Week 487 Weekly Menu

Hi friends! Okay, I have several carry-over items from last week’s menu because I never made it to the grocery store. KISS OF DEATH. This week is gonna be different!

MONDAY:
Grilled Salmon with rice and broccoli

TUESDAY:
Sausage, Pepper & Onion Hoagies

WEDNESDAY:
– Steak Salad
– Roasted potatoes

THURSDAY:
– Leftovers

FRIDAY:
– Veggie omelets

SATURDAY:
– Boys on their own! I’m going camping with the girls in Joshua Tree (yes, again!)

SUNDAY:
– Boys on their own!

  1. Today is my baby’s 4th birthday. I’m out of the toddler stage forever. Cue tears. How did this happen?! Lol. Anyway, we’re making his favorite meal tonight. The rest of the week will be fridge clean out since I need to take it easy recovering from surgery last Friday, and next week we will be out of town at a wedding.

    Sunday-Junior’s Birthday
    Grilled Rosemary Ranch Chicken
    Grilled corn on the cob
    Baked potatoes
    No veggies in honor of his special day 😉

    Monday-black bean chili
    Cornbread

    Tuesday-Something with stew meat. Can’t decide stew, stroganoff or something else.

    Wednesday-leftovers

    Thursday-chicken tacos, steamed carrots, black beans

    Friday-pizza and salad

    Saturday-out to eat

    Sunday – Cauliflower burgers and pickled spiraled veggie salad (my husband is away for a few weeks -so I’m trying for a few vegan/vegetarian weeks)
    Monday – leftover tofu and eggplant with quinoa
    Tuesday – leftover cauliflower burger and salad
    Wednesday – at my daughter’s for dinner -black bean burgers
    Thursday -black bean tacos
    Friday – eggplant stacks and salad
    Saturday – leftovers

    Wednesday: Chicken and Rice and Corn
    Thursday: Stuffed French Toast and Fresh Fruit

    Saturday: Ham, Biscuits and Pepper Jelly
    Sunday: Left Overs

    Sunday: My birthday! Indian food by request.
    Monday: Leftovers. Indian food/chili.
    Tuesday: Olive-artichoke ravioli.
    Wednesday: Poached eggs in purgatory/Mexican rice.
    Thursday: Lemon-shrimp-asparagus soup.
    Friday: Out teaching a workshop…family fending.
    Saturday: Not sure yet – probably involving leftovers in some way.

    goulash, broccoli
    chicken bacon orzo soup
    baked fried chicken, cole slaw (I use the Chick Fil A copycat recipe)
    chicken quesadillas

    Hooray for a holiday weekend!

    Monday: spaghetti, fresh whole wheat bread, corn on the cob

    Tuesday: homemade pizza

    Wednesday: breakfast burritos

    Thursday: grilled chicken, sweet potato quinoa salad (my favorite),

    Friday: teriyaki meatballs, rice/quinoa, broccoli

    Saturday: slow cooker kalua pork (use for cafe rio pork tacos/salad and freeze some for later)

    Sunday: Slow cooker spicy coconut chicken drumsticks with rice

  10. Whew! Back after a week of hiatus. I was out of town for work last week, and it’s good to be home!

    Sunday: Out

    Monday: Tacos

    Tuesday: Pumpkin pancakes

    Wednesday: “Florida Dinner:” Rice and beans with cornbread

    Thursday: Homemade chicken nuggets and a href=”http://www.foodnetwork.com/recipes/curried-rice-pilaf-recipe.html”>curried rice pilaf with diced apples

    Friday: Leftovers

    Saturday: Grilling out (hot dogs, asparagus on the grill, shaved brussels sprout salad)
