Week 469 Weekly Menu

Hey everyone. Can’t believe we are halfway through January. Bananas! My compost bin arrived so we’re going to start composting this week and get moving with this year’s resolution. Exciting!

I have a few carry-over items from last week’s menu on this week’s menu. I have been cooking, I just ended up with extra meals based on the groceries we had. Plus we unexpectedly met out of town friends last night at the Anaheim Packing District, which is a fun place with great food, by the way. It’s a little busy on the weekend, fair warning, but it’s great! And there is a park area just outside that is perfect for the kids to run around and be crazy, including sliding down the astroturf hill with pizza box lids as sleds!

    Somehow I had forgotten that my one kid, who attends public school, had no school today. Thankfully the meals were already planned as the added dynamics, and my lack of structure for the morning, created quite the chaos at first.

    I was so glad to know ahead of time what it was we were going to be eating. I knew it was something that needed about 2 hours in the oven, so I was able to start earlier than normal getting it ready.

    My plan for leftover from last week? Lunches to send to school. We don’t normally have leftovers hanging around, so I am sort of happy to have that little detail taken care of ahead of time. 🙂

    Congrats on the composting! Our compost bin is mostly banana peels, egg shells, coffee grounds, and compostable tea bags.

    Trying some new recipes this week – crossing my fingers!

    Slow Cooker steak burritos
    White Bean Chicken Chili
    Pasta Night
    Pancakes – bought the “Kodiak Cakes” mix at Costco – heard it was good, giving it a try.
    Eat out – We used to only eat out one night a week during football season (because it gets sooo hectic in our house at that time) but now I really enjoy the convenience of it so I’m keeping it on our menu from now on! (especially since we’re now onto basketball season so I think it just makes sense). 🙂

    Tuesday: My class night – I have no idea what they ate!
    Wednesday: Teriyaki salmon, spinach, mustard carrots
    Thursday: Eggs, baked beans, hot dog slices, corn, corn muffins
    Friday: Pasta puttanesca
    Saturday: BLIZZARD! Baked yams with black beans and fresh mozzarella
