Happy Sunday! Another week, another menu…let’s get to it, shall we?

  3. The 6yo’s birthday part was this afternoon. So, after copious amounts of chocolate cake, dinner will be relatively light tonight.

    Sunday: Big salads with pesto vinaigrette dressing
    Monday: Homemade chicken nuggets and roasted brussel sprouts
    Tuesday: French onion baked pasta and sautéed collard greens
    Wednesday: Homemade pizza
    Thursday: Burgers on the grill with homemade buns and roasted sweet potatoes
    Friday: Leftovers
    Saturday: Out

    Wed: Going out for bonfire night, eating at the fireworks display
    Thur: Pork and pumpkin meatballs (Thanks to Sarah K for the idea!) with creamy spinach pasta and garlic roast mushrooms
    Fri: Burgers, sweet potato wedges, salad
    Sat: Spinach, feta and egg pizza
    Sun: Dinner at Mum’s, taking tarte tatin for dessert.

    A cold is zapping all my energy today. I’m so glad I already has this week’s meal plan typed up. A few switches and changes were made this morning, but nothing too hard.

    Actually, I a month’s worth of menus made up, thanks to some effort in September. While I will NOT follow it exactly, it gives me a great starting point.

    Fri – Lasagna, salad, garlic bread
    Sat – Chicken Quesadillas, Guacamole, Chips & Salsa
    Sun – Smothered Chicken over Rice, Stuffing, Peas & Carrots
