Hi everyone! So, this is a “keeping it real” menu post, i.e. my menu is almost identical to my last one. The last week was kind of rough and I didn’t get much cooking done, which I hate, so I’m committing to making this week better! Here’s to actually making dinner! 😉

– Fried Rice (I haven’t quite perfected it so giving it another go!)

– Take out night

– Waffles and Home Fries
– Fresh fruit

Sun — salmon, sautéed spinach with pine nuts, roasted beets & sweets
Mon — mixed greens salad with roasted beets, blood oranges, and chicken
Tuesday — homemade pizza (cauliflower crust)
Wed — French onion soup
Thurs — pork loin, sweet potatoes, green beans
Fri — out

I always think days like a day off, when there’s more time, should be my days to cook a great dinner…but they are always the days I want to eat out! 😉

Think we all have had weeks that we wonder why we only got partway through out meal plan. Makes it easier to plan the next week.
Sunday – Grilled salmon, rice pilaf, mixed veggies
Monday – Baked chicken thighs w/mushroom, spinach and garlic noodles
Tuesday – Easy taco pie w/lettuce, tomato, sour cream
Wednesday – Tuna melt sandwiches, crispy oven parm fries
Thursday – Pizza, salad
Friday – Leftovers
Saturday – Hearty sausage and barley soup with High School band sub

First off, thanks for the reply on the paper towel post. I love the ideas…and you’re right! Our grammas didn’t have paper towels for cast iron! I know I’ve been using less paper towels just because the amount of kitchen towel laundry has doubled, but we still have a ways to go 🙂

Tuesday-Slow Cooker Spaghetti and Meatballs, Broccoli

There has not been much on sale that I have been wanting to buy. Instead I have been looking into the freezer and pantry for those items that I have “just a bit left” to use. I am going to buy a cut of meat later this week, but do not need it for this week’s menu. This week’s menu shopping involved only produce and several bottles of ketchup.

We’ve had company all weekend and the eating has been a bit heavy so the first few days of the week are going to be light…
