Week 416 Weekly Menu

Hello! So, last night we saw Kathy Griffin perform stand up and all I have to say is I laughed so hard that I was wheezing and needed an inhaler. I didn’t have one, but thankfully I didn’t die laughing. It was a close one! 😉

    We’ve got a birthday this week so I’m a little ahead of my usual planning process! 🙂

    Sun – Spaghetti & meatballs
    Mon – leftovers (dance class madness)
    Tues – boneless pork chops, buttered noodles, broccoli & applesauce
    Weds – birthday night, Megan (turning 6) requested Mac & Cheese and hamburgers
    Thurs – belated holiday party / out
    Friday – broiled tilapia, green salad, rice
    Saturday – birthday continues at American Girl Place in NYC!

    Monday – beef stroganoff with egg noodles
    Tuesday – leftovers
    Wednesday – salmon with french fries and broccoli
    Thursday – slow cooker pork tacos
    Friday – out
    Saturday – pizza

  4. Kathy Griffin??!! You lucky duck. I love her. She has been our New Year date for 6 years! We took the kids sledding for the first time today. Holy cow! It was so much fun! My mom had the flu over Christmas so they couldn’t fly up for the holiday. They’re coming in next weekend instead. Hooray for 2nd Christmas!

    Sunday: Korean BBQ-flavored pork tenderloin, rice, and green beans

    Monday: Pumpkin pancake muffins

    Tuesday: Taco rice bake with tortilla chips

    Wednesday: Chicken nuggets and roasted brussel sprouts

    Thursday: Individual pizzas

    Friday: Leftovers? Out?

    Saturday: “Make-up” Christmas dinner with my parents (rib roast, cornbread stuffing, goat cheese mashed potatoes, cranberry sauce, green salad, pumpkin pie)

    Tues – ravioli with spinach and bacon, bread
    Wed – riding lessons – fend for yourself

    Tuesday: Lemon Tilapia and broccoli
    Wednesday: Spicy Udon Noodle Salad
    Thursday: Squirrel’s Great Beef Steak and Bloomin’ Baked Potato
    Friday: Balti Chicken Pieces with Cumin and Coriander and rice
    Saturday: Eggplant Meatballs with pasta
    Sunday: Seared Salmon with Strawberry Basil Relish and Massaged Kale Salad

    All meals cooked today! I got a little behind over the holiday with my “one day a week” meal prep, but we’re back on track:

    Sunday: Roast pork loin (maple-mustard), zucchini, rice
    Monday: Stuffed peppers and fries
    Tuesday: Mediterranean sauce on rigatoni
    Wednesday: Chicken fajitas
    Thursday: Lamb stew
    Friday: Ravioli
    Saturday: Out to dinner

    Mon — sweet potato sriracha noodle soup
    Tuesday — shepherds pie
    Wed — homemade pizza

    Wed: Herby chicken thighs, griddled polenta and ratatouille (from the freezer)

    Fri: Baked potatoes with goat’s cheese and pesto, roast broccoli
    Sat: Out
    Sun: Dinner at Mum’s

    Mon – Cincinatti Chili (Go Bucks!)
    Tue – Beef Veggie Soup (leftover from Sat)
    Wed – Leftover Meatballs w salad
    Thu – Veggie Wraps
    Fri – Baked Chicken Parm & veggies
    Sat – OUT to cleveland to see STOMP!
    Lots of leftovers and repurposing this week which is soooo nice when its busy at work and crappy weather.

    Th – Homemade tortillas with lemon and garlic chicken and salad
    F – Thai chicken and veggie soup
    Sa – Grilled chicken leg quarters with sweet corn and beetroot salad

    I seem to be trying new recipes in groups, some weeks having the energy to do so and other weeks wanting the simplicity of meals I don’t have to think about so much to make. This week is one week I thought I would have the energy to try a few new ones. I’ll save more for next week. 🙂

    Thursday: Sweet and Sour Chicken and rice.
    Friday: Bacon and white bean stew.

    Using up lots of chicken in the freezer to keep my food bill down, so it’s a bit chicken heavy this week!
