Week 453 Menu

First things first, I’m going to New Orleans this week. If you have knowledge of food that must be eaten there, please tell me in the comments! It’s a girls’ weekend with my mom, sister and sister-in-law and we have three days to eat all of the good food in New Orleans. Help us make that happen!

My menu is filled to the brim with easy meals this week, both for the days when I’m getting ready to leave and for the days when Nate will be home alone with the kids. So basically what I’m saying is this week’s menu is NOT so fancy. But at least it’s still tasty!

MONDAY:
– BLTs
– Fresh fruit and chips

TUESDAY:
– Chicken Fingers and Salad

WEDNESDAY:
– Easiest Ever Chicken Pot Pie

THURSDAY:
– Hot dogs
– Baked beans and fresh fruit

FRIDAY:
– Eat out

SATURDAY:
– English Muffin Pizzas (the kids LOVE making these with Nate when I’m out of town, it’s so cute!)

SUNDAY:
Turkey Boursin Baguettes
– Fresh fruit and chips

    Returning from 2 weeks of vacation followed by an immediate full week of business travel. I am looking forward to being home and cooking this week.

    Sun: Shrimp & corn chowder, salad
    Mon: Maple glazed salmon, green beans, cous cous
    Tue: Pumpkin chicken chili, cornbread
    Wed: Homemade crispy baked fish nuggets, peas, coleslaw
    Thu: Leftovers
    Fri: Egg & green olive salad sandwiches, chips
    Sat: Pasta with red sauce, salad, garlic bread

    These past few weeks I have been realizing how long it takes us to make lunch, our main meal. By the time I make it, eat it and clean up 2 hours are gone out of my day. This seems to be way too much time. So I am hoping to find ways to shorten it. One of those is by making things ahead. For example, the meatloaf is already made and in the freezer. The recipe I use makes two loaves, so I usually bake one and freeze the other. Any one else have some ideas? My other thought was making simpler meals.

    mmmmmmmmmm I haven’t had chicken pot pie in forever, I’ll have to check that recipe out!

    A MUST for NOLA is Elizabeth’s. Take a cab or an uber. It’s a long walk from the quarter. Their breakfast is divine. Praline bacon is a definite. I would go with two orders. One won’t be enough.

    Have fun in NOLA! You must try Central Grocery for the finest muffuletta in the all the land.

    Monday: Grilled ribeye with blue cheese butter & roasted carrot, shrooms, and shallots & salad with roasted garlic dressing
    Tuesday: Turkey tacos
    Wednesday: Beef Stroganoff & Apple, endive, walnut, & blue cheese salad
    Thursday: King Ranch chicken casserole & garden salad
    Friday: Not sure yet – something Fall-ish
    Saturday: Wedding shower, no cooking!

    Have a blast in NO!I haven’t been in a LONG time, but enjoyed every morsel from every trip.
    I need to make that easy chicken pot pie. Bill would love it.
