Hi there. I can’t believe it’s time to plan another menu…here we go!
So, I completely underestimated what an interruption to normal life repiping our house would be this past week. I didn’t cook once. We’re almost back to normal now and I actually am cooking this afternoon, which will be nice! Needless to say, lots of repeats on my menu this week from last. (For those of you in California and Nevada, if you are ever in need of repiping your home, see below for info on the company we used.*)
MONDAY:

*Repiping info for California and Nevada folks: Repipe 1 was the company we used and they were fantastic. Their prices are phenomenal, they are super organized and timely, and the customer service has been great. I highly recommend them. The only issue we had was with the crew that patched up our walls. I won’t go into the too much detail, but the biggest issue was that they should have done a much better job putting plastic over our belongings, which ended up being a major headache for me. The company was quick to respond, however, and offered to come out and help clean everything (which I declined in the end and just did it myself). Even with a few hiccups on patch day, I still highly recommend them.

Apps: spicy shrimp salad,salsa Verde, & restaurant-style salsa w/ tortilla chips & salsa Sun Chips; Entree: Garlicky grilled tri-tip, black bean-corn salad (sil bringing), crock-pot nacho cheese potatoes, veg salad, melon cubes. Dessert: banana split ice cream cake (brother bringing) & smores over bonfire.

Glad to hear things are getting back to normal for you! We had unexpected houseguests yesterday. So, we played “Iron Chef America” coming up with an impromptu dinner for 7 last night. Crazy, but fun!! 🙂

I feel like my original meal plan has been thrown into disarray by the arrival of a heat wave in New England! It’s too hot to cook this week. So my modified menu will include:
Monday: Cold stuff from the fridge (cheese, bread, heirloom tomato salad, hummus, tabouli, olives)
Tuesday: Grilled chicken salad
Wednesday: Grilled chicken fajitas
Thursday: Bringing dinner to new parents- probably picking up a tray of pesto w/past and chicken from Whole Foods
Friday: Takeout pizza?
Tuesday — leftovers (coming home late with kids, no time to cook)
Wednesday — spaghetti with (imitation) crab sauce, new recipe from The Encyclopedia of Sauces for Your Pasta; carrots sauteed with a bit of sugar; romaine lettuce
Thursday — baked chicken coated in crushed cornflakes, zuchini ditto, corn on the cob
Friday — lamb stew, challah, pickled beets, watermelon
Saturday — out
Sunday — homemade pizza
Monday — grilled cheese (make lots, cut in quarters, bring to class potluck)
Monday: TV Dinners, just back from a trip 🙂
Tuesday: Breakfast Burritos and Salsa and Avocados and Fresh Veggies
Wednesday: Tucson Carne Seca Tacos
Thursday: Hamburgers and Oven Fries
