Week 343 Menu

We are home! I have been traveling with the kids since July 22 and I am wiped out! We just walked in the door and I can finally get my menu planned for the week. I’m glad I didn’t have time to plan this morning before our flight because I came home to a kitchen full of food, thanks to my wonderful friend Emily. Life is good!

I need to give a shout out to Toyota before we get to the menu. They graciously provided our family with a Toyota Highlander to use for our entire east coast trip. We loved the Highlander and drove it from New Jersey to New York City to Boston to New Hampshire to Cape Cod. The car drove like a dream (a little too easy to speed, but no tickets!), can fit 7 people (which came in handy while visiting family), and I loved the radio/USB/navigation system. The system worked really well with the various apps I listen to on my phone (This American Life, Spotify, etc) and I loved the touch screen. Also, we discovered on the second-to-last day of the trip that you don’t have to use the keyfob to unlock the car – if the key is nearby, you just push a little button on the handle and the car magically unlocks. Wish I had figured that out a month ago! You can also get the Highlander as a hybrid, which I think is great. Anyway, thank you, Toyota!

    Monday night – pasta, with rotisserie chicken, tomato sauce
    Tuesday – hubby’s traveling, dinner out en route to the airport
    Wednesday – meatballs, green beans, tater tots
    Thursday – turkey taco salad
    Friday – steaks on the grill, mashed potatoes, roasted sprouts
    Saturday – maple balsamic chicken, broccoli, cous cous
    Sunday – TBD

    Wednesday- (Lunch)BLT; Avocado Soup
    Thursday- Mac & Cheese (Not sure if I will be doing this. It is going to be in the upper 80’s)
    Friday- Grilled Pork Chops
    Saturday- Pizza
    Sunday- Stir-fry something

    A couple of the menus are for Lunches. Both roomies are working the evening hours, so I will be having something simple like leftovers or sandwiches for dinner.

    Mon: Grilled veg, pesto and goat’s cheese quesadillas with tomato salad
    Tue: Lamb tikka masala, green rice
    Wed: Pasta with ratatouille sauce, green salad
    Thur: Twice baked potatoes, sausages, baked beans
    Fri: Fish and chips en route to North Devon
    Sat-Mon: Bank holiday weekend! Surfing, walking and dinners at the local pub.

    Sunday – low country boil kebabs

      Interesting…. I have had low country boil, but not on a kebob. Do share if you would?

    • Low Country Boil Kebabs
      1/2 pound baby red potatoes
      2 ears of corn, cut into 1″ slices
      1/2 pound cooked smoked sausage, sliced thick
      1/2 pound large shrimp, peeled and deveined
      4 tablespoons melted butter
      2 teaspoons Old Bay seasoning
      2 lemons, quartered (optional)
      1. Boil potatoes in salted water for about 1o minutes or until just tender. Drain and cool slightly. ( you don’t want them to be mushy, just cooked through)
      2. Thread skewers with potatoes, shrimp, corn and sausage.
      3. Combine melted butter and Old Bay Seasoning. Brush onto skewers. 4.Grill on medium high for about 5-8 minutes or until shrimp is cooked and corn is slightly roasted.
      5.Serve immediately.
      * you can sprinkle the kebabs with lemon juice after they are cooked through . (optional)

    Funny how we look forward to vacation and then are so glad to be back home. We will be at the beach in 2 weeks. πŸ™‚ Glad to hear you all had a great time!

    Tuesday – Crab patties, corn on the cob
    Wednesday – Stuffed peppers, mashed potatoes, carrots
    Thursday – Pizza and salad

    Saturday – Great nephews birthday party so we’ll see whats on the menu when we get there

    We took our two daughters to college this weekend (one for the first time, sob). My husband is traveling all week so it’s just my son and me.

    Monday: TBD, his last day before senior year starts so I think my son will be with his friends
    Tuesday: Out for sushi
    Wednesday: Grilled cheeseburgers
    Thursday: Stir fry with chicken and veggies
    Friday: Chicken fajitas
    Saturday: I’m going out to celebrate a couple of friends birthdays

    I don’t plan for a specific day; just plan the meals and see what I feel like/have time to make each day.

    I have not done well with my menu planning towards the end of the summer. Now that school is starting back and we are in a regular routine, I am ready to kick back into gear! Here’s our first real menu for several weeks:

    Day 1:
    Chicken Burgers with Gouda & Caramelized Onions

    Day 2:
    Jamaican Meat Pies
    Couscous Salad

    Day 3:
    Meatball Hoagies

    Day 4:
    Jerked Pork with Caribbean Salsa
    Fresh Fruit

    Day 5
    Korean Fried Chicken
    Fried Rice

    Day 6:
    Handmade Pizza

    Well, we were away for the weekend on a mini-vacation, so I opted to skip the grocery store this week. Thankfully we have a bag of fresh veg’s from our CSA:

    Sun – baked eggplant with fresh tomato sauce
    Rest of the week – something from the freezer. It’s a good excuse to clear out some stuff before stockpiling for the fall/winter.

    Monday: Steak tacos with homemade tortillas (I’m hooked!)
    Tuesday: Philly cheese steaks in a green pepper bowl
    Wednesday: Pumpkin pancake cupcakes and smoothies
    Thursday: Pasta with spinach pesto
    Friday: Leftovers
    Saturday: Out

    Welcome back! We also just returned from vacation (I miss the Cape already!).

    Monday: Burrito casserole w/rice and salad
    Tuesday: Salad w/grilled chicken
    Wednesday: Grilled chicken lime burgers (Trader Joe’s), sweet potato fries and grilled veggies
    Thursday: shredded chicken sandwiches and salad
    Friday: take out
    Saturday: something on the grill and whatever looks good at the farmers’ market.

    PS: We’re still adjusting to life as new parents who work full time, but things have gotten a better. Thanks again for all the tips I received.

    Hi….i bet you are glad to be home! Here is my gluten free/lower carb and sugar meal list
    Sunday – Hot dogs & coleslaw (finally found good nitrate free no crazy ingredient hot dogs!)
    Monday – Leftover hot dogs & zuchinni fritters (am i 10? 2 days of hot dogs in a row πŸ™‚ )
    Tuesday – Portobello burger w roasted broccoli
    Wednesday – Grilled chicken caesar salad
    Thursday – Open faced grilled cheese w apple & veggies
    Friday – Wine/Cheese night at home
    Saturday – Mexican rubbed flank steak & mashed cauliflower

    Sounds like a great trip!!
    Sunday: Tri tip, baked potatoes, sauteed zuchinni smothered in bread crumbs and parmesan, just like mom used to make…my comfort food.

    Tuesday: no hubby, homemade pizza for the boys
    Wed: leftover tri tip, fried potatoes veggie
    Thursday: Friends visiting, taco bar out back
    Friday: hmmm, don’t know what the family is having but my friends and I are getting together for a dutch oven dinner, we are all bringing different dutch oven recipes to try.
    saturday…oh, I guess I better think about that, last night with hubby here before he sails to Catalina for the week

    I got back early Tuesday morning from taking my oldest daughter up to college. So sad, I missed her as soon as my husband was driving away. But we had to rush back, because the first day of school for my other two was Wednesday. So I am late in posting my menu, nevertheless here it is – minus one mouth to feed. πŸ™
    Mon – Cafe Rio with my husband and College daughter
    Tues – Beef Stroganoff & Rice, Biscuits, Salad
    Wed – Spaghetti & Meatballs, Breadsticks, Salad
    Thurs – Orange Chicken, Rice, green beans, Smoothies for dessert
    Fri – Eating out to celebrate the start of a new school year. Both of my kids that are still with us are in High School now!
    Sat – BBQ & Pool Party – still warm here in So Cal. Cheeseburgers, Potato Salad
    Sun – Ham, Squash & Rice Casserole, Salad, Lemon Meringue Pie for dessert
