Week 476 Menu

Greetings from Chicago! I’m here working the booth for Magic Chef at the International Housewares show, doing recipe demos for 3 days. One day in and so far so good! And, amazingly, I got my meal plan together before I left for the trip. The trick will just be getting to the grocery store as soon as I get home so I actually can cook!

  1. Welcome to Chicago! Our life is nearly back to normal. One more week of traveling – this time my husband is at a photography conf in Las Vegas (sounds rough!).

    Sunday: Orange beef, General Tso’s chicken, tofu, broccoli, and rice for a family birthday party!
    Monday: Homemade chicken nuggets and asparagus
    Tuesday: Homemade pizzas
    Wednesday: Pumpkin muffins and green beans
    Thursday: Baked sweet potatoes and BBQ cranberry sauce
    Friday: Leftovers
    Saturday: Shrimp, onion, mushroom, red pepper skewers and ginger fried rice

    Ugh…too many heavy eating days last week…we’re trying to keep it lighter this week!

    Sunday: Chinese takeout
    Monday: Chicken thighs, roast potatoes, peas
    Tuesday: Rehearsal night – sandwiches
    Wednesday: Roasted red pepper salmon with chickpeas
    Thursday: Dilled chicken salads
    Friday: Herbed tortellini
    Saturday: I have a show; family fends/eats leftovers

    Trying to eat less meat this week.
    Sun: Veggie & Lentil Soup
    Mon: Bf cooks
    Tues:Pesto Pasta with Melted Cherry Tomatoes & green salad
    Wed: Roasted Chickpea & Veggie Pitas with Tzatziki
    Thurs: Work late – Bf cooks
    Fri: Either out or take-out
    Sat: Leaving for NOLA!

    Wed: Dry-rub ribs, cabbage, and sweet potatoes
    Thurs: Sausage, zucchini, and roasted root veggies
    Fri: Chicken taco bowls with black beans, plantains, and guac
    Sat: Hamburger Soup
    Sun: Leftovers

    Sun – roasted carrots with farro and chickpeas; roasted cauliflower soup with sweet potato chips
    Mon – Cajun crab and rice casserole
    Tue – gnocchi with brown butter and sage
    Wed – sausage, onions, and peppers over pasta

    Fri – roasted cauliflower and lentil tacos with creamy chipotle sauce
    Sat – homemade pasta with anchovy sauce

    Hello, I just wanted to thank you for offering dinner menus for all these years. For a long time now, I have come to your site EVERY time I make my grocery list and I find ideas for what to make. I read you list, and then I scroll through everyone elses. Thank you for offering this and continuing the awesomeness! Ashley
