Week 332 Menu

Grapes are pretty.

Is it really time to plan another menu? Before I know it this summer is going to be over!

– Happy Fourth of July! Pretty sure we’ll be grilling something up, preferably poolside! I think I’ll just hit the grocery store, see what I see and go from there. I’m excited to see what you all have on your Fourth of July menus!

Creamy Chicken Enchiladas…suddenly I’m craving them!
– Guacamole and chips

Tuscan Tomato Soup
– Sauteed fresh veggies and bread

– Leftovers

– Pasta tossed with fresh garlic, parmesan cheese, olive oil, tomatoes and fresh basil…and salt & pepper, of course!
– Bread

– Eat out

– Breakfast for dinner…I’m thinking a frittata, it’s been a while since we’ve made one!

I know it’s a holiday weekend, so most of you are probably out enjoying the summer sunshine! Remember, it doesn’t matter what day of the week you share your menu…just get it up here! 😉

    Happy 4th everyone! We celebrated the 4th with an outdoor concert and fireworks last night. I loooove fireworks!

    Saturday – potato salad, cucumber salad, Chris’ bread with Boston tomato and goat cheese and yogurt with homemade granola for dessert.
    Sunday – leftovers from Saturday
    Monday – summer vegetable gratin and more of Chris’ french bread
    Tuesday – tender chard with light vinaigrette and roasted potatoes
    Wednesday – roasted cauliflower pasta with walnuts and garlic
    Thursday – fish tacos with a cabbage slaw
    Friday – stuffed cabbage

    Monday (4th of July)- Pork Steaks, Potato Salad and Blueberry Almond Slab Pie
    Tuesday- Pizza
    Wednesday- Meatless Manicotti

    Friday- Latin Baked Chickena and Spanish Rice
    Saturday- Leftovers

    Tuesday: A go to of mine..Garlicky Spaghetti
    Wednesday: Marinated Chicken with asparagus and potatoes
    Thursday: Chili Mac (vegetarian version)
    Friday: Special Event
    Saturday: Out or leftovers

    Wow, I never realized how pretty grapes are. What a great artist you are to capture their beauty. Happy 4th!

    Sat: Bacon Ranch Quesadillas + Carrots & Dip + Fresh Strawberries
    Sun: Deli Sandwiches + Greek Pasta Salad (costco!) + Fruit/Veggie Trays
    Mon: Slow Cooked BBQ Pulled Pork + French Bread Rolls + Fruit Salad
    Tue: Yorkshire Pudding w/ Fresh Strawberries
    Wed: Orange Chicken + Brown Rice (I’m trying the costco chicken…thanks!)
    Thu: Fresh Tomato & Basil Pasta (similar to yours this week) + Fruit

  10. It’s going to a week of sandwiches for dinner, as I just didn’t feel like doing much else. All to be served up with a side of fruit. And maybe some fries, ha.

    -Sweet & Spicy BLTs
    -Fried Egg, Avocado & Tomato
    -5 Minute Cubans
    -Pesto Grilled Cheese

    Tuesday – sausage and peppers
    Wednesday – BBQ chix salad with leftovers
    Thursday – Adobo pork
    Friday – deli sandwiches
    Saturday – homemade pizza

    All served with fresh veggies/fruits from our CSA box! Yum!

  12. For some reason I had menu planning block this week and really struggled with it. Now I only hope I am excited to cook what is on the menu

    Sunday: Fried Chicken, mashed potatoes, and seasoned mustard greens

    Monday: Lunch – stuffed burgers with oven fries; Dinner – Pepsi BBQ Chicken, pasta salad and baked beans

    Tuesday: Marinated Grilled Chicken over angel hair pasta topped with Parma Rosa Sauce (leftover from last week), Ceaser salad and cheesy crescent rolls

    Wednesday: Beef Enchiladas and Spanish rice

    Thursday: Spicy Orange Chicken (Jane’s recipe) and fried rice

    Friday: Tater Tot Casserole (this is the only thing that I am not so sure about)

    Saturday: Reuben Sandwiches and homemade potato chips

    Well Monday is just another day at work for those of us in the UK but the weather is perfect for a grill. Happy July 4th to everyone in the US!

    Mon: Leftover risotto cake, salad, cherries
    Tues: Husband out with work, I get roast asparagus salad (yay!)
    Wed: Salad with goat’s cheese croutons and lardons
    Thurs: Jerk chicken and pineapple kebabs, rice salad
    Fri: Fish and chips
    Sat: BBQ (fingers crossed for sun)
    Sun: Dinner at mum’s

    Wednesday-Grilled 3-Cheese Sandwiches, Homemade French Fries and Fresh Fruit

    Thursday-Cheese and Sausage Stuffed Shells, Green Salad, Garlic Bread

    Friday-Grilled Steak Gyros, Rice Pilaf, Greek Salad

    Happy Fourth! We drove back late last night from my brother/sister-in-laws beach house to avoid the crazy traffic of today. Thankfully we also live near the ocean, so we’re headed to the water soon and then either some local fireworks or the Pops on TV.

    Monday- cookout w/neighbors. We’re bringing the desserts- homemade strawberry shortcake and the makings for s’mores..
    Tuesday- homemade margarita pizza (I’ve got some fresh mozzarella I need to use up) and salad
    Wednesday- grilled chicken (trying out a new asian spice rub), grilled bread and grilled veggies
    Thursday- grilled pork chops w/cilantro lime sauce and salad
    Friday- my sister is coming for a few days, so it’ll be vegetarian or fish
    Saturday- Grilled salmon. We are loving this recipe:
    Sunday- cookout at friends house. Once again, I am in charge of desserts- I’m thinking blueberry cobbler and oatmeal chocolate chip cookies w/cranberries.

    We are heading out for camp tuesday, so this is a bit of a diffrent menue for us. 🙂

    Monday the 4th Left over spagahtti (been trying to clean out the fridge for the last few days. :))

    Tuesday Grilled Rib eye steaks, Mac and cheese, and grapes

    Wednesday Grilled trout (or at least we hope. We will be fishing for dinner for the day:)), buttered and herb potatoes, watermellon

    Thursday grilled hot dogs, and chili, watermellon and grapes

    Friday BBQ Grilled chicken breast, and any leftover sides.

    Saturday Polish sausage and cabbage, carrots

    Sunday tangy pork chops, stewed apples, and not sure what else.

    Thursday–Tacos, chips & salsa
    Friday–Steaks on the grill, baked potatoes, corn on the cob

    We had a nice, low-key weekend. Made up some appetizers (um, goat cheese and honey bruschetta w/ apples is delicious!!!) and dessert, and headed to a friends to kick back for the 4th. She smoked chicken and ribs – and let me tell you, it was amazing. Only in Texas…

    Sun – Homemade chicken fried steak w/ mashed potatoes and gravy. YUM!
    Mon – Smoked chicken and ribs w/ homemade potato salad & macaroni salad. Awesome…
    Tue – Gumbo. It made about 2 gallons, so I’m forcing my “chicken smoker” friends to come over and help us put a dent in it. Gonna make some poblano cream cheese empanadas that I didn’t get to make yesterday (puff pastry was still frozen) to go with it.
    Wed – Chicken francese w/ linguini. Lemony goodness…
    Thu – Lexington-style grilled chicken w/ roasted potatoes & corn on the cob.
    Fri – The fiance is out of town, so I’m making BLTs!! (He only like the “B”)
    Sat – something low-key, maybe leftovers. I don’t want to cook for just one.

    After being at the lake house for 4 days, we have no food at home. I will be going to the store tomorrow, but for tonight I think I can scrounge something up from the pantry:

    Monday – We had sausage simmered with beer and onions and served on rolls. Lots of sides: coleslaw, pasta salad, watermelon, etc. and I even attempted (and succeeded at) this flag cake:
    Tuesday – pasta with tomato cream sauce
    Wednesday – eating out (first night of swimming lessons)
    Thursday – cobb salad
    Friday – BBQ at friends’ house
    Saturday – at a wedding

    Thu – hamburgers on grill, roasted potatoes, baked beans

    Sat – chicken fajitas
    Sun – squash extravaganza from the garden (got to cook this stuff up!)/salad

    Phew! Just got back from a long long weekend. Dinners are basically things I can throw together from the pantry:
    Wednesday: Quick whole wheat mac and cheese (adapted from Nigella Lawson’s recipe), roasted broccoli, fresh tomato salad
    Thursday: Quesadilla bar with homemade wheat tortillas, assorted meats and veggies for fillings, salsa, and guacamole
    Friday: Breakfast for dinner
    Saturday: Dinner at a friend’s!

    I’m going to be trying a fab frittata recipe I found this week – can’t wait to see what version you whip up.
