Week 537 Weekly Menu

I’m traveling for most of the week to attend the Mom 2.0 Summit. Which means meal planning is an absolutely MUST and meals are simple and straightforward for Nate and the kids!

  1. I am traveling for work this week, too. Major weekend prep so my loved ones don’t starve in my absence. 🙂

    Sunday: General Tso’s cauliflower bites and rice (sauce)
    Monday: Chicken pot pie (Ina Garten)….keep pushing this one out
    Tuesday: Burgers and green beans
    Wednesday: Yorkshire pudding and cranberry sauce
    Thursday: Leftovers
    Friday: Homemade pizzas
    Saturday: Out

    Tues: Out with friends
    Wed: Pork Belly Fried Rice & Asian Slaw
    Thurs: Fish Tacos & Chips & Guac
    Fri: Grilled Ribeyes, Leek Gratin, Salad
    Sat: Attending a wedding
    Sun: Cheese Stuffed Shells & Salad

    I kept it simple this week too. Sunday we are having my family and my husband’s family over for a Mother’s Day cookout. We are grilling sausages and hamburgers and everyone is bring a side dish.

    Sunday- pizza
    Monday- baked ziti and salad
    Tuesday – tacos
    Wednesday – eggroll in a bowl over rice
    Thursday – leftovers
    Friday – eggs, potatoes, toast and fruit.

    Wednesday: Not sure, maybe takeout
    Thursday: Grilled chicken thighs, rice, salad
    Friday through Sunday: Away for the weekend for middle daughter’s college graduation from U of Illinois!

    baked fried chicken, buttered noodles, carrots
    skillet sausage, spinach, and white beans

    Wed – Grilled Ham & Cheese Sandwiches, Chips & Salsa, Cantaloupe

    Fri – Pork Chops, Veggies
    Sat – French Dip Sandwiches
    Sun – Taco Bar

    Sunday – steak on the grill, rice and grilled asparagus
    Monday- my husband is away for the next week or so – lots of seafood and veggies in the next week!
    Starting with grilled calamari and vegetables
    Tuesday- grilled shrimp, cucumber and spring mix salad
    Wednesday- salmon with rice
    Thursday- leftovers
    Friday- tbd
    Saturday- vegetable omelet and salad

    Friday: Chicken Spaghetti
    Saturday: Lamb Pitas with Carrot Salad
    Sunday: Kids and Hubby are taking me out to eat 🙂
