Week 536 Weekly Menu

I was just browsing through last week’s menus and it was just so FUN. So many little insights into your lives, it was happy/touching/sad/wonderful! It’s kind of amazing what a meal plan can communicate. So, thank you once again for sharing each week…both your food and a bit of your lives!

It’s Monday, so thinking I need to get on this meal planning train…here goes…

Oh, and now it’s Tuesday! I got this planned and ready to go yesterday and never hit publish. UGH! Okay, here goes for REAL.

– Leftovers

  1. I needed to get out of a meal-planning rut and I feel good about this week!

    And, I agree about reading about everyone’s lives in the menus. It’s very fun!

    Sunday: Vegetarian Lasagna (adapted from ATK recipe)….it was SO GOOD!!
    Monday: Chicken nuggets
    Tuesday: Mac and cheese and asparagus
    Wednesday: Breakfast for dinner (bacon, eggs, toast)
    Thursday: Chicken pot pie (Ina Garten recipe)
    Friday: Leftovers
    Saturday: Out to eat after daughter’s musical performance.

    The last half of last week was exhausting. I managed to post my menu plan (a bit late), but ended up eating more leftover carnitas (and you’re right – your recipe is great!) for dinner yesterday, and haven’t gotten to the grocery store yet for a lot of what I need for tonight’s dinner. We’ll see how the week goes, but at least I planned something!

    Tuesday: Chicken Stir Fry
    Wednesday: Salami sandwiches with Hot Peppers and Pickled Celery and Wedge Salad with Blue Cheese
    Thursday: Cheddar Beer Soup and Croissant Rolls
    Friday: Jalapeno Mac n Cheese and Broccoli
    Saturday: Crock Pot Orange Beef and Rice and Peas
    Sunday: Open Face Hot Turkey Sandwiches and Mashed Potatoes and Corn

    Sun: Spaghetti with shrimp in curry cream sauce, salad
    Mon-Wed: Business Travel
    Thu: Baked chicken, mixed veggies
    Fri: Seared Scallops, corn, salad
    Sat: Hot Browns & mint iced tea (stand-in for a Mint Julep”¦which we don’t like) while we watch the Kentucky Derby

    sloppy joes, hominy, peas
    Texas Hash, applesauce, broccoli
    baked pasta with sausage, spinach and mushrooms (new recipe)
    Hot chicken salad casserole, lima beans

    Sunday – Leftovers
    Monday – Waffles and bacon
    Tuesday – Out to dinner with clients in Detroit
    Wednesday – I’m guessing I’ll grab something at the Detroit airport
    Thursday – Rotisserie chicken, mac and cheese, peas and carrots
    Friday – Leftovers

    Mon – Slow Cooker Roast Beef, Mashed Potatoes
    Tues – French Dip Sandwiches, Chips, Carrots & Celery
    Wed – Beef Stroganoff, Broccoli
    Thurs – Grilled Pork & Vegetable Kabobs
    Fri – Taco Salad
    Sat – Tri Tip, Corn on the Cob, Salad
    Sun – Spaghetti & Meatballs, Salad, Garlic Bread

    Sunday-out all day at aunt’s 80th birthday party -so bake at home pizza
    Monday – late meeting so we went out
    Tuesday – meatball sandwiches, French fries and salad
    Wednesday- our normal Monday dinner! Salmon, rice and roasted squash
    Thursday Рchicken breast with saut̩ed mushrooms and cauliflower
    Friday – first Friday in town – hoping it won’t be rained out!
    Saturday- leftovers
