Week 459 Menu and WE SAW THE MISSILE!

I just walked in the door from a weekend camping with my girls at Joshua Tree National Park. My friends Tracey Clark and Catherine Connors hosted a Girls Adventure Weekend. There were 6 moms total with 7 daughters between the ages of 8 and 12. It was a magical weekend.

In addition to all the awesome girl power magic, we saw the trident missile that the Navy tested last night over the ocean off the coast of San Diego. There is no cell coverage in Joshua Tree, so after we saw the strange light in the sky we decided that aliens had finally come to Earth. We learned the next morning, however, from neighboring campers with a radio that the light had been a classified Navy missile test, but that’s all we knew. When I got home Nate said that Twitter pretty much exploded last night when it happened. All the videos and photos that are online don’t even come close to how amazing and strange and beautiful it was. We suddenly saw a large, very bright, defined white light with a tail traveling horizontally across the sky, which lasted maybe a minute or two. The light left an effervescent blue-green trail behind it, and surrounding the entire area was a huge white circle, with a defined edge and yet completely foggy looking in an otherwise very clear sky. The white circle faded after about 10 minutes and the fuzzy bluish streak glowed for about 20 minutes. It was CRAZY. We feel lucky to have had such an amazing view, in the desert with its dark and massive sky.

Okay, back to Earth. Menu time!

MONDAY:
– Loaded Nachos

TUESDAY:
Naan Pizzas (margherita)

WEDNESDAY:
Pancakes (Nate’s gonna be home late that night…he hates pancakes for dinner, but the kids love it!)
– Bacon and fruit

THURSDAY:
BBQ Pulled Pork Sandwiches
Coleslaw

FRIDAY:
– Leftovers

SATURDAY:
– Leftovers or take out night (if not enough leftovers!)

SUNDAY:
– Breakfast burritos (didn’t do these last week!)

  1. Oh my gosh! The missile viewing sounds amazing! When we lived in FL, we saw several shuttle launches. Simply amazing. I’m home for the whole week…no travel. Hooray!

    Sunday: Out after the high school musical

    Monday: Pasta

    Tuesday: Orange beef and rice

    Wednesday: French toast casserole

    Thursday: Chicken noodle soup in slow cooker (7yo’s recipe)

    Friday: Pizzas

    Saturday: Roast chicken

    Sun: Back from out of town – grabbed a salad to go.

    Mon: Bf cooks – steaks and veggies, I think.

    Tues: Shepherds pie & pear, walnut, blue cheese salad

    Wed: Roasted peppers stuffed with chicken and rice & kohlrabi salad

    Thurs: Tomato-lentil soup & cucumber, tomato, feta salad

    Fri: Salad with roasted chicken thighs and roasted garlic dressing

    Sat: My and the BF’s anniversary – I’m thinking maybe scallops.

    That camping trip sounds amazing!

    Sunday: Shrimp pad thai.
    Monday: Junk salads (aka everything but the kitchen sink salads).
    Tuesday: Chicken gyros and grilled veggie salad (zucchini, peppers, red onions & mushrooms) with a lemon vinaigrette.
    Wednesday: Buffalo chicken french breads and roasted broccoli.
    Thursday: Buttercup squash flatbreads with goat cheese and side salads.
    Friday: Chorizo, potato and goat cheese burritos.
    Saturday: I’m going to a cookbook potluck party while the rest of the family is eating out Mediterranean for a fundraiser. I’m making the desserts for the party: Rum rice pudding and black & white mousse. I’ll leave some dessert for my family before I leave.
    Sunday: Right now I’m thinking a white chicken chili.

  7. I am actually a bit late in getting lunch started, as I should be doing that rather than sharing our menu right now. 🙂 Cool about the missile. That must have been a strange sight to see and not know what it was.

    Sunday – Purse Bash, no winner here but we had a great time and good food… Baked chicken, penne and meatballs, little ham and cheese sandwiches, mixed veggies and salad
    Monday – Salmon patties, cabbage & noodles (from the freezer)
    Tuesday – Church Dinner – Spaghetti, meatballs, salad and bread
    Wednesday – Parmesan chicken bake w/ziti noodles, garlic bread
