Week 473 Weekly Menu

Hi everyone! So, two things. First, my menu this week is kinda lame. I’m traveling early in the week (visiting the Ben & Jerry’s headquarters, so fun!), so it’s easy meals that the kids picked for Dad to make. Then, next weekend, we’re going on a little trip to Los Angeles. So, not much cooking happening!

Second thing, I might be on NBC Nightly News this week with the kids making dinner. A filming crew came to the house Friday, taped us cooking and interviewed me quite extensively about the issue of “natural” food labels. All I know is the story will probably air early this week. So, if you want to try to catch it, I suppose just set up your DVR to record the show all week. You never know how these stories will get edited, so there’s a chance we won’t even be in the story. But we also very well could be! So…um…I guess watch it. I’m actually pretty anxious about it all, so if no one sees it, it’s all good! 😉

I am not even bothering making the printable PDF for you this week because, well, it’s pretty much the lamest menu ever. But lame menus usually mean fun times, right? 😉

    Sunday – Valentine dinner with my valentine! Lobster tails for appetizer then Roast lamb, asparagus, scalloped potatoes and stuffed cherry wontons for dessert!
    Monday – Salmon, french fries and squash
    Tuesday – black bean soup in the crockpot
    Wednesday – leftovers
    Thursday – i think more leftovers!
    Friday – out
    Saturday – Daughter’s birthday !( she’s 30! where has the time gone!)

  2. Monday: Jamie’s Incredible Sicilian Eggplant Stew
    Tuesday: Roasted Smoked Eggplant Curry over rice
    Wednesday: out to dinner for Matt’s birthday
    Thursday: Lemon Roasted Portabello Mushrooms
    Friday: Mushroom Wild Rice Soup
    Saturday: Swiss Chard and Butternut Squash Lasagna
    Sunday: Gnocchi Skillet with Sweet Potatoes, Greens & Goat Cheese

    I cooked a batch of pinto beans in the slow cooker yesterday, and bought a bunch of presliced cabbage. Using those this week where I can.

    Sun- leftover steak sandwiches with cabbage and mustard, salad
    Mon- turkey burgers + beans, coleslaw
    Tues- picking up 6 tacos for Del Taco Tuesday special (3 tacos for $1.29) + the pinto beans & coleslaw
    Wed- English muffin pizzas (good idea, I have some in my freezer), salad
    Th- pasta (with leftover sauce from the pizza night), salad
    Fr- crockpot meatballs
    Sat- eat out

    Sun: Tri-colored heart shaped pasta with white parmesan sauce and pink shrimp, salad, chocolate covered strawberries
    Mon: Stuffed shells, garlic bread, salad
    Extended business trip for 2 weeks- hubby figuring out meals on his own

  5. Sunday: Pizzas, breadsticks, and broccoli after Goodnight Moon theatre production
    Monday: Cacio e pepe and green beans
    Tuesday: Chicken nuggets
    Wednesday: Pumpkin chicken chili in slow cooker
    Thursday: Individual pizzas and salad
    Friday: Leftovers
    Saturday: Husband is speaking at a photography conference; snacky dinner with the kiddos – crackers/cheese/sausage/hummus, and buffalo cauliflower bites

  6. Is it weird that I’m feeling an almost motherly sense of pride for you being on NBC Nightly News? Seeing you get all famous and grown up and stuff since the days of puffed oven pancakes. Really awesome, Jane. 🙂

    Tuesday – Noodles w/beef and mushrooms
    Wednesday – Tuna melt quesidillas
    Thursday – Leftovers
    Friday – Teriyaki steak w/brown rice
    Saturday – High school sub & vegetable soup

    Thurs: Loaded Baked Potato (loaded sweet potato for me) & Warm Goat Cheese Salad
    Fri: King Ranch Chicken Casserole (using leftover chicken from roast chick) & Chayote Salad
    Sat: Out with friends
