I hope everyone is having a happy holiday season!
So…today I don’t have a menu planned. Nate’s Grammy McCarthy (of orange chicken and blueberry muffin fame) passed away this week, so we are in Massachusetts with family. We’ll be here all week, wishing Grammy was with us and yet still grateful for time together. We were all very close to Grammy and the loss has been hard. She was a grand woman and, in the words of Aunt Janet, like a “tinkling bell.”
Even though my life isn’t in the usual routine this week, if youย have a menu planned please feel free to leave it in the comments like normal!
Once the new year starts, I’ll be back to whip us into menu-planning shape. That’s how Grammy would want it. She was a pull-up-your-bootstraps-and-keep-on-moving kind of lady, so that’s what we’ll do. But this week I’m going to let the bootstraps dangle and simply enjoy time with the people I love.

I’m so sorry for your loss. It is never easy to lose those who we are close to, especially for our kids who don’t understand.
I have planned out all the meals for the week, but thought I would share just lunches this time.

Everyone is home this week still and remodel on our house is still happening. I’m not sure how closely we will follow the “plan”, but it is there for when we need it.

I’m so sorry for your loss. It’s a celebration of a life lived as you realize all the bits of your own life that were because of Grammy’s life. I lost my Grammy one year ago at age 104 and even our X-mas Eve dinner this year was shrimp scampi..something she fixed for the holiday every year.
Your family has so many wonderful memories and she’ll live on through your traditions.

Tuesday: Turkey and Avocado Melts and Pickles and Chips
Wednesday: Beef Quesadillas and Avocado and Fresh Salsa
Thursday: Beef Nachos and Avocado and Fresh Salsa
Friday: Breakfast for Dinner-French Toast and Bacon and Fresh Fruit
Saturday: Sausage Queso Dip and Corn
Sunday: Left Overs

So sorry to hear about Grammy. Enjoy remembering her life with the rest of the family. Her orange chicken is amazing. ๐ The rest of my family is out of town this week. So, I’m on my own – still working this week, but coming home to some well-needed quiet.

You helped make Grammy McCarthy a culinary legend :-)! Her Orange Chicken is an all-time favorite in our household and has spread like wildfire amongst our family and friends. Whenever I serve it, people want the recipe. In fact, one of our friends just served it to his extended family on Christmas Day!

This is tentatively my meal plan. My husband threw a curve-ball at me today though after I planned our meals and told me he’s not eating dairy or carbs anymore… We’ll see how long that lasts.
M: Tomato basil chicken stew (Pinterest recipe) – seriously this is so so good
T: Cheesy chicken, bacon, broccoli, and rice bowl
W: Roasted shrimp with broccoli (Doh – broccoli two days in a row.. might have to reconsider the veggies)
Th: Korean beef over rice with cooked cabbage
F: Crispy chicken thighs (Nom nom paleo recipe) with Brussels sprouts
Sa: PIZZA!!
Su: Garlic rosemary pork loin, roasted cauliflower, and asparagus

Oh no – I’m so sorry for the loss of Grammy McCarthy! I’ve also enjoyed her orange chicken and muffins. Seriously, I’ve made both of those recipes many times! It’s awesome that she left so many good memories (and recipes) behind. Glad your family was able to spend the holidays together. {hugs} ๐
