Another week, another menu! Time is flying by far too quickly!
The annual blogger party SocialLuxe Lounge that I co-host each summer is in less than two weeks, which means I’m pretty much a crazy person right now. I have so much to do this week it’s giving me heart palpitations (literally). Just one day at a time, right? I’m not entirely sure when I’m going to make dinner, but I’m getting a plan down anyway. Last week was busy and the plan helped tremendously. I actually followed last week’s menu to a T!
MONDAY:

– Definitely breakfast for dinner…I will be packing and getting ready for our big month-long trip to the east coast!

I’m looking forward to 4 days of vacation with the grandparents in Ohio! But, I could do without the drama of luggage, car seats, and layovers with our little people! 🙂 Last week I felt so “with it” following the plan and multi-purposing our leftovers into “encore performances.” I’m hoping the momentum/creativity carries into this week! 😉

We love Pizza Port too. Especially their garlic bread. Mmmmmmm. Although, the family style tables make my inner germophobe freak out a little, so we prefer take out 🙂
This week we’re leaving for…wait for it…our first vacation in 6 years. So, the first time our kids will spend a night away from their beds, and the first time my husband will have taken more than 2 consecutive days off since 2007! So so so excited. Dinner will be really boring; just trying to clean out the fridge and freezer before we go.

Would you mind sharing your recipe for zucchini pizza casserole? That sounds so good good and my family would love it!
Naomi hope you enjoy this as much as we do. Got it off of Food.com a couple years ago and it really comes in handy this time of year.
Zucchini Pizza Casserole
Serves 6
4 cups shredded unpeeled zucchini
1/2 teaspoon salt
2 eggs
1/2 cup grated parmesan cheese
2 cups shredded mozzarella cheese, divided
1 cup shredded cheddar cheese, divided
1 lb ground beef
1/2 cup chopped onion
1 (15 oz) can Italian tomato sauce
1 medium green pepper, chopped
Place zucchini in strainer; sprinkle with salt. Let stand 10 minutes. Squeeze out moisture.
Combine zucchini with the eggs, Parmesan and half of the mozzarella and cheddar cheeses. Press into greased 13 X 9 inch baking dish.
Bake uncovered at 400 degrees for 20 minutes.
Cook ground beef and onion over medium heat until meat is no longer pink; drain. Add tomato sauce; spoon over zucchini mixture.
Sprinkle with remaining cheeses; add green pepper. Bake 20 minutes longer or until heated through.
This week has a lot of stand bys — maybe creativity will strike again next week? ;o)

Tuesday: We’re getting a quarter of an organic, grass-fed cow today so I’m sure we’re having steak! With a radish-corn-avocado salad and fresh tortillas.
Wednesday: Chicken milanese over a corn-tomato-potato-arugula salad.
Thursday: Perhaps take-out: Either farmer’s market BBQ or Chipotle.
Friday: Two of the kids are making dinner TBD. I’m pretty sure its going to be tacos (both of their fav).

Tu – Maui sliders on sweet buns. (We loosely follow this recipe, but use fresh pineapple and King’s of Franz Hawaiian buns.)
W – Thai-marinated pork kebabs on the grill with grilled peppers and onions. (Already done! I made this for my OAMC cooking club.)

(which was a good make ahead choice since we had to eat it cold because the power was out due to the HEAT)
Tues – caprese pizza (I cried a little when turning on the oven, but it was worth it)
