Week 520 Weekly Dinner Menu

Happy 2nd Week of January! Last week went great with my menu and I am starting this year off right in the kitchen. I’m actually excited about cooking again, which makes me so happy! Here’s what’s cooking this week…

  1. Back from vacation! It was GREAT!…but now we have to go back to “real life” after 2.5 weeks of Christmas Break. Boo.

    Since I didn’t weight in last week, my culinary New Year’s resolutions are: 1) Make veggies the “star of the plate” most of the time and 2) Make/cook/buy healthier snack food.

    Sunday: Pizza from our favorite place
    Monday: Meatballs and crudite
    Tuesday: Zoodles in marinara
    Wednesday: Chicken and Asparagus Foil Packets (sweet potato for me)
    Thursday: Leftovers
    Friday: Blue Apron (husband cooks)
    Saturday: Out

    Monday- salmon, rice, asparagus and salad
    Tuesday- out after a meeting
    Wednesday-layered salad
    Thursday- chicken breast, Brussels Sprouts and baked potato

    Yum! Your menu looks great.

    This weeks menu at La Ferme Bon Rea is as follows:
    Mon.: (homestead raised) Lamb stew with butternut squash, apples and garlic cauliflower mash;
    Tues.: Spaghetti squash w/bacon, spinach & goat cheese salad;
    Wed.: Chicken & potatoes w/garlic parmesan cream sauce & green salad;
    Thurs.: French Onion Soup Au Gratin stuff meat loaf (courtesy of Mr. Moo, our grass fed steer) & steamed mixed veggies
    Fri.: PIZZA NIGHT (and leftovers for mom and dad if we’re not in the mood for gf pizza);
    Sat.: Chimichurri chicken, roasted potatoes and Cesar salad;
    Sun.: Greek lemon chicken soup

    I’m totally stoked that we stuck to our menu last week and I’m really looking forward to this weeks menu. We’ve got flooding going on all around us, so tomorrow I get the day off, so I am going to try to get all the food preparations done for this week’s menu to hopefully simplify the cooking this week, and then I can go ahead and focus on getting out and working out instead of chopping veggies and meal preparations.

      I’m always so happy when I prep food ahead of time…although I rarely do it. it’s just so helpful during the week!

    Tuesday. Chicken stir fry

    Wednesday. Chicken fajitas

    Thursday. Naan pizzas

    Friday. Rice and bean burrito with veggies

    Tues: Shrimp Fried Rice, Sesame-Cucumber Salad

    Thurs: Tomatillo Chicken Enchiladas & Spanish Rice
    Fri: Italian Pot Roast, Mashed Potatoes, & Salad

    Saturday – High school band sub and broccoli soup

    Detoxing off December carbs! Went to Trader Joe’s and bought veggies! Eggplant, spinach leaves, carrots, green beans. It’s a start!

    M- tuna spinach salad
    T- veggie-loaded meatloaf, green beans
    W- takeout or corn tortilla quesadillas
    Th- chicken piccata (trader joes) and mashed potatoes (reheat from freezer)
    F- pork carnitas
    S- homemade pizza (trader joe’s dough)
    S- spaghetti pork ragu with roasted eggplant and onion (using leftover pork from Fri)
