Hello! It’s birthday week around these parts, so it’s going to be a busy and fun week. One of my “things” as a mom is makingΒ fun birthday cakes for my kids, but this year Anna wanted a stack of donuts and Cate wants chocolate cupcakes with vanilla frosting. Part of me is relieved, as the cakes normally take hours to make at this the busiest time of the year, but admittedly I am also sad. But if the kids are happy, that’s what matters!

I just found your blog tonight, and here you are talking about birthday week, and today is my birthday. So cool!
I happened across your blog while randomly searching for dessert recipes, which is what I tend to do when I’m totally burned out on cooking for the family and I have no idea what to feed them this week. (I found your “Swedish” Apple Pie, I’m gonna try that. I’ve been wanting pie, but really not wanting to make crust.)
I don’t mind the cooking part, but I’m terrible with planning, just terrible. I couldn’t plan my way out of a paper sack, I tell ya. And these people eat every single day! π Every time I turn around, it’s like, “Mom! What’s for lunch? What’s for dinner?” (They’re all big enough to do their own breakfast, so there’s that, yay!)
Anyway, so it’s a fun coincidence to find “This Week for Dinner” on my birthday.
Now I gotta go make my weekly grocery list. So far it just says ‘apples’.

My dad just got a very shocking and scary diagnosis this week, so I’m not much in the way of cooking. I think homemade Mac and cheese tonight, meatballs over egg noodles tomorrow, and breakfast burritos sometime later on in the week. Can you tell I’m in the mood for comfort food? π

We’ve settled on some new favorites that are repeated often in the menu! Luckily, the items are varied enough to keep me sane. π
Sunday: Out after Live Nativity at church
Monday: Hamburgers on homemade buns with salad
Tuesday: Breakfast for dinner (scrambled eggs, sausage, & toast) and broccoli
Wednesday: Dry rub ribs in the slow cooker (requested AGAIN this week…sooooo good!) and cranberry sauce
Thursday: Cacio e pepe and broccoli slaw
Friday: Leftovers
Saturday: Out
My December birthday baby didn’t want any cake at all this year – just a big bowl of his favorite ice cream (Reese’s Peanut Butter). I can handle that! π
This week we are keeping it easy since I’m sick… Yay! π
