Week 427 Weekly Menu

Hello! I have kind of a crazy week coming up. I’m off to LA for a couple days to hang out with Larry King (more on that later!), and then Nate is out of town for work, and then we’re driving 12 hours to visit family. I hope we survive the craziness! As a result my menu is a little strange this week. All the more reason for you guys to post your menus and inspire one another!

MONDAY:
– I’m going to L.A. to hang out with Larry King (more on that later!)
– Nate and kids are making English Muffin Pizzas

TUESDAY:
– Take out night (I’m still out of town)

WEDNESDAY:
– Penna in vodka sauce
– Side veggie or salad with garlic bread

THURSDAY:
– Island Pork with Sticky Coconut Rice
– Broccolini

FRIDAY:
– Leftovers

SATURDAY:
– Driving to Utah to visit family for spring break! Eat on the road

SUNDAY:
– Easter Dinner with family!

    Monday -Spaghetti w/meatballs, garlic bread, salad
    Tuesday – Chili mac & cheese, from the freezer
    Wednesday – Spinach burgers, pierogies
    Thursday – Chicken patty sandwiches, French frieds
    Friday – Salmon burgers, garlic buttered noodles
    Saturday – Leftovers

    Sat: pork ragu, pasta, salad
    Sun: korean BBQ beef tacos
    Mon: chicken shu mai, fried rice, baby bok choy
    Tues: egg and cheese sandwiches, sweet potato home fries
    Wed: sandwiches or leftovers between activities
    Thurs: oriental chicken salad
    Fri: Dinner at my parent’s

    Made it through the first week of a major kitchen remodel! We ate at my daughter’s house a few times and cooked a few times with the slow cooker, toaster oven and electric frying pan.
    Sunday – slow cooker chicken with black beans, corn and spices with rice
    Monday – Salmon in the toaster oven rice and veggies in the rice steamer
    Tuesday – out – husband and sons having hoagies
    Wednesday – making buffalo chicken legs at my daughter’s house (thank goodness she lives close!- also always good to see my grandson!)
    Thursday – white chicken chili in the slow cooker
    Friday – burgers on the grill at my daughter’s
    Saturday – tbd?

    Mon – leftover pulled pork from Sat with homemade cole slaw and roasted sweet potatoes
    Tues – grilled chicken with a side of buffalo hot sauce, celery & carrots
    Weds – broiled salmon, rice, salad
    Thurs – eggplant parm, angel hair & salad
    Fri – family arriving for the weekend! Grilled turkey burgers, hot dogs for the kiddos, oven fries, broccoli
    Sat – BBq for the crowd
    Sun – Easter dinner with ham, scalloped potatoes, green beans

    Mon – Balsamic Chicken and Roasted Asparagus
    Tue – Leftover Broc Cheese Soup
    Wed – Quinoa/Sausage/Mushroom/Spinach one pot
    Thu – Tacos
    Fri – Tom Basil Soup in Crockpot (soup craving since its gonna get to warm soon i guess ?)
    Sat – Leftovers/Easter Prep
    Sun – Tangerine Glazed Ham (Tyler Florence recipe is awesome – i slightly modify), Asparagus w Pine nuts & lemon, Potato casserole, deviled eggs.
    dessert – lemon meringue cheesecake and white choc/marshmallow eggs

    I’m actually here to browse menus…mine is sadly incomplete. I have no excuse either 🙂

    Yesterday we grilled burgers…bacon, cheese, lettuce, onion, and “secret sauce” with chips and watermelon.

    Today, baked potato bar with broccoli. Tomorrow through Saturday–no idea! But I always get such great ideas from everyone’s menu 🙂

    Monday: Oven Pizza night
    Tuesday: Beefy Nachos with Avocado and Tomatoes
    Wednesday: Tacos
    Thursday: Shells with a Meat Sauce and Green Beans
    Friday: 50/50 Burger, Fresh Fruit and Chips
    Saturday: French Onion Soup Meatballs, Rolls, and Veggies
    Sunday: My kids chose duck this year, with Potatoes, Rolls, and Corn
