Hey everyone! I’m getting to the meal planning a little late today, but at least I’m getting it done, right? I have some travel this week (visiting the General Mills headquarters), so it’s gonna be a little crazy and not a typical week.

This is also a slightly crazy week here. My husband has class 2 nights this week and I will be gone for lunches 3 days. If all works out as planned, we will both only be eating 1 meal out. I have a few others that I can make ahead (the plan for tonight) and have ready to use as meals in lunch boxes. Taking out lunches with us is not a normal part of our routine any more, as my husband is usually able to come home for lunch. I had forgotten the different thinking it takes to make meals ahead of time and not rely on sandwiches alone.

3. Pizza
4. Dad’s Meatloaf with Tomato Relish, peas, rice
5. Pulled Pork Sandwiches with potato salad
6. Salad
7.Chinese Barbecued Pork, rice, steamed vegetables

2. Broiled fish, quinoa, steamed veggies/tomato soup
3. Salad
4. Crockpot Chicken/tomato soup
5. Black Bean Burgers

This is mostly repeat from last week. I had a funeral to go to (it was a really hard day so we went out to eat), I was sick and one night I went out and the kid had a babysitter.
Mon- Roasted Rosemary and Lemon Chicken, potatoes and carrots.
Tues- Salmon, orzo and broccoli
Wed- Sloppy Joes and probably a Chocolate cake for National Chocolate Cake Day
Thursday- Chicken leg and spaghetti
Weekend- Mommy food since the kid is at his dad’s. Pierogis, Tuna Melts and homemade soup.
Sat — hamburgers, chips
Sun — roast chicken, honey glazed carrots, broccoli
Mon — chicken Cesar salad (with leftover chicken)
Tues — lentil shepherds pie
Wed — homemade pizza
Thurs — tuna noodle casserole
Fri — french toast
Sun: homemade fettuccine with bolognese sauce
Mon: leftover vegetarian chili from last week
Tue: coconut chicken curry with naan & rice
Wed: quinoa salad with mixed greens, bacon, feta, almonds
Thu: lemon pepper pappardelle with shrimp
Fri: leftover chicken curry
Sat: homemade spaghetti with anchovy aglio e olio
Monday: Salami and Egg Sandwiches with Fresh Fruit
Tuesday: Pasta Fagioli and Ginger Ale Carrots
Wednesday: Salisbury Steaks and Quick Shells and Cheese (PW’s)

Pulled out a 10 lb bag of Chicken quarters from the freezer so lots of chicken on this weeks menu.
