Week 439 Menu

Nate and I are back from Soulstice Retreat and my parents are in town and it’s all crazy and we still don’t even know what we’re doing for Father’s Day dinner! But I’m going to quickly pound out a menu. I don’t have my regular computer, so I’m going old school with this week’s menu post…no graphic, no PDF. Next week we’ll be back in business!

Turkey Boursin Baguettes
– Fresh fruit and chips

– Creamy Chicken Enchiladas
– Guacamole and Tortilla Chips

Homemade Pizza (flavor TBD)

– Leftovers

– Hotel night with Grandma! Eat out

– More fun with Grandma – more eating out πŸ™‚

– BBQ on the GrillΒ Night!
– Salads and fruit

  1. Welcome home! It’s good to have some good stand-by recipes for those “ACCKKK! My family needs to eat!” weeks. πŸ™‚

    Sunday: Out to dinner with friends
    Monday: Beef stroganoff, roasted green bean, and corn on the cob
    Tuesday: French toast casserole (the family LOVES this recipe)
    Wednesday: Homemade pretzel dogs
    Thursday: Burgers on the grill on homemade pretzel buns
    Friday: Leftovers
    Saturday: Out.

    Sun: BBQ pork, grilled asparagus, rosemary new potatoes
    Mon: tortellini, broccoli
    Tues: buffalo chicken, raw vegetables
    Wed: chef salad
    Thurs: steak tips, grilled asparagus
    Fri: pesto turkey burgers, salad

  4. How fun! Are you so incredibly recharged you’re just melting into a happy little ball of relaxation?? Bliss πŸ™‚

    I didn’t *really* plan this week. We have my sister in law and her family in town visiting next week, then vacation in 3 weeks, so I’ve been busy trying to coordinate everything.

    Sunday-Father’s Day BBQ…steak, corn, potato salad, pasta salad, green salad

    Monday-(we have one uncooked filet left over)…either steak and eggs for my husband and breakfast burritos for the kids and I, or steak sandwiches with chips.

    Tuesday-Chili and Cornbread

    Wednesday-Baked Potato Bar with Chili

    Thursday-Minestrone Soup with French Bread

    Friday-eating out…trying a new pizza place!


    • well, I actually totally killed my hip and hobbled around like a 95yo woman for a few days post-retreat, so not so much on the relaxing side, but it was totally worth it! πŸ™‚

    Hi –
    Sun – Bonus Son’s graduation party (not at our house)
    Mon – Vegetable quiche
    Tues – leftovers and green salad
    Wed – crockpot chicken and pineapple tortillas/tacos/or over rice
    Thurs – on your own
    Fri – we’ll be driving so sandwiches and chips
    Sat – at a wedding – I’m sure it will be delicious
    Sun – leftover lasagna that I hope I remember to take out of the freezer on Friday!

  7. Monday: Spice Crusted New York Strip Steaks and Green Onion Mashed Potatoes and Corn
    Tuesday: Mexican Chicken Chopped Salad
    Wednesday: Red Chili Honey Glazed Salmon and Broccoli
    Thursday: Black Pepper Filet Mignon, Twice Baked Horseradish Potatoes, and Green Beans
    Friday: Out To Eat
    Saturday: Burgers and Fries
    Sunday: Left Overs

    Tu: having a girls night in w/ some friends at my place…spinach-artichoke dip/shrimp salad w/ chips/sausage stuffed mushrooms/cheese plate and lots of wine!

    W: salad bar w/ herb-parmesan focaccia

    Th: chicken w/ creamy piccata sauce/lemon butter noodles/salad

    F: l/o

    Sa: hubby making dinner…probably BBQ

    Su: Storm baseball game

    Sun – Chicken Paprikash in Crockpot w Cauliflower Mash
    Mon – Teriyaki Chicken and Broccoli
    Tue – Leftover Paprikash
    Wed – Salmon & Asparagus
    Thu – Steak & Sweet Pots
    Fri – Pasta w Meatballs
    Sat – Running a 10 miler so probably something bad for me like pizza to celebrate. Also my mom is having a party this night but sadly no GF food so i will just drool over everything.

    Monday – peanut chicken lettuce wraps with ginger garlic sauce
    Tuesday – grass fed buffalo burgers (lettuce wrapped) with parsnip fries
    Wednesday – naan pizzas
    Thursday – black bean sliders with grilled corn on the cob
    Friday – out with friends.
