend…maybe pizza?
    Wednesday-Junior’s 1st birthday. Maybe out to celebrate.
    Thursday-Something from the freezer–chicken and rice soup perhaps.
    Friday-Egg Rolls and Stir Fry
    Saturday-Leftovers
