Week 440 Menu

Hey everybody! I’ve gotta be honest, I do not feel like planning a dinner meal plan today. I am in summer mode and just want to laze about. Good thing I have the blog to keep me on task!

  1. I’m sending you motivational vibes. It can be hard to get out of that rut. We spent all weekend outside: block party, festival, fireworks, gardening. It was great!

    Sunday: Indian restaurant – kids’ first experience; they loved it!
    Monday: French toast casserole
    Tuesday: Indian food leftovers
    Wednesday: Chicken noodle soup in slow cooker with cornbread
    Thursday:  Pizza
    Friday: Grilling out: burgers, corn on the cob; macaroni and cheese casserole (ATK recipe…to die for)
    Saturday: out

    Sat: pesto turkey burgers with mozarella/tomato, salad
    Sun: steak and chicken fajitas
    Mon: homemade pizza- pesto/tomato and BBQ chicken, raw veggies
    Tues: turkey/spinach tacos, corn
    Wed: picnic dinner- hummus/pita chips, raw veggies, fruit, cheese/crackers
    Thurs: omlettes, sweet potato homefries
    Fri: dinner at my parent’s house

    Sat — out
    Sun — salmon, zucchini
    Mon — grilled pork chops, broccoli Apple salad
    Tuesday — fried rice, chicken satay
    Wed — Homemade pizza
    Thurs — spinach goat cheese scramble, fruit, bagels
    Fri — out

    my GF menu for this week
    Sun – Tacos & Homemade Guac
    Mon – Honey Brushed Chicken Thighs and Roast Sqaush
    Tue – Rufus Teague Chicken Breasts & Sweet Pots
    Wed – Leftovers
    Thu – Pork Tenderloin & Broccoli
    Fri – Wine/Cheese/Fruit/Crackers
    Sat – OUT for July 4

    Summer is here so I am using my grill and crock pot as much as possible.

    Mon – Grilled Tri Tip Steak, Cheesy Potatoes, Steamed Carrots
    Tues – Grilled Chicken, Rice, Corn on the Cob
    Wed – Chicken Enchiladas (using leftover chicken from Tues), Rice & Beans
    Thurs – BBQ Pulled Pork Sandwiches, French Fries, Strawberry Spinach Salad
    Fri – Ranch Style Chicken, Fluffy New Potoates (Ree Drummond recipes), Salad
    Sat – Hamburgers & Hot Dogs, Salads, lots of pool time and fireworks
    Sun – Leftovers

    MON – Salisbury steak, rice, gravy, steamed broccoli
    TUES – cooking the whole meal in my electric pressure. ( separately)
    Chuck roast with gravy
    Potatoes to mash
    Corn on the cob
    WED – breakfast for dinner- scrambled eggs, grits, bacon and biscuits
    THURS- left overs night
    FRI – garden salad, steamed tilapia
    (from the electric pressure cooker), baked green beans seasoned with dried Italian dressing mix
    SAT – 4th of July- grilling burgers and conecuh sausage. Potato salad, cucumber corn salad, baked beans, deviled eggs, chips, homemade vanilla ice cream.
    SUN – left overs from Saturday

  7. I feel ya! I didn’t plan or post a meal plan the past two weeks… and… it seemed like nothing got cooked! Now that I have summer produce starting to come in from the garden (and the CSA), it makes meal planning even more important… don’t want to waste those homegrown veggies. 🙂

    sloppy joes with roasted fennel
    zucchini latkes with green beans

    • yes, you don’t want to waste those veggies! I always have to make sure I plan around them or I totally let them go to waste, it’s terrible!

  8. I need to get back to menu planning. The 4th of July is always baby back ribs at our house.

    M: Leftover cannelloni & garlic bread, cesaer salad
    T: Corned beef & swiss sandwiches, steamed summer squash
    W: Grilled chicken ceasar salad
    T: Out
    F: Grilled chicken marsala & green beans almondine
    S : Grilled steak tips, caprese salad, corn on cob & peach shortcakes

    Monday: Breakfast Quesadillas with Avocado and Fresh Salsa
    Tuesday: Tostadas
    Wednesday: Pizza Night and Fresh Veggies
    Thursday: Fish and Potatoes and Green Beans
    Friday: Date Night In–kids get mac n cheese
    Saturday: Out to Eat
    Sunday: Breakfast for Dinner–Dutch Babies, Fresh Fruit, and Bacon

    also, I totally forgot that saturday was the 4th when I put my menu together – good thing I have you guys to remind me about the holidays!!! 😉
