Happy Late Birthday!!! 🙂
We are sort of winging it for dinner this week on some nights.

Tues – Oatmeal and muffins. Weird, I know, but sometimes you just need something different that is meatless, but also not refried beans or veggies.
Wed – my husbands 40th birthday!!! But, he will be coaching that night so we will probably celebrate on Friday. Dinner will most likely be leftovers or it might end up being cake and ice cream. 😉
Thurs – No idea yet. Maybe baked potato bar?

When I planned this menu last week, I included a ‘To-Be-Determined’ day and a ‘Try A New Recipe’ day. Honestly, they were two days I did not have meals for so I planned spontaneity. It usually works out and helps keep the menu from feeling oppressive.
My husband did tell me this morning, “I want to try this recipe.” Then he sat the paper down and walked off. So, we have a recipe, I’m just not sure what it is yet. 🙂
Happy Birthday! Hope you all had a great day together.
