Hello! I hope you are all surviving December…in fact, I hope you are more than surviving and actually enjoying it!

    Wednesday: spinach frittata, roasted potatoes, and salad
    Thursday: Sriracha Fried Rice
    Friday: Christmas party!
    Saturday: leftovers
    Sunday: out to eat

  4. We have been LOVING December! The kids are old enough to help with Christmas cookies. So, we’ve been making a ton of them for eating and gifting (just have to make sure we don’t mix them up with the homemade dog treats!).

    Sunday: General Tso’s chicken, garlic greens, and rice

    Monday: Homemade chicken nuggets and stuffing (yeah….we can’t get enough)

    Tuesday: African peanut stew over rice

    Wednesday: Baked pasta and greens

    Thursday: Leftovers

    Friday: Homemade pizza

    Saturday: Out

    Monday: meatless monday-Tofu and black bean Taco salad
    Tuesday: Salmon with black rice and broccoli
    Wednesday: Mushrooms stuffed with H. Italian sausage and couscous
    Thursday: Homemade chicken tenders and sweet potato fries
    Friday: Tofu Spring rolls
    Saturday: Beef Roast
    Sunday: left overs

    So far I have:

    Lasagne (beef and sausage)
    Pancake Night
    Sausage and Rice Casserole
    Middle child’s 10th birthday party – pizza/sleepover!
    Eat Out

    I’m making the lasagne for a second time because the first time I made it I tried these pre-cooked lasagne noodles (what could go wrong???). It was a noodle failure, but the rest of it was delicious (after picking out 3 layers of noodles that did not cook). So, I’m trying it again using proper noodles 😉

  7. Thanks for the reminder of a Christmas Party. I had to go change a supper plan due to how long it would take and me wanting an earlier meal that night.

    Healthy Slow Cooked Tikka Masala, rice, sliced tomatoes
    Spicy Pan Fried Sirloin Steak with noodles, beets, peas

    Lentil-Tomato Soup, corn bread muffins
    Sandwiches (Date Night!)
    Black Bean Soup, corn bread muffins

    Again, nothing new this week and most suppers and several lunches can be made or reheated in the crockpot. It is going to be a crazy week, so I am trying to do a few things easier.

  8. I’m in trial this week. I don’t cook when I’m in trial, but I still meal plan on the off chance the schedule changes and the trial doesn’t happen. So, I have my meals planned and what I’ll eat if I don’t cook!

    cook: Pork Parmigiana and Pasta
    don’t cook: breakfast for dinner, ie bagels and cream cheese

    don’t cook: grilled cheese sandwich

    FRIDAY: Sweet n Sour Meatballs and rice

    SATURDAY: Chicken Schnitzel and egg noodles

    SUNDAY: Fried Clams and french fries

    Tue: Pasta with chilli and garlic broccoli, salad
    Wed: Games night at a friend’s, taking roasted butternut and feta pasta salad
    Thur: Cheesy baked polenta, roasted vegetables, poached eggs
    Fri: Christmas party!
    Sat: Sausage, pepper and onion kebabs, spicy roast potatoes, salad
    Sun: Dinner at mum’s, taking chocolate orange cake.

    Tuesday – Sloppy joes, cheesy potatoes, gr beans
    Wednesday – Meatloaf

    Friday – Two kids home from college and a xmas dinner party
    Saturday – Homemade pizza
    Sunday – Roast in crockpot

    Sat – chicken parm calzone, fries
    Sun – tuna noodle casserole (use up frozen peas)
    Mon – French onion soup (use up frozen bone broth)
    Tues – acorn squash stuffed with roasted beet risotto (use frozen beets), salad
    Wed – homemade pizza
    Thurs – tortelloni primavera (frozen sugar snap peas, spinach)
    Fri – BFD

  14. Seriously. It’s 2 weeks before Christmas, and my brain says it’s still October. What in the world.

    Anyhow, here is our menu…I made the chili last night for today and tasted it, and it was en fuego spicy. Whether or not the kids eat or they just eat Fritos dipped in sour cream, remains to be seen.

    Tuesday-Carnitas Tacos, Black Beans


    Thursday-out to eat

    Friday-Slow Cooker French Dip Sandwiches, Chips, Fruit

    Sat – Out

    Saturday: Waffles and Fresh Fruit
    Sunday: Out To Eat

    Tues= Taco Tues. Marinated flank tacos with the fixings

    Wed=World Cuisine Wednesday… Bahn Mi pork meatball sammies and Phó

    Thurs= Cubed steak, mashed potatoes, corn and green beans…rolls

    Fri= Steak Friday

    Sat= BBQ and all the fixings

    Sun= Roast Chicken, rosemary potatoes, corn on cobb andaasparagus

    Tuesday-Korean beef, broccoli, brown rice
    Wednesday-Stacked roasted vegetable enchiladas (Two Peas and Their Pod)
    Thursday-Chili, whole wheat cornbread
    Friday-Homemade pizza night
    Saturday-Eat out night
    Sunday-Soft tacos, with leftover beans, rice etc.
