Week 451 Menu

Happy New Week, Everyone!

I have a few carry-over items from last week’s meal plan because it was CRAZY HOT this past week and I ended up cooking only a few nights. One of the nights I actually cooked I was wearing my swimming suit. I think officially makes me a Californian, right? Here’s hoping we have 10-20 LESS degrees on the thermometer this week!

MONDAY:
–Caprese Salad with Crusty Bread

TUESDAY:
– Coconut Curry Chicken with Rice (sauce from Costco)
– Veggie

WEDNESDAY:
– BLTs
– Fresh Fruit

THURSDAY:
– Leftovers

FRIDAY:
– Nate and I will be attending Beyond Hunger: A Place at the Table with Heifer International in Beverly Hills! I am SO excited, and not just because I get to wear a sparkly dress and see tons of celebrities. The speakers are going to be phenomenal and we’re having a Malawi trip reunion!
– I’ll either leave pizza money for the babysitter or try to pull something together for their dinner before I head to LA (taking bets on what will actually happen!)

SATURDAY:
– Eat out

SUNDAY:
– Pasta in Cream Sauce with broccoli and chicken added

  1. So, my daughter and I got home from our girls trip to Canada and New York last Sunday, only to have our AC conk out! Of course, the part needed to be ordered and won’t arrive until next week. So, we spent most of last week in the pool or at the beach. Thankfully it’s supposed to rain this week!

    Sunday-Mini Naan Pizzas, Green Salad

    Monday-Pesto Pasta, Sourdough Loaf, Green Salad

    Tuesday-Beef Burritos, Mexican Rice, Corn

    Wednesday-Chili and Cornbread

    Thursday-Mushroom and Bacon Omelets, Fresh Fruit

    Friday-Baked Potato Bar with Chili

    Saturday-At home date night for hubby and I after kids go to bed–menu TBD…Kids will have pizza or spaghetti.

    This week is my birthday so we will be celebrating! I can’t believe I’m already 35. I was doing fine with it until I had to check the next age bracket (35-49) on a form at church – yikes! Anyways, on to the meal plan this week . . .

    Sun: Baked Chicken Parmesan, Pasta, Roasted Asparagus

    Mon: Homemade Pizza, Sliced Veggies w/ Ranch

    Tues: Out for Dinner for my Birthday – Woo Hoo!

    Wed: Baked BBQ Chicken, Baked Potatoes, Broccoli

    Thurs: Spaghetti and Meatballs, Green Beans

    Fri: Crockpot Stew (beef, carrots, onions, potatoes)

    Sat: Grilled Steak with Chimichurri, grilled zucchini, cilantro-lime brown rice

    Survived first week of Kindergarten. No tears, from them or me! 😉
    Monday: Poor Man’s Lobster (using cod), mashed potatoes & brussels sprouts
    Tuesday: Crockpot rotisserie chicken, pasta, green beans
    Wednesday: leftovers
    Thursday: take-out
    Friday: Asian Pork with mushrooms (from Skinny Taste) rice, zucchini
    Saturday: leftovers
    Sunday: Turkey Meatloaf, yams, salad
    Have fun in L.A., Jane!

  5. More business travel for me this week. Meals for the week are prepped and ready to go!

    Sunday: Scallops, corn on the cob, and cranberry sauce
    Monday: Grilled chicken and cranberry sauce
    Tuesday: Burgers on the grill
    Wednesday: Lasagna roll-ups (with ground beef)
    Thursday: Yorkshire pudding
    Friday: Leftovers
    Saturday: Out

    Sunday – buffalo chicken egg rolls, coleslaw, and French fries
    Monday- spaghetti and sausage with salad
    Tuesday- chopped salad
    Wednesday – salmon, asparagus and rice
    Thursday – slow cooker pork , potatoes and salad
    Friday – out
    Saturday- beach day!

    I was on a roll while making this week’s plan. I kept going and have the following week’s already put together. Either this means I might get back on top of things this week, or else things will go supper crazy and I will be very thankful to have it done when next week rolls around. 🙂 Hoping for the first plan.

      Wed: Asian chicken lettuce wraps PF Changs copycat recipe & dumpling soup
      Thurs: Salad with roasted chicken thighs & roasted garlic dressing
      Fri: Out with friends
      Sat: Buffalo chicken sliders with blue cheese & carrot/celery dippers with homemade ranch

    • what in the world is a chicken fried cheeseburger? very curious!

    • Jane, my kids have started thinking of recipes they want me to make, and my second son thought of fried cheeseburgers, so we made hamburgers, battered and fried, then topped with cheese and curly fries and toppings. Everyone thought they were the best, my husband said he wanted more of them, and I couldn’t finish mine :). It was a crazy calorie bomb, but the family was happy :).

    • that is so awesome – love the evolution of the dish, and that you couldn’t eat it all! 😉 might have to try it sometime!

    Mon — sausage & Apple stuffed acorn squash
    Tues — homemade pizza
    Wed — turkey chili topped with avocado
    Thurs — baked potatoes topped with leftover chili
    Fri — breakfast for dinner
