Week 483 Weekly Menu

Hello friends! This week I am traveling up to Laguna Beach to speak at the Mom 2.0 conference (so excited!), so I am planning meals that are simple and generate a lot of leftovers. And there are a couple nights out. It’s kind of a funny week, but having the dinner plan ready to go is definitely starting the week out right!

    Tuesday: Creamy Vegan Eggplant Pasta w/grilled chicken
    Wednesday: Vegan Pesto and Bechamel Pasta Bake
    and then I’m out of town until Monday!

    Friday: Out To Eat
    Saturday: Enchilada Casserole, Avocado, and Tomato
    Sunday: Left Overs

    I wasn’t able to decide on sides for some meals this week. I’ll just have to wing it.

    Monday: Eggs, potatoes, and asparagus
    Tuesday: Spaghetti with meat sauce
    Wednesday: Dinner in Philly – seeing a friend’s show
    Thursday: Chili
    Friday: Gingered-beef roll-ups
    Saturday: Dinner in Philly – friend seeing me in a show

  5. Sunday: Dinner at Bible study….I brought Buttered Popcorn Cookies

    Monday: Shrimp with buttered noodles

    Tuesday: Homemade calzones

    Wednesday: Baked sweet potatoes in slow cooker

    Thursday: Slow cooker ribs

    Friday: Leftovers

    Saturday: Out…Grandparents here!

    Wed- Posole (with leftover carnitas)
    Thur- eating at the baseball game
    Fri- homemade pizza
    Sat- on my own so we’ll see
    Sun- BBQ ribs, twice baked potatoes, corn and salad- Boston cream pie for dessert (we are trying Sunday night dinners again)

    Sat – Leftovers
    Sun – One Pot Sausage Pasta
