Week 425 Menu

Hi everyone! So, this is a “keeping it real” menu post, i.e. my menu is almost identical to my last one. The last week was kind of rough and I didn’t get much cooking done, which I hate, so I’m committing to making this week better! Here’s to actually making dinner! 😉

Chicken Tortilla Soup

– Chicken Caesar Salad

– Fried Rice (I haven’t quite perfected it so giving it another go!)
– Potstickers

– Leftovers

Easy Peasy Bean Tacos
– Guacamole and chips

– Take out night

Waffles and Home Fries
– Fresh fruit

Since I’m not especially original this week, we definitely want to see your menus! Please share your meal plan for the week, no matter how simple or fancy!

    we’ve had do over weeks too! Here’s mine… Wheat free week 2, so far, so good!

    Sat — out
    Sun — salmon, sautéed spinach with pine nuts, roasted beets & sweets
    Mon — mixed greens salad with roasted beets, blood oranges, and chicken
    Tuesday — homemade pizza (cauliflower crust)
    Wed — French onion soup
    Thurs — pork loin, sweet potatoes, green beans
    Fri — out

    sunday chicken cutlet sandwiches and Potatoe salad
    Monday Parmesan and leek quiche
    Tuesday spanakopita cresents
    Wed mushroom And spinach quesadillas
    Thur maybe eating out have day off
    Friday pizza
    Sat breakfast for dinner

    • I always think days like a day off, when there’s more time, should be my days to cook a great dinner…but they are always the days I want to eat out! 😉

    Sun: BBQ chicken/grilled potato wedges/bacon-wrapped asparagus

    M: spaghetti w/ roasted garlic tomato sauce/crusty bread

    Tu: I’m working… boys will have leftovers

    W: school family fun night

    Th: cashew chicken & broccoli stir fry/steamed rice

    F: make-your-own pizzas & salad

    Sa: dinner out

    Think we all have had weeks that we wonder why we only got partway through out meal plan. Makes it easier to plan the next week.

    Sunday – Grilled salmon, rice pilaf, mixed veggies
    Monday – Baked chicken thighs w/mushroom, spinach and garlic noodles
    Tuesday – Easy taco pie w/lettuce, tomato, sour cream
    Wednesday – Tuna melt sandwiches, crispy oven parm fries
    Thursday – Pizza, salad
    Friday – Leftovers
    Saturday – Hearty sausage and barley soup with High School band sub

  5. Life happens, and you redo menus. 🙂

    Sunday: Meatballs, marinara, and focaccia
    Monday: Sweet potato stuffed shells
    Tuesday: Corned beef in slow cooker with colcannon..Happy St. Pat’s!
    Wednesday: Creamy rice and broccoli casserole
    Thursday: Pumpkin pancakes in oven
    Friday: Leftovers
    Saturday: Out

    Sun – Pizza & Breadsticks, carrots

    Mon – Ramen Noodle Stir Fry, cottage cheese

    Tue – French Onion Soup, Reubens

    Wed – Rice a Roni Meatballs, m potatoes, gr beans

    Thur- Steak Tips, Baked Potato, Broccoli

    Fri – Leftovers

    Sat – Daughter’s Tennis Match so probably out to eat

  7. First off, thanks for the reply on the paper towel post. I love the ideas…and you’re right! Our grammas didn’t have paper towels for cast iron! I know I’ve been using less paper towels just because the amount of kitchen towel laundry has doubled, but we still have a ways to go 🙂

    Here’s my tentative menu:

    Sunday-Homemade Chicken Taquitos, Black Beans, Guacamole

    Monday-Grilled Burgers, Pasta Salad, Potato Salad

    Tuesday-Slow Cooker Spaghetti and Meatballs, Broccoli

    Wednesday-Leftover Meatballs in some form (probably sandwiches, but here are my favorite things to do with leftover meatballs…

    Thursday-Breakfast Burritos, Fruit Salad


    Saturday-Out to Eat

  8. I have a repeat or two from last week as well… it happens!

    burgers (because it’s going to be warm enough to grill!)
    sour cream enchiladas
    grilled asparagus with poached egg and crispy potatoes
    alley doughs (calzones)
    salmon burgers

    There has not been much on sale that I have been wanting to buy. Instead I have been looking into the freezer and pantry for those items that I have “just a bit left” to use. I am going to buy a cut of meat later this week, but do not need it for this week’s menu. This week’s menu shopping involved only produce and several bottles of ketchup.

    2. Hamburgers, fried potatoes
    3. Pork Loin, beets, couscous with tomato juice
    4. Pork chops, steamed carrots, potatoes
    5. Salad
    6. Eat out?
    7. Chicken burritos

    2. Mashed potatoes with bacon and cheese, deviled eggs
    3. Sandwiches, carrot sticks
    4. Breakfast – grits, eggs, toast, hot cocoa
    5. TBD???
    6. This-n-That (movie night)
    7. Sandwiches, chips, fruit, fresh vegetables

    M: Pappardelle with homemade ricotta, asparagus & lemon zest, garlic bread
    T: Oven fried chicken, mashed potatoes & green beans
    W: Roasted beets & sweet potatoes over mixed greens with crumbled blue cheese & biscuits
    T: Leftovers
    F: Patty melts (new fam favorite) & sweet potato salad
    S: Out

    We’ve had company all weekend and the eating has been a bit heavy so the first few days of the week are going to be light…
    Sunday: Potato Leek Soup, Crusty Wheat Bread
    Monday: Cobb Salad
    Tuesday: Taco Bowls
    Wednesday: Halal Style Chicken and Rice with White Sauce
    Thursday: Homemade Pizza (kids request)
    Friday: Wheat Berry Chili (vegetarian)
    Saturday: out or something will happen during the week causing me to push my menu 🙂

    Tuesday: celebrating Ben’s birthday with jalapeno popper chicken
    Wednesday: kung pao chickpeas [didn’t make last week]
    Thursday: black beans & rice
    Friday: paninis
    Saturday: out to eat

    Too hot to do too much cooking the kitchen. So I will utilize my grill outside as much as possible.

    Mon – BBQ Chicken, Baked Potatoes, Corn on the Cob (all on the grill)
    Tues – Bacon Cheeseburgers, Pasta Salad
    Wed – Deli Sandwiches, Carrots & Ranch, Chips
    Thurs – Pork Chops, Mashed Sweet Potatoes, Green Beans
    Fri – Eat out
    Sat – Eat out
    Sun – Garlic Herb Roast Pork, Mashed Potatoes, Broccoli, Salad

    Sun – Pork roast, mashed potatoes, broccoli
    Mon – Chicken noodle soup, rolls
    Tue – Corned beef, cabbage, potatoes & carrots
    Wed – Quinoa/black bean stuffed peppers, salad
    Thu – Leftovers
    Fri – Pizza
    Sat – Chicken Kai Pa Lo

    Sun: baked mac n cheese, tilapia, green beans
    Mon: Caprese chicken, brussel sprouts, green beans, brown rice
    Tues: turkey sliders, salad, green beer (green milk for the kids)!
    Wed: French toast, scrambled eggs, fruit salads
    Thurs: pork tenderloin, broccoli, brown rice
    Fri: pizza, salad

    Sun: Flank Steak, Brushetta on Crostini
    Mon: BBQ Meatball Sliders, Broccoli w/ cheese sauce
    Tue: Gnocchi w/ Basil-Spinach Pesto, Roasted Asparagus (has to be green foods!)
    Wed: Fresh Mozzarella Pizza, Salad w/ Homemade Maple-Balsamic Dressing
    Thur: Honey-Prosciutto Chicken, more salad (trying to eat up our lettuce from the garden)
    Fri: Lemon-Parsley Butter Noodles, Roasted Carrot Chips

  18. We were out of town for spring break, but I did do some meal planning 🙂 for my husband whom we left behind, but you get the aftermath menu 😉

    Monday: Enchilada Casserole
    Tuesday: Southwest Steak Bowls
    Wednesday: Crockpot Tortellini Bake
    Thursday: Classic Spaghetti Carbonara and Fresh Veggies
    Friday: Out To Eat (we came home :))
    Saturday: Crab Avocado Sandwiches and Cucumber Salad
    Sunday: Fried Salami and Hot Pepper Sandwiches and Salad
