Today is my baby’s 4th birthday. I’m out of the toddler stage forever. Cue tears. How did this happen?! Lol. Anyway, we’re making his favorite meal tonight. The rest of the week will be fridge clean out since I need to take it easy recovering from surgery last Friday, and next week we will be out of town at a wedding.

Wednesday: Poached eggs in purgatory/Mexican rice.
Thursday: Lemon-shrimp-asparagus soup.
Friday: Out teaching a workshop…family fending.
Saturday: Not sure yet – probably involving leftovers in some way.
