Week 468 Weekly Menu

Hello! Hope the first week of January went great! I am super grateful so many of you posted menus last week because they served as my inspiration for our meals this week. So helpful! Here’s my plan for the week.

    Monday: Homemade pizza with Trader Joe’s crust (garlic/olive oil, zucchini & ricotta & pesto topped with fresh arugula after cooking)

    Thursday: roasted beer can chicken
    Friday: book club potluck
    Saturday: eat out

  4. There are a few meals that are on my list, yet again. This week, this week, I want to use them and move on. There are also a few new ones. We’ll see how it works out.

    Friday – Popcorn chicken, buttered noodles, applesauce
    Saturday – Leftovers

  8. The temperature is down to -1º. I have one slow cooker recipe this week…..time to break out all the others! 🙂

    Tuesday: Baked General Tso’s chicken with rice

    Wednesday: Chicken carnitas

    Thursday: Nachos with leftover carnitas

    Friday: Leftovers

    Saturday: Coconut shrimp (ATK recipe) with cauliflower rice and butterhorns

    Monday: Bf cooks
    Tuesday: Red chili chicken and rice (Rick Bayless recipe) & green salad
    Wednesday: Broccoli Beef and Rice
    Thursady: Chicken-lentil fricassee & green salad
    Friday: Out
    Saturday: Not sure yet

  11. My dad is coming home from skilled care rehab after completing radiation (he’ll be starting outpatient chemo in a couple weeks), so I am going to try and make a few meals for my parents freezer…so most of the meals this week keep or freeze well.

    Sunday-Pepperoni Pizza. Fresh Veggies

    Monday-Pasta with Tomato Cream Sauce, Roasted Broccoli, Rosemary Bread

    Tuesday-Beef and Vegetable Stew with Crescent Rolls

    Wednesday-Mexican Lasagna, Black Beans, Green Salad

    Thursday-Breakfast Potato, Bacon, and Egg Hash with Fresh Fruit


    Saturday-Sister’s 20th Anniversary Vow Renewal Celebration

    Sun: fresh homemade pasta with anchovy and parsley sauce
    Mon: falafel, veggies, pita, and tzatziki sauce
    Tue: chicken fried steak, mashed potatoes, roasted Brussels sprouts
    Wed: lemon pepper pappardelle, garlic butter, roasted tomatoes, shrimp
    Thu: chicken and dumplings
    Fri: three bean chili

    Broccoli (and frozen foods, including veggies and fries) seems to be my theme this week

    Sun- roast chx, broccoli topped with Kraft Parmesan cheese, Lima beans
    M- spaghetti, garlic toast, salad
    T- stuffed potatoes with mozzarella cheese, broccoli and salad
    W- grilled cheese and ham sandwiches and sweet potato fries, salad
    Th- frozen pizza night + salad
    F- trying barber foods frozen broccoli cheese chicken, salad green beans

  14. Sunday: Hawaiian BBQ Pulled Chicken Sandwiches
    Monday: Skillet Italian Sausage & Rice – also planning on jazzing it up by adding extra rice & some red beans”¦ yum 🙂
    Tuesday: Bacon Cheeseburger Quiche/Pie depending on what I feel like 🙂
    Wednesday: leftovers
    Thursday: working late”¦ so something simple after I get home
    Friday: out to eat
    Saturday: Mom’s Lasagna
