Week 449 Menu

Well, it’s happening…the hottest weather of the summer is right when school starts! The California school year really should be November – July because August, September and October always come with heat waves! So, I’m trying to plan a first-week-of-school menu this week that has good home cooking but hopefully won’t make the kitchen too hot!

Rachel Sandwiches 
– Fresh fruit

Chicken Tortilla Soup

Sweet Korean Beef Tacos

– Leftovers

– Chicken on the grill
– Corn on the cob + watermelon

– Breakfast for dinner (egg scrambles with lots of toppings!)

  3. Jane, how did Cate’s week of dinner prep go? I might have missed it. Cate is my 6yo’s hero. She can’t wait until she’s big enough to cook by herself!

    Another week of travel, but family we all set!

    Last week I thought I was doing great, writting out the meal plan on a note pad on the fridge. Seems I forgot to check the amount of ingredients in the house. We found ourselves eating sandwiches more than one. 🙂 This week, I was better and actually created a list before shopping … then changed the menu when I was unable to pick up a very needed item. So goes meal planning.

    Eat Out
    Kheema, rice
    Dad’s Meatloaf with Tomato Relish, shredded carrot salad, mashed potatoes
    Supper Fast Salisbury Steak, Sarah’s Smashed Potatoes, shredded carrot salad
    Meatballs and gravy, rice, vegetables

    Crepes and fruit
    BBQ chicken quarters, mashed potatoes, vegetable
    Pulled Pork Egg Roll, rice
    Falafel, lentil quinoa salad

    I have the exact same complaint about our CA weather – every year, without fail, school starts and the temps go into the high 90’s and even 100! Ugh… I try not to complain too much though since it’s so mild the rest of the year and everywhere else is freezing.

    For this week:
    Chicken and Biscuit Casserole
    Homemade Fettuccine (however you spell it!)
    Meatballs with pasta and Cream & Berry Sauces
    Oatmeal Buttermilk Pancakes with Berry Syrup
    Potato Soup with Homemade Bread
    Southwest Roll-Ups

  8. I have always said that September and October are the hottest months. Nothing “Fall” about Southern California! But it’s been a pretty mild summer, so hopefully that means it stays cooler! I think last weekend was the first triple digit of the summer?

    Tuesday, we are heading out of town to visit family. So our menu is not real planned out!

    Sunday-Baked loaded Potato Skins w ranch dressing (appetizer night).

    Monday-chicken tortilla soup w chips

      No complaining about Cali weather!!! I cant even count how many triple digit days we’ve had…. ANNNND, we haven’t had rain in over a month. It’s miserable here in Tx. 🙁

    • haha! yes, no complaining is right – I can’t even imagine being in texas right now!

      although I still stand by shifting the school year to start in november – don’t know if it’s like that with you guys, too…may as well be in the pool during the triple digits!

    Short menu this week. Heading to Myrtle Beach for nephew’s Wedding on Thursday so sounds like lots of seafood for the end of the week. Yum

    Sunday – Chicken & broccoli alfredo, salad
    Monday – Parmesan pork chops, ranch potatoes, green beans
    Tuesday – Pesto ham & cheese grilled sandwiches, coleslaw
    Wednesday – Grilled chicken sandwiches w/lettuce & tomato, baked fries, applesauce

    Here is my GF menu for the week
    Sun – “Baked” meatballs in the crockpot & salad
    Mon – Balsamic chicken breasts, broccoli, & salad
    Tue -Leftover meatballs & salad
    Wed – Crockpot orange chicken and broccoli
    Thu – Sausage, frozen veggies, and salad
    Fri – Steak & some sort of veggie ?
    Sat – OUT for dinner. lots of errands to run = blah.

    Tuesday – slow cooker cilantro lime chicken with rice
    Wednesday – zucchini and eggplant Parmesan

    Heat wave for the start of school here too! ugh.

    Sun — grilled chicken, caprese salad
    Mon — spinach, goat cheese, caramelized onion quesadillas, tater tots
    Tues — bbq chicken, green beans, corn on the cob
    Wed — black bean & corn quesadillas with lime crema, fries
    Thurs — quiche Lorraine, fruit salad
    Fri — BLTs, fries, fruit

    Wow — haven’t posted a menu in a LONG time. Back to school, back to routine!

    Sun – lemon chicken thighs, roasted potatoes & green beans
    Mon – Clam chowder, cole slaw, cornbread
    Tue – Cheesy pasta w/vodka sauce, Caesar salad, garlic bread
    Wed РFish & chips, crudit̩
    Thu – Picnic supper for outdoor concert: sausage, cheese, fruit, wine
    Fri – Pizza
    Sat – shrimp boil foil packets on the grill

    My meals are so uninspired!!! Off to check out your Korean beef tacos—they sound wonderful!!!
