Week 470 Weekly Menu

Hey everyone! I’m getting to the meal planning a little late today, but at least I’m getting it done, right? I have some travel this week (visiting the General Mills headquarters), so it’s gonna be a little crazy and not a typical week.

    Wednesday: Italian Meatloaf (from Hello Fresh)
    Thursday: Chorizo Flatbread Pizzas
    Friday: Sugar-Rubbed Pork Chops (from Hello Fresh)
    Saturday: Potato Salad with Pine Nuts, Olive, and Dill and Smoking Grilled Shrimp
    Sunday: Lemony Chicken Paillard (from Hello Fresh)

    Sun: Potato/Sweet potato latkes with sour cream & applesauce
    Mon: Bf cooks – Chicken Pho
    Tues: Loaded baked potato soup & rolls
    Wed: Roasted chicken thighs atop salad with avocado, cheddar, croutons & tomato vinaigrette
    Thurs: Working really late, so probably out to eat
    Fri: Mushroom Bourguignon(Smitten Kitchen recipe) over egg noodles & green salad
    Sat: Who knows

    This is also a slightly crazy week here. My husband has class 2 nights this week and I will be gone for lunches 3 days. If all works out as planned, we will both only be eating 1 meal out. I have a few others that I can make ahead (the plan for tonight) and have ready to use as meals in lunch boxes. Taking out lunches with us is not a normal part of our routine any more, as my husband is usually able to come home for lunch. I had forgotten the different thinking it takes to make meals ahead of time and not rely on sandwiches alone.

    4. Dad’s Meatloaf with Tomato Relish, peas, rice
    5. Pulled Pork Sandwiches with potato salad
    6. Salad
    7.Chinese Barbecued Pork, rice, steamed vegetables

    2. Broiled fish, quinoa, steamed veggies/tomato soup
    3. Salad
    4. Crockpot Chicken/tomato soup
    5. Black Bean Burgers
    6. Home Fries/Breakfast for Dinner

    Monday – Salmon, rice and veggies
    Tuesday – Soup and salad
    Wednesday – broccoli and cheese baked potatoes and salad
    Thursday – out – business dinner
    Friday – Pasta casserole
    Saturday – leftovers

    This is mostly repeat from last week. I had a funeral to go to (it was a really hard day so we went out to eat), I was sick and one night I went out and the kid had a babysitter.

    Mon- Roasted Rosemary and Lemon Chicken, potatoes and carrots.
    Tues- Salmon, orzo and broccoli
    Wed- Sloppy Joes and probably a Chocolate cake for National Chocolate Cake Day
    Thursday- Chicken leg and spaghetti
    Weekend- Mommy food since the kid is at his dad’s. Pierogis, Tuna Melts and homemade soup.

    Sun — roast chicken, honey glazed carrots, broccoli
    Mon — chicken Cesar salad (with leftover chicken)
    Tues — lentil shepherds pie
    Wed — homemade pizza
    Thurs — tuna noodle casserole
    Fri — french toast

    Sun: homemade fettuccine with bolognese sauce
    Mon: leftover vegetarian chili from last week
    Tue: coconut chicken curry with naan & rice
    Wed: quinoa salad with mixed greens, bacon, feta, almonds
    Thu: lemon pepper pappardelle with shrimp
    Fri: leftover chicken curry
    Sat: homemade spaghetti with anchovy aglio e olio

    Friday: Date Night, Kids are having Chicken and Rice
    Saturday: Chorizo and Manchega Strata and Fresh Fruit

    Pulled out a 10 lb bag of Chicken quarters from the freezer so lots of chicken on this weeks menu.

    Monday – Crispy oven thighs, garlic butter noodles, Brussel sprouts
    Tuesday – Honey glazed chicken quarters, scalloped potatoes, Brussel sprouts
    Wednesday – Chicken, black bean & corn quesadillas
    Thursday – Hot dogs and fries
    Friday – Leftover quesadillas
    Saturday – Chicken orzo soup and High School Band Sub

    Sat: pork tenderloin, applesauce, baked sweet potato
    Sun: stuffed quahogs, spring mix salad with balsamic
    Mon: ravioli in vodka sauce, green beans
    Tues: chicken cutlets, roasted asparagus/carrots, garlic bread
    Wed: pizza, salad
    Thurs: omlettes, fruit salad
    Friday: not sure yet

    Wednesday: Dry rub ribs in the slow cooker and green beans

    Thursday: Homemade pizzas

    Friday: Leftovers

    Saturday: Teriyaki meatballs
