Week 338 Menu

Another week, another menu! Time is flying by far too quickly!


The annual blogger party SocialLuxe Lounge that I co-host each summer is in less than two weeks, which means I’m pretty much a crazy person right now. I have so much to do this week it’s giving me heart palpitations (literally). Just one day at a time, right? I’m not entirely sure when I’m going to make dinner, but I’m getting a plan down anyway. Last week was busy and the plan helped tremendously. I actually followed last week’s menu to a T!

– Mac and Cheese (the freezer kind from Trader Joe’s)
– Salad and/or fresh fruit

– Chicken tenders
– Sautéed zucchini

Beef Stew

– Leftovers

Pizza Port (We are so excited to have a Pizza Port just minutes from our new house!)

– Hamburgers
– Corn on the cob and fruit

– Definitely breakfast for dinner…I will be packing and getting ready for our big month-long trip to the east coast!

    Sunday-Saturday: Kitchen closed. On vacation. A lot of dining out and reviews on the website.

  3. I’m looking forward to 4 days of vacation with the grandparents in Ohio! But, I could do without the drama of luggage, car seats, and layovers with our little people! 🙂 Last week I felt so “with it” following the plan and multi-purposing our leftovers into “encore performances.” I’m hoping the momentum/creativity carries into this week! 😉

    Sunday: Grilled chicken breast with asparagus and Harissa (Rachael Ray recipe)

    Monday: Homemade lasagna with green salad

    Tuesday: Baked sweet potato in the slow cooker topped with cranberry, BBQ chutney

    Wednesday: Yorkshire pudding with cranberry sauce

    Thursday: Meatballs and marinara with roasted butternut squash

    Friday: Leftovers

    Saturday: Traveling to Ohio to visit grandparents (baby’s first plane ride!)

  7. We love Pizza Port too. Especially their garlic bread. Mmmmmmm. Although, the family style tables make my inner germophobe freak out a little, so we prefer take out 🙂

    This week we’re leaving for…wait for it…our first vacation in 6 years. So, the first time our kids will spend a night away from their beds, and the first time my husband will have taken more than 2 consecutive days off since 2007! So so so excited. Dinner will be really boring; just trying to clean out the fridge and freezer before we go.

    Sunday and Monday-Spaghetti and Meatballs (I froze a batch of meatballs last time I made them), garlic toast, green beans

    Tuesday-Smoothies and grilled cheese

    Wednesday-Turkey bacon avocado sandwiches, fruit salad

    Thursday-Slow cooker chicken tacos

    Friday-ready to head out!

    Mon: Bacon and corn hash, tomato salad
    Tue: Pizza and salad
    Wed: BBQ lamb harissa koftas, sweet potatoes with chipotle butter, veggie kebabs
    Thur: Pasta with whatever veg I pick from the allotment
    Fri: Pollock, fennel and tomato parcels with French fries
    Sat: Husband’s birthday BBQ, lime and ginger cheesecake
    Sun: Quiche, new potatoes, salad

    Monday – Salmon, crockpot honey lentils
    Tuesday – Garden pasta bake, salad
    Wednesday -Stuffed zucchini boats
    Thursday – Chicken parm, salad
    Friday – Zucchini pizza casserole
    Saturday – Leftovers

      Would you mind sharing your recipe for zucchini pizza casserole? That sounds so good good and my family would love it!

      Naomi hope you enjoy this as much as we do. Got it off of a couple years ago and it really comes in handy this time of year.

      Zucchini Pizza Casserole
      Serves 6

      4 cups shredded unpeeled zucchini
      1/2 teaspoon salt
      2 eggs
      1/2 cup grated parmesan cheese
      2 cups shredded mozzarella cheese, divided
      1 cup shredded cheddar cheese, divided
      1 lb ground beef
      1/2 cup chopped onion
      1 (15 oz) can Italian tomato sauce
      1 medium green pepper, chopped

      Place zucchini in strainer; sprinkle with salt. Let stand 10 minutes. Squeeze out moisture.
      Combine zucchini with the eggs, Parmesan and half of the mozzarella and cheddar cheeses. Press into greased 13 X 9 inch baking dish.
      Bake uncovered at 400 degrees for 20 minutes.
      Cook ground beef and onion over medium heat until meat is no longer pink; drain. Add tomato sauce; spoon over zucchini mixture.
      Sprinkle with remaining cheeses; add green pepper. Bake 20 minutes longer or until heated through.

    Oh my word – I don’t know how you co-host such a huge party every year! I can barely put together a child’s birthday party… I envy your abilities! 😉

    My menu is in no particular order, as usual:

    Homemade pancakes and syrup
    Chicken & Rice
    Crockpot Polynesian Chicken
    Crockpot BBQ Chicken
    Crockpot Chicken Tortilla
    Taco Salad
    Homemade Potato Soup
    Stuffed Shells (your recipe) – one for us and taking another pan to a friend in need
    Breakfast Burritos – potatoes, eggs, sausage
    Eat Out one time

    Between leftovers, I’m hoping this will last us for 2 weeks, or at least 12-13 nights.

    Good luck with your planning! I get heart palpitations real easy when it comes to this stuff, so you’re not alone. I’m sure it will turn out AWESOME!!! 🙂

    Mon- Shrimp and Grits, french bread and chocolate cake

    Tues- Homemade Calzones and salad

    Wed- Caprese pasta( my garden is putting out some cherry tomatoes and basil) , The PW ” The bread in his words”

    Thurs- Fajitas

    Fri- Steak Friday, baked potatoes, broccoli and salad for the carnivores

    Sat- BBQ

    Sun- Breakfast for dinner

    Tonight: Fried Pork Chops, Apple Bacon Coleslaw, sautéed yellow squash and zucchini, cheddar garlic rolls
    Monday: Enchilada Casserole and Spanish rice
    Tuesday: Smoothered pork chops, rice and fried cabbage
    Wednesday: DanDan noodles and yellow squash in some form
    Thursday: Leftovers or sandwiches
    Friday: Local Collegiate summer league game
    Saturday: Hot dogs/sausages on the grill with chips
    Sunday: Fried catfish, white beans and rice and a salad with pecan, strawberries and balsamic vinaigrette

    Sunday: BBQ bratwurst, homemade french fries, PW caprese salad
    Monday: Pasta and meatballs, bagged ceaser salad, feeling lazy.
    Tuesday: Chicken cooked in Trader Joe’s red curry sauce, Naan bread, couscous, some veggie, or fruit.
    Wednesday: Martha Steward pressed salami and provolone sandwich, salami was on sale, may as well try it, fresh fruit
    Thur-Sun…out on the Pacific Ocean, sailing to Santa Cruz Island with the hubster and another family. Fri and Sat we are each hosting a happy hour, I think that will be dinner, LOL.

    Tuesday: tacos, watermelon

    Wednesday: Hubby cooks. BBQ chicken thighs, corn on the cob, mashed potatoes

    Thursday: Hubby cooks. Steak sandwiches with chimichurri sauce, chips, fruit salad

    Friday: pizza night

    Saturday: TBD- shrimp?

    Your vacation sounds so lovely! Have a great time.

    Sunday: Went to BBQ going-away party for some our friends moving to North Carolina.

    Monday: Tarragon shrimp rolls (finally using some of the massive garden tarragon plant!) with a quinoa-summer veggie salad with a herb vinegarette.

    Tuesday: We’re getting a quarter of an organic, grass-fed cow today so I’m sure we’re having steak! With a radish-corn-avocado salad and fresh tortillas.

    Wednesday: Chicken milanese over a corn-tomato-potato-arugula salad.

    Thursday: Perhaps take-out: Either farmer’s market BBQ or Chipotle.

    Friday: Two of the kids are making dinner TBD. I’m pretty sure its going to be tacos (both of their fav).

    Saturday: Spicy salmon over cheddar grits using local corn grits.

    Monday – Buffalo-style grilled salmon with arugula salad

    Tuesday – Summer Veggie Chili with cornbread

    Wednesday – Hawaiian pork chops with honey and ponzu roasted carrots

    Thursday – Mediterranean salad with grilled chicken

    Friday – Grilled beer brats with grilled zucchini

    Saturday – Chicken fajitas

    Sunday – Steak with roasted Ranch tomatoes and grilled avocado

  22. We are still grilling a ton. It’s sweltering in Seattle with no AC!

    M – Grilled chicken and nectarine caprese salad (We’ve seriously had this salad three days in a row. I can’t get enough!)

    Tu – Maui sliders on sweet buns. (We loosely follow this recipe, but use fresh pineapple and King’s of Franz Hawaiian buns.)

    W – Thai-marinated pork kebabs on the grill with grilled peppers and onions. (Already done! I made this for my OAMC cooking club.)

    Th – Leftovers / fend for yourself. Busy night.

    F – Grilled pizzas

    Sa – Dinner with friends

    Su – BBQ Greek Turkey Burgers with Greek Yogurt Sauce and Pickled Onions

    Wednesday: sweet and sour turkey meatballs , steamed rice, veggies

    Saturday: baked potato soup (maybe I’ll “bake” the potatoes in my crockpot), cornbread muffins

    Sunday- Burgers, possible Gyro-style

    I’m planning to try blackberry jam at one point this week. There turned out to be a lot of wild blackberry bushes near my parent’s house, so I brought some home.

    Awww bummer… my menu didn’t post for some reason! Too lazy to repost it so I will just say that I get heart palpitations planning a child’s birthday party so I’m impressed you are planning something so much bigger. Based on your past posts about party planning though, I’m sure this will be just as awesome! Good Luck! 🙂

    I’m late to the menu party this week.
    since it’s been hotter than Hades here….

    Sat – burgers on the grill, corn on the cob
    Sun – nothing. it was THAT hot.
    Mon – tortelloni w/ sugar snap peas & summer squash
    (which was a good make ahead choice since we had to eat it cold because the power was out due to the HEAT)
    Tues – caprese pizza (I cried a little when turning on the oven, but it was worth it)
    Wed – avocado chicken salad pita pockets, fruit salad(make ahead, eat cold!)
    Thurs – black bean burritos (make ahead)
    Fri – left over burritos or maybe just freeze pops. 100 degrees expected, with 99% humidity. I refuse to cook anything.
