Week 234 Menu

Our tomato plant is beginning its harvest! We’ve eaten a few and the flavor is, I don’t know, full and wonderful. Truly nothing beats a fresh, vine-ripened tomato. I’m planning to do a tomato plant post later this week, comparing my plant with my friend Natalee’s plants and talk about why they are so different. It’s kind of shocking how different they are, actually. But more on that later…

Menu time already? Unreal. This summer is flying by.

– Mac & Cheese for the girls, with lots of fresh, sauteed summer squash
– Hot dogs and Cracker Jack…Nate and I are going to a Giants game!

– Fajitas

– Chicken Caesar Salad with homemade croutons

– Cider BBQ Chicken (from Dream Dinners)
– Corn on the cob and fresh berries

– Nate and the girls fly off to Cape Cod, leaving me to my own devices for a week!Mushroom Soup from Dra
– Mushroom soup from Draegers

– I’m not planning anything…I’m just going to see what I feel like and go from there because, you know, I only have to cook for myself – woohoo!

    It is forecast to be in the 90s this week, so our menu is built around not spending a lot of time at the stove.

    Sunday- my niece’s first birthday party, I’m contributing my white bean dip and homemade pita chips
    Monday- grilled steak and tomato kabobs w/parsley sauce
    Tuesday- grilled steak fajitas w/leftover steak from Monday night
    Wednesday- grilled chicken, grilled bread, grilled veggies
    Thursday- Pasta salad
    Friday- grilled spicy shrimp w/cous cous
    Saturday- spending the day at the beach with friends, so we’ll probably play it by ear

    Each meal to be accompanied by fresh veggies from our local farm! I love summer produce.

    Btw, I hope your family has fun on the Cape. We go every August for vacation. We usually try to get there before August as well, but for some reason this year has been so busy I haven’t gotten there for any weekend trips yet.

      nate’s family has been going every summer for 20 years or so…this is the first time I’ll miss it since we’ve been married – and I will really miss it so much! the cape is magical. but at least nate and the girls will be able to enjoy it…hope you enjoy your cape trip, too! 🙂

    • We have a heat advisory this week, it was extended through Thursday!!! So I am trying to use my oven as little as possible this week. Dinners include: Venison gyros and salad; Crockpot Cauliflower Curry; Citrus Collards and Fish; Pasta and Greens; Rice and Beans with calabacitas; Grilled chicken with grilled potatoes and coleslaw; Meal at the county fair

    This week for dinner is: dinners are a little crazy: I’m vegan, hubby and the girls are not so I make every thing vegan and then add meat for them.

    Today (Sunday): crock pot vegan red beans and rice (will add smoke sausage for them later) Vegan cornbread

    Monday: Stir fry with CSA veggies (tofu for me) (chicken for hubby) Chicken and fries for the girls

    Tuesday: Burgers, Fries, Mac n Cheese (Leftover stir fry for me)

    Wednesday: Tacos and Black bean and Corn Salsa (Chicken tacos for hubby and girls: Lentil Tacos for me) Spanish Rice

    Thursday: Breakfast for Dinner: Eggs, Bacon for hubby and the girls, Southwest Tofu Scramble for me Vegan Pancakes for all

    Going grocery shopping on Friday so this is the plan so far.

    Has anyone ever tried trader joes? are their prices fair? what are must haves? must avoids?

    Monday: Mac & Cheese Muffins (idea from Vanessa!)
    Tuesday: Yorkshire Pudding (TWFD) with cranberry sauce
    Wednesday: Leftovers
    Thursday: Spicy Pork Tenderloin on the grill with veggies
    Friday: Leftover pork with Schezuan sauce with rice and veggies
    Saturday: Out.

  5. Our freezer died this week (waaaaahhhhhh!) so our meals are going to be cheap and easy (since we had to toss everything). Plus, it’s our anniversary and our little one’s birthday this week, so everything is going to be crazy!

    We got some tomatoes too. Woohoo!!!

    Monday-Black Bean Enchiladas with Green Salad
    Tuesday-Steak Salad with French Bread
    Wednesday-Philly Cheesesteak Sandwiches, Chips, Green Salad

    Friday-Pasta with Homemade Tomato Sauce
    Sunday-Little One’s Birthday!!!

    Recipe for Black Beans: Just roll them into Tortillas with cheese, cover with sauce and bake!

    Hi Jane,
    It’s so hot here in Istanbul when it comes to dinner we’re having a hard time to eat light:)
    So here’s my dinner menu for the week:
    Monday: Fried Turkish meat balls and fried aubergine/green peppers with garlic tomato sauce and yoghurt – With cold beer:)
    Tuesday: Squash pie with green salad and peach Melba for dessert
    Wednesday: It’s going to be a movie night so we will have 3 different styles of homemade pizza and lot’s of beer:)
    Thursday: Oven baked sea bass – rocket salad, a cold bottle of Local Chardonnay and for dessert homemade peach/yogurt ice cream
    Friday: Meeting with friends at Trattoria Leon at neighborhood
    Saturday: BBQ night – marinated lamb shish kebab and chicken wings, potato salad, pinto beans cooked with olive oil (cold side food), Raki (Turkish ouzo) for drink and peach cobbler with ice cream
    Sunday: we always have a long Turkish breakfast/brunch at one of the coffees by the Bosphorus so for night probably we cook something light like seafood pasta again with Chardonnay:)

    It’s a crazy week for us too. Company will be here for most of the week so more desserts and cocktails than usual are included!

    Sunday- Steak Baguettes with Pesto Mayo (Cooking Light Magazine August 2011) and Sweet Potato Fries
    Monday- I liked the idea posted last week for something out of the freezer.
    Tuesday- Company arrives so we will have Chicken Fajitas, Spanish Rice, Guacamole and Chips and Margarita Cupcakes (Annie’s Eats)
    Wednesday- Chicken Salad Sandwiches, Grapes, Chips and Watermelon Bellinis
    Thursday- Grilled Pork Steaks with Mango Salsa and Grilled Corn on the Cob
    Friday- Summer Veggie Pizza
    Saturday- TBD…probably will cook up something with my cousin

  10. Summer classes are kicking my butt, but I worked ahead this weekend to free up a little more weeknight time. Oven is still out too. It’s weird not having an oven! The simplest things, like frozen french fries, are out of my reach right now. I’ve planned what’s below, the rest I’ll fill in with grilled cheese and soup, or frozen burritos. So, here goes it:

    Turkey Burgers with Black Eyed Pea Salad
    Taco Salads
    Couscous with Black Beans, Corn and Mushrooms

  11. This week is easy, since I am not cooking on at least two of those days, and a few of the dishes like the Buffalo Chicken Salad and Cheesy Lasagna will be prepared at the beginning of the week.

    Sunday: Slow Cooked Pot Roast,mashed red potatoes and creamed corn.

    Monday: Chicken and waffles with roasted asparagus

    Tuesday: Parmesan Crusted Pork Chops, smashed fried potatoes, and caprese salad

    Wednesday: Buffalo Chicken Salad

    Thursday: Cheesy Lasagna, salad and garlic bread


    Saturday: TBD

    I can’t believe that when I am home for the summer and have time to plan a menu I never get it done. I will give it a shot this week.

  21. I hope to get some sleep this week. It’s really hard to keep up with my menu’s and resist the urge to eat out with a 7 month old that refuses to sleep!! I’m doing it, but most days, I’m cross-eyed.

    Monday – Teriyaki Chicken Stir fry
    Tuesday – Homemade Pepperoni Pizza Pockets & Spinach Salad
    Wednesday – Pancakes, Eggs, Bacon & Fruit

    it’s been SO long since i’ve posted a menu. i actually made my meal plans on a sunday, so here goes:

    –portobello mushroom ravioli, roasted broccoli

    –thai grilled chicken and sweet chili sauce, rice, garlicky eggplant and chard

    Ooh those tomatoes look fab! It’s my husband’s 30th this week so I’m trying to spoil him a bit.

    Mon: Pasta with garlic and zucchini, salad, cantaloup
    Tue: Chicken stir-fry, almond jasmine rice
    Wed: Spaghetti with fresh tomato sauce, green salad
    Thurs: Hubby’s bday! Dry rubbed ribs, fries, salad and apple pie.
    Fri: Jambalaya
    Sat: BBQ for all our friends, lots of meat, roast potatoes, salads, lime and ginger cheesecake, chocolate marble cake and elderflower champagne.
    Sun: Nibbling at leftovers if I can face eating!

    It’s a hot week in MN- heat index of 110 and high humidity yesterday the outside of my windows looked like my mirrors after I shower… crazy). I am avoiding the oven as much as possible to help out the AC!

    Sunday: Bowtie pasta with pesto, garlic bread, salad
    Monday: Breakfast for Dinner. CSA eggs, english muffins, fruit
    Tuesday: CSA pick-up- depending on what I get the whole week could be changed….For now, grilled chicken, mashed potatoes, CSA vegie
    Wednesday: Hubby cooks… or not- Date night- free lettuce wraps at PF Changs… Kids will get pizza or stovetop mac and cheese.
    Thursday: Hubby cooks. Red beans and rice, CSA salad (I’m hoping for some greens again), bread
    Friday: Chicken stir fry with CSA vegies, rice (or salmon and rice, CSA vegies….) Depends on what the vegies are and what would be better…. I have both meats in the freezer so it should be an easy swap!
    Saturday: Dad’s birthday? TBD….

    I absolutely LOVE fresh tomatoes, but especially cherry tomatoes. It takes me back to when I was about 4 years old and my “granny” watched me. She had a beautiful garden, and would pick her cherry tomatoes and set them on the window sill to finish ripening. I would sneak into the kitchen chair by the window sill, quietly place one on my tongue, and bite into it – letting it pop! A very special loving memory of Granny…
