I totally followed last week’s menu. I have such mixed feelings about that…I mean, I’m happy I followed the plan and used all the food I bought. BUT…now I have to use my brain to plan a whole new menu. Curses! Good thing I have all of your menus from last week to inspire me!

Hoping after the 9 inches of snow we got last week along with the below zero temps that winter will let Spring make an appearance now!
Sunday – Easy caramalized pork chops w/onions, baked potato casserole with sour cream, butter and cheese, mixed medley veggies
Monday – Chicken Parm w/pasta(hold over from last week, salad
Tuesday – Chili mac & cheese, cornbread
Wednesday – Salmon, baked potatoes, green beans
Thursday – Potato soup, salad, crusty bread
Friday – Thin sliced sirloin steak, mushrooms & peppers over rice
Saturday – Leftovers

Glad to hear your week was back to normal (and health, too??). I love Smitten Kitchen’s Ginger Fried Rice. That’s been my go-to recipe for years.
Sunday: Stuffed chicken breasts and cauliflower rice
Monday: Ground beef lettuce cups and mashed potatoes
Tuesday: Chicken noodle soup in the slow cooker and pretzel sticks
Wednesday: Pizza (caramelized onions, goat cheese, and cranberry sauce for grown ups; pepperoni for kiddos) with a side of cranberry sauce
Thursday: Taco Bake
Friday: Leftovers
Saturday: Out

I have one question about the paper towels–I saw your post…how do you wipe up grease from seasoning your cast iron pan and also draining bacon after cooking? Those are the only things I really use paper towels for, but can’t figure out how to do without?
