My family is out of town this week for Spring Break. Lots of veggie-based meals for me! On a side note: I got a FitBit on Thursday, and I’m OBSESSED! I love it! Joined a Weekend Challenge with friends, and it’s so fun!
Sunday: Leftovers from weekend
Monday: Smashed chickpea, avocado salad wraps
Tuesday: Sweet potato black bean burger
Wednesday: Lentil chili in slow cooker and cornbread
Thursday: Pizzas
Friday: Chili mac from leftover chili
Saturday: Out
I have to admit, it’s kind of nice to be home alone – kind of jealous of you! ๐ and have fun with the fitbit – good to know you love it!

Monday – Today starts our kitchen renovation project! Any helpful suggestions will be greatly appreciated! I expect to be without a kitchen for at least the next 4 weeks! Yikes!
so we are starting with eating with my daughter and her husband on monday – I’m making pork tenderloin stir fry.

Nancy, I know what you are about to go through. It is rough but I used the crockpot and stove top (until it disappeared) a lot. We had ours done this past November and December or I would have been using the outside grill!!!
It is so worth it in the end! My family thinks I live in the kitchen now….and they are right!! I love it!!! Can’t wait to hear from you when its done!
When I was a kid, we had our kitchen redone. We survived on a hot plate, slow cooker, and generous neighbors who let us use their oven on occasion! ๐ Lots of cold cuts, pasta, salads, and grilled cheeses!
I have zero bits of good advice, but congratulations…it will be a rough transition but SO AWESOME in the end!!!

have you tried the toastacho casserole before? curious how you like it!
It was my first time making toastnacho casserole and it was good! It makes a lot…..we ate it for 2 days and still have a ton leftover.
I changed the recipe a bit: substituted ground chicken for ground beef, chicken broth for beef broth, and omitted the coriander only because I thought I had some in my spice cabinet but discovered I did not.
Topping the casserole with shredded lettuce, tomato, onion, and the avocado, lime, sour cream really made this dish tasty.

Went to the Strip District in Pgh yesterday and one of the fruit markets had super prices on all their bounty. I walked away with $17(3 bags full) worth of fruits and veggies! My menu this week will show that I bought 2 heads of cabbage. lol Gotta use it up!
Sunday – Red snapper, haluski, cauliflower, broccoli, yellow squash medley
Monday – Pork fried rice with snap peas
Tuesday – Stewed cabbage, meatballs and mushrooms over egg noodles
Wednesday – Open face BBQ chicken French bread sandwiches, coleslaw
Thursday – White pizza w/spinach and tomatoes, salad
Friday – Spinach burgers, pasta & potatoes with cabbage

We are still without an oven, and will be for another few months. I won’t go into the reasoning here, but let me assure you that this week’s whole menu plan can be made without an oven. I may have to repeat it this summer when I do not want to add heat to the house. ๐ I am going to try cooking the pizza on the grill. My youngest highly doubts my culinary skills in this area, and he is right to do so. We’ll see how it goes. (I do know you can do cookies, so will bake up another batch on that night.) We also have guest coming in this weekend, and my husband is gone all week. I’m not sure he would approve of all the bean meals, due to, um, unfavorable results that may manifest themselves while at work. ๐ I am looking forward to the easier and simpler meals.

without an oven for a few MONTHS?!?! what is going on? I’m sure I missed it in a comment somewhere along the line! we have the Smart Oven by Breville and I LOOOOOOVE it – it’s bigger than an ordinary toaster oven, you may want to look into it! also, you should definitely save this menu for the summertime! ๐
