Week 431 Menu

Hey everyone! Real quick before we get down to the weekly menu. I normally would share this in my Friday Show and Tell post, but I feel like this is time sensitive. I know we all feel the urge to help but are often unsure of the best ways.

I actually did do a lot of cooking last week, but we still have some carry-overs from the meal plan. You know me, I like it when items carry over, less thinking involved! 😉

    Sunday – made dinner in my kitchen! entering week 6 of the remodel we now have new appliances, and running water! still a bit to do for the final finish bu the end is in sight!

    Monday – at my daughter’s – hopefully last day of work on the kitchen! having – ham steak, mac and cheese and broccoli
    Tuesday – I’m out making a crockpot meal for those at home
    Wednesday – kitchen should be completed! Salmon with salad and fries

    Saturday – pizza

  9. This week is mainly carry-overs from last week. The audit at work last week was all-consuming and required A LOT of babysitting (of the auditors). 🙂 Thank goodness for fried egg sandwiches and pasta!

  14. Sunday-Minestrone Soup for the kids. At home date night for hubs and I…nachos with all the fixins (including homemade pepper jack cheese sauce)

    Monday-Pulled Pork Sandwiches, Coleslaw (with an 8 lb cabbage I just pulled from the garden!), mashed potatoes (potatoes from the garden.)

    Tuesday-Sesame Beef Stir Fry, Noodles, fresh veggies

    Well, I based our menu on the fact that we had a track meet on Wednesday and Friday. Sunday night we got a text that there was a track meet MONDAY. And the Wednesday and Friday meets were INVITATIONALS – which my son (a freshman) did not qualify for. Please, wonderful people who are sports coaches, out of the goodness of your hearts – COMMUNICATION IS KEY! Rant over.

    I’ve just discovered this website (I’m always looking for new meal-planning ideas) and I’m excited to share my menu for the first time! My menu for my roomie and I for the coming week:

    Tonight – homemade pizza (I’ve been using the lazy pizza dough/margherita pizza recipe on Smitten Kitchen every Friday for over a year now and it comes out perfectly every time! I had no luck with pizza until I tried this recipe.)

    Saturday – roast chicken leg quarters, colcannon, buttered carrots, and homemade bread (Panama Bread from – my go-to “plain” bread)

    Sunday – simple pasta with Italian sausage and homemade tomato sauce, garlic toast w/ the Panama bread (mix butter, mashed garlic, fresh parmesan, and a little salt and spread on the bread), and salad

    Monday – Brunswick stew in the crock pot (Great American Slow Cooker Book recipe) and Panama bread toast

    Tuesday – flammkuchen (I use the Smitten Kitchen lazy pizza dough and top it with cream-thinned sour cream, mozzarella, red onion rings, plenty of freshly ground black pepper, and bacon), and fruit salad

    Wednesday – jerk pork shoulder (another from the Great American Slow Cooker Book), black beans and rice, and roast sweet potatoes

    Thursday – beef stew, creamed spinach, and buttered toast with the last of the Panama bread

    Friday – homemade pizza (every Friday!)

    Saturday – Home cookin’! Chicken-fried steak, cornbread, purplehull peas, turnip greens, and baked sweet potatoes.
