Week 421 Weekly Menu

Hello everyone! Hope the holiday weekend is treating you all well. Let’s just get right to the menu!

– Penne in vodka sauce (thanks to Michelle for the idea!)

– Golden Moroccan Lamb Stew (another Penzeys recipe we’re trying) with rice

– Leftovers

Carnitas tacos
Guacamole and chips

– Eat out night

– Leftover carnitas

    Fri: Scrambled eggs & gravlax, grainy toast
    Sat: Baked cod, green beans, pineapple

    Wednesday: Southwestern Vegetarian Pasta and garlic bread
    Thursday: Chicken Milanese w/Watermelon Radish and Herb Salad with spaghetti noodles
    Friday: Chili with Pasta and Cheddar and Smoked Porter Jalapeno Cornbread Muffins
    Saturday: Veggie Chopped Salad and tortilla chips
    Sunday: Sweet Potato Samosas with Mango Chutney and Indian Saag with Chickpeas

    well… We got ANOTHER foot of snow….. Seriously Mother Nature, we surrender!!

    Sat — out
    Sun — veggie shepherds pie – lentils in place of ground beef
    Mon — beef stew from freezer, fresh bread
    Tuesday — chicken sausage and kale over roasted squash
    Wed — homemade pizza
    Thurs — creamy tortelloni spinach soup
    Fri — baked eggs over potato hash, breakfast sausage

    My MIL made that Penzy’s Moroccan Lamb Stew the other day. It was good, but a little sweet for my taste! I am excited to see your take. 🙂
    Sunday: Spaghetti, Broccoli
    Monday:Coconut Chicken Nuggets, SP’s, Veggie
    Tuesday: Husband w/ Kids while I teach yoga so leftovers, or quick homemade pizza
    Wednesday: Fish Tacos
    Thursday: Pork Loin (Not sure how I’ll season it yet), Rice, Veggie
    Friday: Salmon, Baked Lentils (similar to baked beans), Veggies
    Saturday: out

    • good to hear what you thought of the recipe – I’m excited to try it! based on your thoughts, I bet I’ll love it and nate will think it’s too sweet. 😉 we’ll see!

  5. Back from vacation. Ahhh, it was wonderful! Now back to real life. Wah wah wah! Boston: My heart (and shovel!) goes out to you!

    Sunday: Italian beef sandwiches on homemade pretzel buns, rice, and salad

    Monday: Dry-rub ribs in slow cooker

    Tuesday: Homemade fish sticks

    Wednesday: Parmesan chicken (thanks for the idea!!)

    Thursday: Homemade pizzas – everyone gets their own toppings

    Friday: Leftovers

    Saturday: Out

    Monday: Tandoori Style Chicken and Garlic Naan and Peas
    Tuesday: Fish Chowder and Carrots
    Wednesday: Stuffed Pork Tenderloin and Broccoli
    Thursday: Baked Coconut Shrimp and Salad
    Friday: Ultimate BLT and Fresh Fruit
    Saturday: Breakfast for Dinner
    Sunday: Left Overs

    Monday – White chicken chili (trying to warm up!)
    Tuesday – keilbasi with pepper and onions
    Wednesday – salmon with fries and veggies
    Thursday – fried rice
    Friday – out
    Saturday – leftovers

    Brrrr… it cold outside…right now sitting at 3 below zero and not to get much warmer plus calling for 4-6 inches of snow in the next 18 hours. Hope everyone is keeping warm.

    Sunday – Fried whiting, hashbrown potato casserole, broccoli, carrots and cauliflower medley
    Monday – Vegetable beef barley soup, grilled cheese sandwiches
    Tuesday – Hamburger mac & cheese with diced tomatoes
    Wednesday – Baked chicken and leftover potato casserole
    Thursday – Pizza and salad
    Friday – Tomato chicken alfredo linguini, garlic toast
    Saturday – Garlic shrimp, oven fried potatoes

    Here’s my plan for the week:

    Sunday – Italian Stew (from Cooking Classy website)
    Monday – Marinated salmon, garlic noodles, asparagus
    Tuesday – Pollo Fundido with rice and beans
    Wednesday – Pad Thai with shrimp
    Thursday – Sweet Hawaiian crockpot chicken (new recipe from pinterst), haven’t decided on sides yet.
    Friday – Girls night out, so probably pizza for dad and the boys!
    Saturday – Out for burgers.

    We will be going out of town this weekend to do some college shopping with our son. So I only have to plan a few meals.:)

    Mon – Ham Steaks, Mashed Potatoes, Green Beans
    Tues – Creamy Chicken Dijon & Rice, Broccoli
    Wed – Sausage & Tortellini Stew
    Thur through Sun – On the Road

    Fri – Homemade sliders, sweet potato fries, fruit
    Sat – party with lots of appetizers
    Sun – Honey pork tenderloin, roasted butternut squash, green beans

    Wed: Toasted sandwiches and belated pancakes with lemon and sugar

    Sat: Carnitas and corn salsa
    Sun: Polenta and ragu, salad
