Week 351 Menu

Happy Sunday!

Well, apparently our presence was not a lucky charm for Stanford. Darnit! But our super quick trip to Utah was still a blast! We are on the road headed back to San Diego and hoping the kids survive a day of driving. I am going out of town again this week for a business trip, so I’m pretty much useless Β when it comes to meal planning. I’m in survival mode!

MONDAY:
– Lasagna (from the freezer)

TUESDAY:
Sweet potato and black bean burritos (from the freezer)

WEDNESDAY:
– Chicken tenders (from the freezer)
– Veggie

THURSDAY:
– Leftovers

FRIDAY:
– Take out

SATURDAY:
– Breakfast for dinner or takeout

SUNDAY:
– Chicken Piccata
– Mashed potatoes and a veggie

    Sun: Chicken pizzaiola with mafaldine pasta, salad
    Mon: Roasted honey brined turkey breast, stuffing, carrots
    Tue: Tomato soup, salad, pears
    Wed: Rice & beans, apples
    Thu: Pierogies, sauerkraut and kielbasa, green beans
    Fri: Meatloaf, mashed butternut squash, mixed veggies
    Sat: Leftovers

  6. We seem to be very grill-happy this week! Have to take advantage of this awesome, Florida fall weather!

    Sunday: Steaks on the grill with green bean fries
    Monday: Hotdogs on the grill and spicy/garlicky sautéed collard greens
    Tuesday: Grilled chicken with mashed potatoes and salad
    Wednesday: Pumpkin pancakes – in the oven, not on the griddle
    Thursday: Orange beef over brown rice
    Friday: Crispy chicken thighs with braised red potatoes (ATK method) and roasted brussel sprouts
    Saturday: Out

    • I’m intrigued, what are green bean fries?

    • Tell me about oven pancakes please!

    • Green Bean Fries:

      1/2 lb green beans, washed and trimmed
      1 c breadcrumbs
      1/2 c flour
      2 eggs
      2 T water

      1. Preheat oven to 400 degrees.
      2. Set up a breading station: flour in one bowl, eggs and water in another, and breadcrumbs in a Ziploc bag.
      3. Cover beans in flour (shake off excess). Roll in egg wash, then toss in the breadcrumb bag. Shake up bag to coat beans.
      4. Lay out fries on a wire rack over a baking sheet. Bake for 20 minutes or until crispy and golden brown.

    • Oven pancakes: all the pancake-y goodness w/out slaving over a griddle! I use Jane’s recipe for pumpkin pancakes (no matter if it’s “pumpkin season” or not!!)

      3c buttermilk pancake mix
      2c cold water
      2/3c canned pumpkin
      2 tsp ground cinnamon
      1 tsp ground ginger
      1 tsp ground nutmeg
      1/2 tsp ground cardamom

      Preheat oven to 375.
      Whisk up and pour into oiled muffin tin (fill up 3/4).
      Bake for 15 minutes (until set).

      Makes 16-20 standard muffins (AKA 15 3-4″ pancakes according to Jane)

      We’ve also poured it into an oiled 9×13″, and cooked for 25-30min at 400 with pretty good results. But, we have little kids and faster is better in our house. πŸ™‚

      Little oven pumpkin pancakes sounds awesome! I have 5 kiddos and that would work so well in my house- zoo. πŸ™‚

    Tuesday: Ben fends for himself while I have dinner with a friend πŸ™‚
    Wednesday: garlicky spaghetti squash w/ pumpkin chicken meatballs
    Thursday: frittata and roasted potatoes
    Friday: dinner out
    Saturday: eating whatever I want after running my 4th marathon!
    Sunday: leftovers etc.

    Jane The sweet potato and black bean burrittos when you freeze them do you make the slaw the day you eat them or can you freeze it as well. We love those burritos at my house will be making them this week.

    Thurs- White chicken and spinach lasagna roll-ups, salad and garlic bread

    Fri- Mexican fiesta…

    Banana pudding, Ooey Gooey, Apple Upside down cake

    Sunday – Broc Cheese Soup – thickened w arrowroot and WOW did it thicken !
    Monday – Burgers on Portabellos instead of buns

    Wednesday – Pork Tenderloin & Mashed Cauliflower
    Thursday – Apple Brie Quesadillas
    Friday – Leftover Pork or Almond Flour Blueberry Pancakes
    Saturday – Traveling to Nashville – Wish a Gluten Free Girl good luck….traveling is always an “experience”

    Thurs – grilled chicken, roasted cherry tomatoes & eggplant over pasta

    Sunday-out to Mexican food. I had taquitos and guac. Mmmmm.

    Monday-Mushroom Burgundy Stew with Biscuits

    Tuesday-Spaghetti Bolognese with French Bread

    Wednesday-nephew’s birthday get-together

    Thursday-Crockpot Refried Beans, Tortillas, homemade guacamole

    Friday-Father-in-law’s birthday dinner

    Saturday-Leftovers
