Week 354 Menu

I just spent the morning making holiday-themed biscotti. And, no, it’s not because I am super prepared and excited for the holidays to come. It’s because I’ll be participating in Handmade Holidays with a group of lovely bloggers this month. In fact, my post will go up tomorrow, so stay tuned!

Last week was INSANE and it was totally Halloween’s fault. While it was all really fun, I am glad it’s over and hopefully this week will be a little calmer.

Stefania’s Braised Chicken
– Roasted butternut squash

Cilantro Sour Cream Enchiladas

– Linguine with cauliflower and brown butter (from Everyday Food: Fresh Flavor Fast – didn’t get to that one last week)
– Salad and crusty bread

    Mon – Taking my dad out for his birthday – Made him a Maple Birthday Cake 🙂
    Tues – Chicken Enchiladas
    Wed – Mostaccioli (Gramma’s recipe), Broccoli, Salad, Italian Bread
    Thurs – BBQ Meatloaf, Roast Potatoes, Green Beans, Cornbread
    Fri – Italian Sausages w/Skillet potatoes & fresh green beans
    Sat – Gone all day at a Marching Band competition – Eat out!
    Sun – Spaghetti Pie, Garlic Bread, Italian Green Beans

  2. Last Sunday’s bean soup was a disappointment but the French Apple Cake and Katherine Hepburn Brownies were both delightful.

    Sunday -making pizza
    Monday- steak, baked potato , roasted Brussels sprouts and salad
    Tuesday – I’ll be at the polls all day(running for local office!). Please vote! Family is coming at dinner time to tailgate dinner in the parking lot!
    Wednesday – salmon with Friesland roasted asparagus
    Thursday – spaghetti with sausage and salad
    Friday – out
    Saturday – leftovers

    Monday- enchilladas Colorado, with a homemade sauce made from dried chiles from New Mexico and Veggie succotash on the side.

    Tuesday- fried rice with asian marinated beef and sesame brocolli

    Wed- leftovers!

    Thursday- Jamie Oliver’s famous chicken poached in milk with mashed potatoes and roasted butternut squash

    Friday- pizza??

    Saturday- Kelsey Nixon’s chicken cacciatore (new recipe) over pasta and goat cheese,apple, autumn salad

    Tues: Salmon with roasted veggies
    Wed: Leftovers
    Thur: Chicken enchiladas (with leftover Sun chicken)
    Fri: Out with friends
    Sat: Pizza? Not sure yet

    Mon – albondigas and calabacitas
    Tues – breakfast for dinner
    Wed – tomato soup and grilled cheese
    Thurs – BBQ flank streak
    Fri – chicken noodle soup
    Sat – out

    T: Chicken corn chowder (using leftover chicken for stock & meat), crusty rolls
    F: Out to celebrate friends birthday
    S: Helping another friend stock freezers with homemade quiches for upcoming holiday overnite guests. Probably just order pizza.

      it’s always funny when cooking food means you have to eat out. thanksgiving week is like that for me every year!

    Sunday: Roast pork, olive oil roasted potatoes, swiss chard from the garden Nantucke Pie for dessert

    Monday: Jambalaya with kielbasa, beets, trying to finish up the last of the beets from the garden!
    Tuesday: Busy day and night, already made my Cannelline Minestrone cursty bread
    I do these easier, I use canned beans and veggie broth and couldn’t find dried porcini mushrooms so I added sliced mushrooms to the onion, garlic, celery mixture. Notice I made this since one of the ingredients is swish chard….ha ha, using it up.

    Wednesday: Leftover pork and parmesan potatoes, turnips, you guessed it, from that garden my husband keeps tending.

    Thursday: Pad Thai, my 20 year old wants to learn to make it.
    Fri-Mon NO family, guys backpacking trip, I think I will eat popcorn for dinner!

    Dinners this week:
    Sunday – Homemade pizzas. Cheese and pepperoni for the kiddos and a yummy veggie combo for the adults.
    Monday – Creamy Mushroom Fettuccine from this month’s Cooking Light mag.
    Tuesday – It’s supposed to snow, so slow cooker minestrone soup and fresh, homemade bread are on the menu.
    Wednesday – Fish with couscous and a steamed green veggie.
    Thursday – Stuffed shells and a big green salad.
    Friday – Breakfast for dinner again, waffles and eggs were such a hit/treat last week!
    Saturday – Dinner out with friends

    tues: mushroom pizza with creamy roasted garlic sauce
    weds: pork chops with mushrooms and caramelized onions, sauteed broccoli rabe
    thurs: pizza with pesto and roasted butternut squash
    fri: pumpkin ravioli, caesar salad
    sat: roasted chicken under a brik, roast potatoes, green beans

    Mon: Broccoli frittata, garlic bread and salad
    Tue: Going to the local fireworks display, will eat at one of the food stalls.
    Wed: Spaghetti and meatballs, salad
    Thur: Going out to see a friend’s band perform and having pizza
    Fri: Fish and chips, peas
    Sat: Italian pulled pork, polenta, roasted peppers and roasted broccoli.
    Sun: Dinner at mum’s

    Monday: Zuppa Toscana, bread
    Tuesday: Easy cooking night: Pizza night
    Wednesday: Hubby cooks. Spaghetti, garlic bread, salad
    Thursday: Hubby cooks. Baked potato bar. Sautéed Kale.
    Friday: Out for my mom’s birthday
    Saturday: Chicken and green bean casserole

    Wednesday – BFD Sausage and egg muffins with cheese, fried potatoes

    I love this time of year….dreaming of xmas baking before it gets all F’ed up with no time, family drama, etc 🙂

    Sun – Beef Veggie soup – it was really good when i cooked the beef i splashed some red wine in
    Mon – Lentil Tacos – new recipe for meatless monday
    Tue – Leftover soup
    Wed – Pork Tenderloin w apples & mashed sweet pot
    Thu – Grilled Cheese/Leftovers
    Fri – Almond Crust Pizza (Peter Reinhardt recipe)
    Sat – OUT for some shopping/errands

    I love biscotti and have always wanted to try to make it! For some reason, it seems too complicated to me. Maybe I’ll be brave and give it a whirl! I have a chicken-heavy week ahead:

    Monday: Crockpot Chicken Alfredo Lasagna & salad
    Tuesday: Chicken strips, brown rice, green beans
    Wednesday: out
    Thursday: leftovers
    Friday: Chicken Cordon Bleu Casserole (didn’t get to it last week), pasta and a veggie
    Saturday: Italian Wedding Soup & French bread
    Sunday: Lemon Parmesan Spaghetti & asparagus

      I was intimidated by it, until I made it – it really is quite simple – you can do it! 🙂

    With Halloween and other events, I ended up having pizza 4 times last week. Too much pizza for me, and I love pizza!

    We do Saturday to Friday meal planning:
    Saturday: Homemade potato skins
    Sunday: Roasted Halibut, roasted carrots and mashed potatoes
    Monday: pasta with proscuitto, artichoke hearts and tomato
    Tuesday: Roasted salmon, cucumbers, and the last cherry tomatoes from our garden
    Wednesday: Chipotle
    Thursday: Breakfast for dinner — bagels with lox and cream cheese
    Friday: crock pot chicken enchiladas

  20. It’s make ahead week! Because it’s amazing how much more time I have to do other things when I don’t have to worry about dinner!
    Yesterday I made 4 dozen meatballs and two batches of minestrone soup. Spaghetti and Meatballs one night, Meatball Subs another, Disneyland one day so no cooking, and Minestrone another day. We’ll either have leftovers or have pizza one night.

    Monday: Pork Tenderloin with Lime Cilantro glaze, Cauliflower Gratin, Homemade applesauce and cottage cheese.
    Tuesday: Sausage and Pepper Sandwiches, Roasted Potatoes, Coleslaw.
    Wed.-Sun.: Road trip to North Carolina with my dad for a business trip, hoping NC is warmer than O-H-I-O!

    Jane, we LOVE cauliflower with linguine, here’s my version, I roast the cauliflower to bring out it’s nutty flavor and use whole wheat pasta.

  22. Would the colored cherries (usually used in fruit cake) work for the biscotti?

      I don’t see why not! this biscotti recipe has a very neutral base for the cookie, so I think you could totally play around with what you mix into it!

  23. We’re back from Disney and have acclimated ourselves back to real life! That being said, ohmygoodness (all one word :))!! I love candy cane biscotti!!!! I made it last year and barely got a piece for myself before it disappeared off the cooling rack! I didn’t think to make “mini” ones for gifts. Great idea.

    Tuesday: Sliders on the grill
    Wednesday: Pumpkin pancakes– in muffin tins
    Thursday: Chicken, green bean and rice casserole with dairy sub’ed out
    Friday: Homemade eggrolls and fried rice
    Saturday: Having friends over
