How is it WEDNESDAY? I have been working on my menu since Sunday. It is happening. It is happening. Here we go!

    Tuesday: Good Morning Ramen
    Wednesday: My son’s 4th birthday–Macaroni and Cheese, Peas and Rainbow Chip Cake
    Thursday: Meatball Pasta Bake
    Friday: Pulled Pork Hash with Eggs and Tomatoes and Avocados
    Saturday: Wings and Salad
    Sunday: Chinese Lemon Chicken, Rice and Green Beans

      It was! Plus I got to try out Milk Bar’s Rainbow Chip cake which was a fun experiment and turned out to be really delicious! My four year old was ecstatic :).

    Saturday – Dinner at Hotel Bethlehem for my friend’s b-day
    Sunday – Cheesy chicken rotini
    Monday – Shredded BBQ chicken, cornbread, spinach
    Tuesday – Dinner at our favorite Chinese place for our 2nd anniversary
    Wednesday – Leftovers
    Thursday – More leftovers!
    Friday – Food truck fest at my husband’s school, then cookout at a friend’s house

      Enjoy the Hotel Bethlehem!!! I live nearby :-). They have a great Sunday Brunch too.

      Thanks, Kim! It was my first time eating there. Fantastic food! We also went to the Bookstore before dinner — LOVED that place! πŸ™‚ I was born in Bethlehem but grew up in Northampton. Enjoy going home to visit very much. The Lehigh Valley is really a happening place to be! πŸ™‚

    This week has been crazy but meal planning is a lifesaver. I already know what we’re eating and I’ve already shopped for the ingredients…One less thing to worry about.

    M: beer can chicken, corn on the cob, & watermelon

    Tu: shrimp lettuce tacos, black beans, chips & salsa

    W: sausage & veg kabobs w/ rice

    Th: B4D… Leftover scramble, toast & fruit

    F: out for friends birthday

    Sa: San Diego for friend reunion

    Su: grilled steak, BBQ potatoes, corn on the cob

    This week is a crazy one, and has gone off the rails from the plan a little already. Last night, I needed to prepare stuff to put make the TWFD Carnitas today, but ended up spending much of the night concerned enough about a friend to call the suicide prevention hotline. today was consumed with a funeral, so thankfully I had more leftovers from yesterday than planned. On the other hand, I tried another attempt a chicken tika masala in the crockpot, and it really worked this time!

    Anyway, my 21 meals for the week:

    We’ve had a busy week – it’s Administrative Professionals Week, and so I’ve attended two dinners out. Originally my daughter was going to come over and cook for her dad and brother, but my husband has ended up taking the week off from work (problem at the plant) and so he has cooked both nights. YAY cooking vacay for me!!

    meatloaf, mashed potatoes, peas & carrots
    ham sandwiches, chips
    unstuffed shells, green beans
    Chicken BLT salad
    chicken pot pie

    Sun: Airport food on our way home from a Louisville, Mammoth Cave, Nashville long weekend
    Mon: Grilled lemon garlic chicken, green beans, rice
    Tue: Shrimp & veggie fried rice
    Wed: Dinner at my parent’s house to celebrate my Dad’s birthday
    Thu: Tuna, escarole, & chickpea entrée salad
    Fri: Garden burgers, baked fries
    Sat: Surprise 70th wedding anniversary party for aunt & uncle!

    Sunday – German meatloaf (fleicshkase) with fries and salad
    Monday – salmon, yellow beans, brown rice
    Tuesday – leftover fleischkase with cabbage and spaetzle
    Wednesday – leftover brown rice, turkey cutlets, asparagus and salad
    Thursday- leftovers from Tuesday
    Friday – out
    Saturday – surprise birthday/going away/ welcome party for my daughters au pair – old and new!

    sun – baked haddock, sweet potatoes, broccoli
    mon – steak & cheese quesadillas, asparagus
    tues – fish tacos, salad
    wed – pesto vegetable pizza, pepperoni pizza
    thurs – baked potatoes, topped w/ roasted broccoli, bacon, cheese, scallions, sour cream
    fri – breakfast dinner
