Week 457 Menu + Some Fun News!

Hi everyone! Before we get to today’s menu, I want to share some news. Drumroll…dundundundundundundun….I am launching This Week for Dinner: The Podcast the first week of November! I can’t WAIT to share it with you! Each episode will feature an interview with someone awesome sharing favorite recipes and kitchen tips…and often much more than that! I keep saying the word “excited” in reference to the podcast, but it really is the perfect word. I am, quite simply, excited! Whenever I walk away from working on the podcast (which is a lot lately!), I feel happy and uplifted and PUMPED about it all. The podcast is just so much fun and pretty soon I’ll be able to share all of the fun with you, too! So, stay tuned. Launch date is coming SOON!

    Tues: Roasted chicken thighs with roasted fall veg
    Wed: Cous cous, feta, and veggie stuffed peppers (Smitten Kitchen recipe) & sliced eggplant baked with Parmesan
    Thurs: Working late, Bf cooks
    Fri: Girls’ night out
    Sat: Making app for Halloween party – probably baked Brie

    Monday – ordering in – Hoagies (all kids home for dinner! Two in from out of town)
    Tuesday – Salmon with rice and a veggie
    Wednesday – chili
    Thursday – leftovers?
    Friday – out

  7. How fun! I can’t wait to hear the podcast!

    Sunday-Hubby finally used his Christmas gift of a Traeger, and we smoked a tri tip roast. Served it with homemade garlic, herb, parmesan potato wedges, and broccoli.

    Monday-Tri-Tip Stuffed Loaded Baked Potatoes, Broccoli

    Tuesday-Date Night for my birthday

    Wednesday-Tri Tip Nachos

    Thursday-Stromboli and Salad

    Friday-My Birthday!!!!! Whatever I want!


  8. Also, I noticed you’re having chili with tortilla chips? Have you ever tried the Organic Corn Chips (aka Fritos) from Trader Joes? They are our absolute favorite for chili!

    Monday- German: bratwurst, sauerkraut, spaetzle and creamed leaks
    Tuesday – Chicken tortilla soup, chips and guac
    Wednesday- Spaetzle soup, bread and salad
    Thursday- Chicken legs and spaghetti.
    Weekend: shrimp fried rice and whatever I can find. The kid will be at his dad’s house and I will be studying all weekend.

    Tuesday: pumpkin mac & cheese
    Wednesday: out to eat
    Thursday: leftovers
    Friday: sriracha fried rice
    Saturday: smoked sausage
    Sunday: roasted chicken
