Week 333 Menu + Earth Box Update

Quick update on our new Earth Boxes. It’s been just two and a half weeks since I posted the photo with Anna below and look at how the tomato plants have grown! We just might have a tomato harvest his year and I am so happy! The other Earth Box I bought has carrots and lettuce planted and they are growing beautifully, too.

It’s our last week of school and I am so excited for summer! Granted, we have a crazy busy summer ahead of us, but at least we can let the kids sleep in in the morning and I don’t have to pack lunches!

MONDAY:
– Chicken Stir Fry
– Dumplings (from Costco)

TUESDAY:
Easy Peasy Bean Tacos
– Guacamole and chips

WEDNESDAY:
Moosewood Pasta Primavera

THURSDAY:
– Pizza night to celebrate the last day of school!

FRIDAY:
– Leftovers

SATURDAY:
– Take out

SUNDAY:
– Quiche (flavor TBD)
– Fresh fruit

    The plums on our one tree are turning purple and the local fruit stands have delicious cherries and peaches!

    Last week of chemo for me. I’m beyond thrilled, but still keeping dinner easy and kid friendly this week, and accepting help from my friends!

    Sunday – Hubby’s night to cook. Southwestern Quesadillas and watermelon.
    Monday – Enchiladas and dessert delivered by a friend.
    Tuesday – Another friend supplied dinner – it’ll be a surprise. I just hope the kids like it! 🙂
    Wednesday – Jerk chicken on the grill with pineapple black bean salsa, and zucchini.
    Thursday – Orange Chicken, fried rice and broccoli.
    Friday – Shrimp fajitas, with all the fixings.
    Saturday – TBD, hopefully we will be out and about!

    My first time posting! Hope this makes me accountable:

    Monday – Chipotle bean quesadillas, rice and corn

    Tuesday- crock pot beef casserole & mashed potato

    Wednesday – leftover casserole with rice

    Thursday – crumbed lamb cutlets, roast broccoli & cauliflower, Swiss chard and garlic bread

    Friday – vegie fried rice

    Saturday – home made pizza

  9. Love how well your tomatoes are doing. I wish ours were that big. We haven’t had enough sun so far to get the garden growing but I am still hopeful!
    Our menu:
    Monday: Kitchen Sink Pasta (I cook up whatever leftover veg we have and do a primavera with it)
    Tuesday: Moroccan Grilled Chicken, couscous, and grilled veg
    Wednesday: Salmon with greens
    Thursday: Lamb Curry, basmati rice, and homemade chapati
    Friday: homemade make-your-own pizzas
    Saturday: eat out to celebrate daughter’s ballet recital
    Sunday: Roast Chicken dinner

    We will use leftovers of pasta, chicken and curry for lunches this week too!

      I am making pulled pork today and so look forward to your pulled pork pizza recipe, we will have a lot of leftovers (a good thing).

      I live in California now but am originally from Chittenango and my family is still in CNY, so it’s nice to see a food blogger from back home.

    Wow, your tomatoes look great! I have six plants this year, I’m trying three tumbling varieties in hanging baskets that seem to be doing well.

    Mon: Spinach and ricotta calzones, salad
    Tue: Enchiladas, salad
    Wed: Ribs, new potatoes and corn on the cob
    Thur: Quiche, salad
    Fri: Homemade chicken nuggets and potato wedges, baked beans
    Sat: Potstickers (making a big batch for the freezer)

  19. I’m glad to see you all growing some of your own food. What a great way to learn about where it comes from. It has also made me more appreciative of what it takes to get all that food to my table.

    Fresh veggies over couscous (NEW RECIPE for me)

    I have one meal left unplanned, though it is for a day that I’m not sure if we are going to be at home or away. We’ll just have to take it as it comes that day.

  20. Oh I’m so jealous of your tomato plants! I have tried for years and have never been able to actually grow anything! Enjoy them! There is nothing like a homegrown tomato.

  26. We have an insane amount of nectarines from our tree that I have NO idea what to do with. Suggestions anyone??

    We’re going to Disneyland this week, first time in a few years, so the menu is not too organized. Here’s the plan:

    -Out with the ladies in my family for a (very) belated mother’s day celebration. Daddy made frozen pizza for the kids.
    -Beef Burritos with Costco unbaked tortillas, steamed carrots
    -Cheese Ravioli, Green Salad
    -Chicken in the crock pot, rice, steamed broccoli
    -Disneyland
    -Leftovers

    Little late….but still rolling around on my knee scooter for my broken foot. Five kids makes a scooter a must! Some of my garden looks that good, other parts are suffering broke-foot itis. I am the green thumb and not very mobile, so its really
    starting to suffer.

    Sun- Roast beef in my new ceramic coated dutch oven.( a broken foot gift), smashed taters, green beans and corn and rolls.

    Mon- Grilled hawaiian chicken sticks, rice, corn on the cob and skillet green beans.

    Tues.- Stuffed pork chops, brussel sprouts, cornbread and skillet apples.

    Wed- Mexican Shrimp tortilla soup, chips and salsa

    Thurs- Pizza pot pies and french bread

    Fri- Fish and Chips with Banoffi pie

    Sat- BBQ… BLT pasta salad, frog eyed salad, corn on the cob and baked beans

    Sun- Quiche….shrimp and crab quiche, taco quiche and quiche lorraine.
